Cooking time: 1 hour

INGREDIENTS

DOUGH: GARNISH: 200g pasta flour 125g unsalted butter 2 medium eggs 85g fresh Large pinch parmesan, grated of salt Cracked black pepper 200g mixed mushrooms, thinly sliced Splash of olive oil 4 tbsp torn mint leaves

TO MAKE

Put your flour in a bowl, and use your thumbs to make a hollow in the flour. Crack your eggs into it with a pinch of salt, and beat with a fork. Gradually work the flour in to make dough.

Pass the dough a handful of times through a pasta machine on a high setting. Repeat this step, lowering the setting each time, until your dough becomes thin and silky. Now cut and shape your pasta, then boil for four minutes.

Fry your mushrooms and mint in the olive oil, then toss pasta into the pan. Serve, and garnish with pepper, parmesan, and a dab of butter.

I was quite surprised by how heavily involved I was, considering I was in my first seat. I’d be leading parts of client calls on the Conditions Precedent process. It was terrifying because there were times when I’d be alone in the office and a client would ring from Japan or something – but I loved it. I love being busy and it was great to get that opportunity to be let loose and just do it.

Our New York office issued a legal opinion on a security document for that project and the Paris office was involved too – I actually knew the trainee on secondment. I had huge help from an associate in the Tokyo office as well. She was a lifesaver with all the documentation.

I’ve always been quite keen to give back. That’s something that’s been drilled into me from childhood. That’s why I joined the firm’s charity committee. At the moment, there are three trainees who attend and we take turns sending the minutes round. We get to see how the firm reacts to world events; how the team consider charity requests. It’s nuanced work and I’m really happy to be a part of it.

Through them I found out about the Vivid Festival. For a couple of weeks, they light up the sights of the city every night. Harbour Bridge. The Opera House. The Botanic Gardens. They even put on light shows at Taronga Zoo for the kids.

Between the associates and the paralegals, I’m in my fourth seat, so I’ll finish my training I’ve built up a great social life. They’ve as soon as I’m back. The links you make are definitely useful. Through Early WIN, I joined a coffee and mentoring programme, where they’ll randomly pair you up with another woman in the firm. I was paired with a female partner in corporate, who took me for a nice coffee and a chat. It was great just to see all of a sudden how this door was open, and I could go and speak to her any time – even when it wasn’t work-related.

I recently joined the Early WIN committee: it started out as the Women’s Network, and this is the offshoot branch for young careers. But our firm is all about inclusivity, so actually, even where there are diversity networks, they want everyone to be a part of it. Whilst it’s called the Early Women in Norton Rose Fulbright group, what CAITLIN I’ve found is that it’s for people of all gender identities.

The lunch for International Women’s Day One of the events I remember stands out for me. We had a talk from going to was all about power, and a female colleague who’d just made how you assert it. We’ll meet downstairs, wait for everyone else to finish, then we’ll go off somewhere near the office. We’re surrounded by bars and restaurants in the area, and the Scoop – the outdoor amphitheatre – has live entertainment on the river in the summer.

I do yoga on Wednesday evenings at 6pm. The instructor comes to the office, and we use a conference room. There’s about ten of us regularly – myself, a partner, and some people from compliance and from HR. You get to know everyone – not just your team.

I play softball for the firm sometimes too, either in Regent’s Park or on Primrose Hill. It’s very chilled. We meet at 6pm to leave the office, jump in a taxi, and the associate who runs the team has already ordered the pizzas by the time we get there.

My first game ever was the first match of the season, so the weather wasn’t the best. Foolishly I’d worn shorts, so there was a lot of running on the spot to keep warm. After that game, I can say that catching is definitely my strong suit, followed by batting, but my throwing… leaves much to be desired.

H One of our trainees, Jack, is one of many colleagues working hard to learn the task at hand over the weekend.

e left the office at 6:30am on a Saturday morning, heading for the Isle of Wight and the Legal Cup. It’s a sailing weekend in Cowes with about ten or twelve Wdifferent law firms, who each bring their own boat. I’d gone sailing when I was little, but nothing like that weekend. These were proper 40-foot yachts racing around the Solent. I had nothing to compare it to. But sign-up was very much open to anyone: even if you didn’t have experience, you could go along and they’d train you.

The skipper was incredible. When we’d made our way onto the boat, he set us up with individual jobs right away. Then we pottered around the harbour for a while, just making sure everyone knew what they were doing.
