La Cuchara de San Telmo "Small Place & Small Portions"

This is probably the smallest place to eat in the San Sebastian area, with three tables between the bar and the kitchen, where two or three young but experienced cooks work in plain sight of customers. As is to be expected, their specialties are also on a small scale. They do delicious tapas, which are also served at the bar, such as marinated anchovies; by goodiesfirst cannelloni with black pudding, garlic and oil; and, squid stuffed with spring onions. They also serve dishes based on traditional recipes, but with modern touches such as cod with chilies and garlic, roast meat with dried fruit, roast duck breast and pudding with cinnamon.

Bar Bergara "Avant-Garde Basque Cuisine"

This is one of those classic bars you fall in love with, and is just a 10-minute walk from the town center. You should try to pop by around 8p to taste some of the delicacies along with a good Spanish wine or a (Basque ). The specialties are excellent, masterfully prepared pintxos (tapas). We highly recommend one called txopito, a small by Kent Wang cuttlefish with onion that is traditional in Basque cuisine. This bar has won many awards for their expertise in . Service is excellent.

This restaurant represents the quiet revolution of new Basque cuisine. Hilario Abelaitz, in his lovely century-old country house, the oldest in the whole of the Oiartzun valley, has been updating, enriching and refining his for almost two decades. He has put a lot of thought into every one of his satisfying dishes. His foie gras in chickpea soup with fried by Thanti Nguyen on , his lobster in cinnamon oil, squid in its own ink, pigs' trotters with Unsplash creamed pinto beans and olive puree are just a few examples of his search for refinement and perfection. In summer, book a table on the terrace. The wine list is very good. The best way to get to this restaurant is either by car or by taxi because it is only 11 kilometers from San Sebastian. Closed for holidays for two weeks in January, two weeks around Holy Week and the last week in October.

Karlos Arguiñano "Eclectic Basque Cuisine"

Owner and popular TV Karlos Arginaño was another pioneer of the nueva cocina vasca movement that transformed traditional Basque cuisine in the 1970s. He doesn't actually work in the restaurants that bear his name anymore, but they're well managed by a team of consummate professionals who keep standards high. Patxi Trula is in charge of the by JMLS kitchen here and he's produced an interesting menu that offers hearty and satisfying modern versions of traditional Basque dishes. There is a set meal of the day available and is worth trying. The wine list is excellent, the interior is tasteful, and the service is good. You'll find it in the attractive Mendilauta castle beside Zarautz beach, and there are great views through the dining room windows.
