La semina viene effettuata a partire dalla fine di ottobre e il trapianto avviene nei mesi di febbraio-marzo. La raccolta comincia nei primi giorni di luglio e si conclude a fine settembre. Essendo questa cipolla stagionale, l’azienda Fagone ne ha migliorato la conservazione, avviando la produzione di conserve e trasformati, estendendone la commercializzazione. FAGONE COMPANY EXPERIENCE AND PASSION SINCE OVER 40 YEARS Fagone is a leading company in the production of the onion of Giarratana, a flattened-shaped bulb vegetable with a white and brownish tunic and white flesh, which has a savory but not pungent taste and can weigh up to 3,5 kg. The onion is sown from late October and it is transplanted in February and March.Its harvest begins in early July and it ends in late September. Since it is a seasonal product, Fagone company improved its preservation and sale by starting to produce preserves and other processed items. Le sue caratteristiche organolettiche uniche, le peculiarità morfologiche e soprattutto la sua stagionalità rendono questo prodotto unico e ricercato. La cipolla di Giarratana è un PRESIDIO SLOWFOOD, e dal 2014 l’azienda FAGONE ha ottenuto la certificazione GLOBAL G.A.P. , ricevuto il premio “BEST IN SICILY ” come miglior azienda conserviera della Sicilia ed è iscritta al registro delle eccellenze italiane 2016. It is very sweet, never pungent, excellent to be baked, boiled or eaten raw in salads. Its peculiar organoleptic and morphologic characteristics and, above all, its seasonality make this product unique and sought-after. All types of cheese contain bacteria, but not all bacteria are the same. When making Swiss cheese, cultures of the bacteria S. thermophilus, Eye See You! LactobacillusT , and P. shermani are mixed with cow’s milk. The holes in Swiss The bacteria helps produce curds, a thick substance that forms when milk cheese are called “eyes.” becomes sour. These curds are pressed in large molds, which are then soaked in a salty water solution called brine. Afterward, the cheese is stored at 72-80 degrees Fahrenheit and left to age, or ripen. During the aging process, the bacteria P. shermani releases carbon dioxide, which forms small bubbles in the cheese.
