Prepare dashi. 3. Cook dashi in middle-high temperature. Add eggplant and lower the temperature just before boiling. Gradually add miso paste and stir lightly. Add leek. Serve in small bowls. Instead of eggplant, other types of vegetables can be used in miso soup such as spinach, onion, cale, wakame algae or classic Japanese tofu. Taste of miso paste differs from brand to brand – some miso pastes are more salty and assertive in taste so it is necessary to taste the miso paste before preparation. INGREDIENTS -2 eggplants -1200ml dashi -90 g miso paste -leek “TEMPURA” Tempura is a Japanese dish of seafood or vegetables that have been battered and deep fried. 1. You can scramble the eggs into the rich sauce or cook them whole. Serves 4 2 tbsp. olive oil 2 onions, sliced 2 green pepper, halved deseeded and sliced 1 red chilli, deseeded and sliced 400g can chopped tomatoes 2 tsp caster sugar 1 tsp each of salt, paprika, dried or fresh oregano 4 eggs small bunch parsley, roughly chopped 1. Heat the oil in a heavy frying pan. Stir in the onions, pepper and chilli. Cook on a medium heat until they begin to soften. Add the tomatoes, paprika, oregano, salt and sugar then cook until the liquid has reduced by at least half. 2. If scrambling the eggs, whisk and season the eggs. Remove most of the sauce from the pan and gently cook the eggs until set, but not dry. Add the sauce back to the pan and mix well. The eggs will continue to cook in the pan. Lastly add the chopped parsley and serve hot. 3. For whole eggs, create 4 pockets in the tomato pepper sauce and crack the eggs into them. Cover the pan and cook the eggs over a low heat until just set.

    CO-OP MEALS Cook: Dinner in 30 Set a large pot of water to boil. Set a small pan over Peanut Soba Noodles & Tempeh medium heat with 1-2 tablespoons sesame oil. Serves 4; Recipe adapted from Cookie and Kate Thinly slice the tempeh and add to pan. Cook 3-4 Shopping List: minutes per side, or until golden brown. Remove from heat and set aside. • 1 package soba noodles Remove the outer layer of cabbage and slice into • 1 small green cabbage ribbons. Remove the outer layer from the scallions and • 1 bunch scallions slice the white and light green sections into thin rounds. • 1 bunch cilantro Roughly chop cilantro. Set all aside. • 1 lime Once the water is boiling, rinse soba noodles and cook • 1 package Rhapsody Organic Teriyaki Tempeh according to package instructions (see “tips and hints”). • Small fresh ginger section (1 tablespoon, grated) Prepare the peanut sauce by combining all pantry items and grated ginger. Stir or whisk until combined. Pantry items: Once soba noodles are finished cooking (test one to ½ cup Peanut butter make sure it’s not under-cooked) strain off cooking 3 tablespoons toasted sesame oil, plus extra for cooking water and place noodles into a bowl of cold water. Add 3 tablespoons soy sauce or tamari ice if necessary to chill noodles. Strain the water from 3 tablespoons vinegar (rice wine or apple cider) the bowl and then add all remaining ingredients. 1-2 tablespoons honey, to taste 2 cloves garlic Stir to combine, adding lime juice to taste.
