Basmati is a variety of long grain rice, famous for its fragrance and delicate flavour. Its name means "Queen of Fragrance" in Hindi. Basmati rice has been cultivated in the Indian subcontinent for hundreds of years. The Himalayan foothills are said to produce the best basmati. Although all Basmati Varieties are fragrant rice of highest quality, commercially, The Super Basmati, a premium variety from Pakistan and Dehra Dun from India, are the most prized of the basmati varieties. Patna rice is a close cousin of basmati rice grown around Patna in Bihar. The best types of basmati rice are aged for several years before they are milled and sold, as rice cooks better with a lower moisture content. The grains of basmati rice are much longer than they are wide, and they grow even longer as they cook. They stay firm and separate, not sticky, after cooking. Basmati rice is available both as a white rice and a brown rice. Both of these cook in about 20 minutes. Due to the high amount of starch clinging to the rice grains, many cooks wash this rice before cooking it. Soaking it for half an hour to two hours before cooking makes the grains less likely to break during cooking. India is endowed with land and water resources with conductive agro-climatic advantages for cultivation of paddy. Paddy is mainly grown in rain fed areas which receives heavy annual rainfall; it is primarily a kharif crop in India. Paddy is the important food crop in India; importance of paddy in agricultural crops cannot be ignored as it is the staple food for more than fifty percentage of population in the world. This study examines to identify the factors influencing paddy cultivation, to determine cultivating problems and marketing problems of paddy in the district of Salem in Tamil Nadu. Pre-scheduled interview questionnaire is prepared and circulated among the 84 respondents using convenient sampling. The results were obtained by application of statistical tools like percentage analysis and one sample t-test.     CHAPTER - I INTRODUCTION Prologue With about 45 million hectares (MH) of rice area, India is the second largest producer of rice in the world, after China. The rice production in India reached 91.61 million tones (MTs) during 2001-02. Of these, the three states West Bengal, Uttar Pradesh and Andhra Pradesh accounted for about 42.00 per cent. India also produces some of the best quality rices of the world. These include the long grained export quality Basmati and a host of locally adopted small and medium grained scented rice varieties, known for their excellent cooking and eating qualities. Most rice growing states in the country have few or many such varieties, like Basmati is found in Punjab, Haryana and Western Uttar Pradesh, the small and medium grained scented rice varieties like (i) Kalanamak, (ii) Shakarchini, and; (iii) Hansraj are found in U P, (i) Dubraj, (ii) Chinoor in Chattisgarh, Kalajoha in North-East, Ramdhuni Pagal in Orissa, Ambemohar in Maharashtra and so on. The long grained Basmati rice are generally exported and has assured markets, the small and medium grained non- basmati scented rices are consumed locally. Due to the quest for high yielding varieties, beginning with mid sixties, a large number of the small and medium grained varieties slowly vanished from farmers’ fields.
