A CONVERSATION WITH JEAN-LAURENT VACHERON, the land FROM DOMAINE VACHERON

Why is Sancerre the epicentre for Sauvignon Blanc and Pinot Noir? The Sancerre AOC runs along the Sancerre geological fault line and is infl uenced by northern temperatures and an ocean climate, giving the Sauvignon Blanc and Pinot Noir their singular characteristics. The Sauvignon Blanc is especially remarkable and saline, refl ecting the earth in which it is grown. Its aromas vary from fruity to fl oral and from chalky to fl inty. The Pinot Noir bears the same elegance, with more attenu- ation in terms of its minerality due to the way it is produced and matured.

You only produce six parcel-based cuvées for the white. What differentiates Le Paradis from Les Romains? Les Romains is made from 100-year-old vines growing on flinty soil. They also have a southwestern exposure and receive the most light. This produces fl oral, mineral, smoky and powerful wines. Le Paradis has a southern exposure and is located on the western part of the fault line. The steep slopes of these terroirs change the profile of the arable layer. The roots are barely fed by clay, and the bedrock is in direct contact with the vines, giving the cuvées their mineral, fruity, saline and chalky character. Each of our crus, or “climates” if you prefer, has different expres- sions and can pair beautifully with a wide range of foods. Each one has its own style and emotion. To be honest, however, I can’t pick a favourite. They are almost like children, you love them for who they are.

Why did you opt for biodynamics? Minerality, salinity and strength of character are all very present in our wines. It amplifi es the natural expression of our terroirs. Domaine Vacheron began working vineyards in 1993, and we started experimenting with biodynamic agriculture in 1997, fi nally receiving our certifi cation in 2006. This approach is based on “farmer’s wisdom.” The seasons are respected and the lunar cycle helps to keep us grounded. We believe in the value of people, and we should always keep in mind that we are only borrowing this earth from future generations!

A CONVERSATION WITH PAUL ATWOOD, HEAD WINEMAKER AT LEEUWIN ESTATE

What makes Margaret River so unique and great? I’d say the climate, wonderful low-yielding soils, innovative viticulture and winemaking procedures that are encouraged to continue to improve the vines and wines that come from this region, coupled with some of the most beautiful beaches and forests that this land has to offer.

What are the most successful varieties in your region and why? The most successful are Chardonnay, Cabernet Sauvignon and Sauvignon Blanc. The main reason these varieties all grow well is the different microclimates that are available throughout the region and, indeed, in most vineyards. We have seen that Chardonnay grows superbly on the lower slopes of our rolling hills, where the cool morning air keeps the temperature lower throughout the growing period. Sauvignon Blanc grows wonderfully on the mid slopes of the hills, where there is a moderate temperature and refreshing afternoon sea breezes that cool the vines and help maintain Sauvignon Blanc’s great varietal character. Cabernets that are planted on the top of the rolling hills pick up the temperature during the day and the breeze in the afternoon, which allows for a long growing season with ripe tannins and flavours. Coupled with the gravel-loam soils and maritime climate, lower yields and intense fl avours are assured.

What are the most inspiring wines for you? Of course they are Chardonnay and Cabernet Sauvignon, the two varieties that are perfectly suited to all the conditions in Margaret River and display the most complex characteristics every year. The fl avours tell the story of the climate that pre- vailed through the growing season, so each year, the fl avours tell the story of that particular vintage.
