Mary Berry’s Luxury

Tartar

A classic tartar sauce is an essential accompaniment to a fish and chip supper, but it’s also delicious with oven-baked salmon, scampi or slathered over a sandwich. Simply mix together half a jar of Luxury Herb Mayonnaise with 1 tbsp of salted capers (rinsed and chopped), 4 cornichons and a squeeze of lemon juice. Season to taste with and stir through some chopped fresh or just before serving.

Mushrooms on toast

Add 1 tbsp to a frying pan and fry a finely chopped with 250g sliced chestnut mushrooms and a clove of crushed garlic for 5 minutes until softened. Place the mixture into a bowl with half a jar of Luxury Herb Mayonnaise and a generous grating of Parmesan. Mix thoroughly, then spoonfuls of the mixture onto slices of baguette, top with a little more grated Parmesan, and grill until golden brown.

Stuffed herby jackets

Take two cooked jacket potatoes, slice in half lengthways and scoop out the potato, leaving the jacket shell. Put the potato into a bowl and set aside. Clean and slice a leek into thin slices and fry for a few minutes with a knob of butter in a hot pan until the leek has softened and browned slightly. Set aside. To the potato in the bowl, add a few tbsp Luxury Herb Mayonnaise, a few tbsp cream and salt and pepper to taste, then spoon the potato mixture into the jacket shells, top with the fried leeks and a handful of grated mature Cheddar cheese. Bake in a hot oven for approx 20 minutes until the cheese is bubbling.

Savoury Southern biscuits

These American ‘biscuits’ are popular in the Southern states, similar to a British scone but without the sugar, they are served with savoury dishes. Preheat your oven to 200C. Mix 2 cups of plain flour with 1/4 tsp bicarbonate soda, 1 tbsp baking powder, 1 tsp salt, 1 cup of milk and 6 tbsp plain or herb mayonnaise. Turn the dough out onto a floured board, pat out gently until it’s about 1/2 inch thick then cut into approx 10 rounds. Place the rounds onto a lightly greased baking tray and bake for 10-12 minutes until golden brown. Experiment with different flavours by adding grated Parmesan or extra fresh .

Wasabi mayonnaise

Mix 125ml (approx half a jar) of Luxury Herb Mayonnaise with 2-3 tsp paste, 2 finely chopped spring , 2 tbsp Japanese rice wine and the zest and juice of 1 lime. Serve as a dip with prawn crackers, or as a starter served with pre-cooked prawns or smoked salmon.

Deli pasta

Make a super quick pasta salad with cold orzo pasta mixed with all your favourites from the deli counter - sun-dried tomatoes, olives, roasted peppers, chorizo - stir everything together with a couple of generous tbsp of Luxury Herb Mayonnaise and a squeeze of lemon juice.
