Culinary Educator: CENTRAL MEXICO: A CULINARY ADVENTURE Rick Bayless itinerary: ® THE CULINARY INSTITUTE OF AMERICA SEPTEMBER Presentedby Travel Programs 20-27, ® 2008 mexico city – tlaxcala – puebla itinerary Mexico City has been the center of the culinary world of Mexico since it was the Aztec capital situated on islands in the middle of a shallow lake. Then named Tenochtitlan, it was a magnificent city of great size – by 1519 it was five times larger than London. To feed its many people, farmers encircled the islands with small floating gardens separated by canals on which they grew fresh vegetables, herbs, and chiles. This was also the hub into which all roads led, bringing different types of food from distant parts of the country to sell and trade at the huge market in the center of the city. With the conquest by the Spaniards, another layer of culinary achievements was added, for these settlers brought with them the ingredients and memories of a cuisine infused by 28 generations of Moorish control. The food found today in Mexico City, the largest city in the world, still reflects its origins with enormous varieties of the centuries-old masa snacks found in the city’s markets and from street vendors. Then there are the traditional dishes, such as moles and pipianes, as well as the exciting dishes that are being created by chefs using traditional Mexican ingredients in new ways. 900 Jefferson Road Rochester, NY 14623 (585)272-9470 www.palmersdirecttoyoumarket.com Barbacoa Burrito INGREDIENTS - Serves 10 - 12 people 5 pounds Certified Angus Beef ® Pub Roast, cut into 2-inch pieces 1 Mexican cinnamon stick (or one regular) 1 teaspoon allspice berries 1 tablespoon cumin seeds 2 teaspoons Mexican oregano (or Italian) 2 teaspoons ground coffee 2 tablespoons salt 4 dried ancho chili peppers, stems/seeds removed 3 cups beef stock 1 onion, chopped 6 cloves fresh garlic, chopped 1 (6-ounce) can tomato paste 1/4 cup red wine vinegar 12 soft flour tortillas 2 limes, cut into wedges Optional toppings: sour cream, finely shredded cheddar, julienne radishes, chopped fresh cilantro, sliced avocado, pico de gallo or finely sliced lettuce INSTRUCTIONS 1. In a heavy skillet, toast cinnamon, allspice, cumin, oregano and coffee over medium heat until fragrant, about 1 minute. Cool, add salt and grind in a spice grinder to a fine powder. 2. Season beef evenly with spice blend. Cover tightly with plastic wrap or put in a zippered plastic bag; refrigerate overnight. 3. Put dried ancho chiles in a pot with beef stock over medium-high heat. Bring to a boil, cook 5 minutes, turn off heat and cover with lid. 4. In slow cooker, combine beef, onion, garlic, tomato paste, vinegar and ancho chiles with stock. Cover and cook on high 1 hour, then on low for 6 hours until beef is fork-tender. 5. When beef is cool enough to handle, shred by hand. Put cooking liquid and vegetable mixture in a food processor or blender and puree until smooth; combine with shredded beef. -

BARBACOA BEEF PREP - Remove fat triangle from beef and cut in half. Place 30 lbs. of Beef in a cooking tray. Thoroughly mix the Beef with the following ingredients 45 ounces of Adobo 3 ounces of salt Cover with 2 layers of tinfoil, label and date Place in the walk in to marinate for 24 hours COOK - Place cooking tray of marinated Beef in the oven and cook for 9 hours at 300 degrees When finished cooking pull the Beef out of the oven and place on a prep Table to shred the Beef with a pair of tongs Place the shredded Beef in an ice bath Cover with plastic wrap, label and date. Place in the walk in. BAG - Take the shredded Beef from the walk in and place on a prep table With your hands and gloves separate the shredded Beef into 4 pound bags. Seal the bags and label, date and place in the walk in. BARBACOA PORK PREP - Cut chunks of Pork in Half. Place 30 pounds of Pork in a cooking tray.
