Hence, familiarity with the various terms used in farming activities by a plurality of speakers is perceived to help resolve the problem related to the language of extension adopted in a multilingual setting. It will capacitate the extension workers. To the users of this glossary of agricultural terms in the Cordillera Region, it is hoped that this document will facilitate not only the dissemination of technologies and information but also help ease some communication gaps brought about by the various languages used in the Region. Although the researchers tried within the limits of time, efforts, and funds available to make this document a comprehensive one, the translation and equivalence of words gathered are continuously being done. This initial glossary is therefore far from perfect.

APJIHT Vol. 8 [7th Asia Euro Conference 2018: Tourism, Hospitality & Gastronomy], 2019 pp. 1-24 e-ISSN 2710-6519 Conference Paper Compliance to Food Safety Standards of Ambulant Vendors in Two Cities of Nueva Ecija, Philippines Celyrah B. Castillo Central Luzon State University, The Philippines © The Author(s) 2019. This article is published with open access by Taylor’s Press. Abstract: Food safety practices of food handlers play significant role in making sure that food is kept clean from the preparation, cooking process and up to the time it is served to the customers (Mohan 2006). This study assessed the compliance to food safety standards anchored on Presidential Decree 856, Code on Sanitation of the Philippines that promulgates indicators of appropriate practices in food safety and sanitation of ambulant food vendors in Science City of Munoz and San Jose City, Nueva Ecija, Philippines. Responses were elicited from ambulant vendors and street food consumers and were treated using descriptive statistics, Pearson product moment correlation (r) and t-test. The study revealed that ambulant food vendors complied the highest on the procurement of raw materials, congruent with the street food consumers’ perception. Compliance of ambulant food vendors to general requirement, general appearance, water and ice used, preparation and handling, washing of utensils and distribution and point of sale were generally often observed as reported by the ambulant food vendors and perceived by the street food consumers. The results indicated a significant difference on the compliance to food safety standards of ambulant food vendors on procurement of raw materials, distribution and point of sale and overall compliance to standards, where vendors from San Jose City showed higher degree of compliance.

CONTEMPORARY FILIPINO-NEGRENSE BISTRO BY CHEF J.P. ANGLO ABOUT SARSÁ We Filipinos have always loved putting many kinds of sauces on our food, to enhance its flavor and to add more character to the dish. This unique habit of ours has led to the creation of the Filipino-Negrense Bistro, SARSÁ. SARSÁ is where new flavors are born, and cooking techniques taken from the many regions of the Philippines are revisited. It features traditional Filipino and Negrense dishes, done in a contemporary style using only the best local ingredients. Renowned Negrense chef JP Anglo has spearheaded these exciting changes in SARSÁ, and he has done so without forgetting the roots of our beloved Filipino dishes.
