v Avocado is a fruit that was grown by the Aztecs in Central America even before 500 BC. The world's largest producer is Mexico. It produces fruit throughout the entire year. v Avocado oil is obtained by cold-pressing from avocado pulp (which is pre-dried in advance). v It has a very low level of acidity and oxidation products, while maintaining high concentrations of vitamin E. v The chemical composition is very similar to the olive oil, very rich in monounsaturated fatty acids (82%) associated with the main therapeutic properties of oil v The oil is used in cooking and cosmetics. v Its smoke point is high (around 255 °C), the highest of all vegetable oils. It contains no toxic products and trans fats. It can be used as a salad dressing and as deep frying oil. v Mild flavor, something between butter and sweet almond.
v Health Benefits: ü It controls and changes the level of cholesterol in the blood and protects the cardiovascular system. The oil contains a large amount of oleic acid which inhibits absorption of cholesterol and triglycerides and prevents the transport of bad fats through the bloodstream.
