On the Festival of the Fleeces weekend (8 and 9 June) the canteen at the Merriwa Showground will be run to fundraise for the Merriwa Central School Equestrian Team. The funds will be used to purchase team saddle cloths and shirts for the members of the team. The Equestrian Team is made up of Kindergarten to Year 12 students who attend Horse Sports Carnivals run by schools around the Hunter Valley. Merriwa Central School’s own annual Horse Sports Day is set to run on Monday 13 August. This day will see riders from schools all over the Hunter and surrounding regions competing at Merriwa Showgrounds. Last week the children got stuck into gardening out the front of MAC. Thank you very much to Mr Pat Williams who kindly donated some dirt to help us build the ground up and Bruce and Jill for their time, straw and tin backing! I must commend Lachlan in particular for his efforts he was amazing and he has found quite an interest in the care of our garden. All the children did a fantastic job. We are still looking for many more bold and beautiful plants but the process has begun!!

Last week we also took time to have some foundations of soft ball introduced with thanks to Jeremy. The girls were not so keen this time around, however; the boys were found with helmets and all the gear practising hitting and catching with mitts. We enjoyed New enrolments always welcome. MERRIWA RINGER Thursday 7 June 2012 Page 20 RECIPE OF THE WEEK PORK AND APPLE CIDER CASSEROLE WITH SAGE DUMPLINGS Ingredients Method 800g pork shoulder, cut into 3cm pieces Preheat oven to 160°C. Place the pork on a 1/4 cup (40g) plain flour plate and sprinkle with flour, then gently toss 2 tbs olive oil to coat. Heat half the oil in a large casserole 12 small pickling onions, peeled dish over medium-high heat. Add the pork and 1 bulb fennel, thickly sliced cook for 2-3 minutes or until brown all over. Transfer to a bowl. 2 garlic cloves, crushed Heat the remaining oil in the pan over medium 1 cup (250ml) apple cider heat. Add the onions and cook, for until 1 1/2 cups chicken stock golden brown. Add the fennel and garlic and 2 dried bay leaves cook until fennel is tender. Add the pork and 1 bunch baby carrots cider and bring to the boil. Add the chicken Steamed green beans, to serve stock and bay leaves. Remove from heat. Sage dumplings Bake, covered, stirring occasionally, for 1 1 1/2 cups (225g) self-raising flour hour. Add the carrots and bake for a further 1 tbs finely chopped sage 30 minutes, until sauce is thickened. Taste 50g butter, chopped and season with salt and pepper. 2/3 cup (160ml) buttermilk Increase oven to 200°C. To make the dumplings, place the flour and sage in bowl. Use your fingertips to rub the butter into the flour until it resembles fine breadcrumbs. Season with salt and pepper. Add the buttermilk and use stir until a sticky dough forms. Spoon tablespoonfuls of mixture over the top of the casserole. Bake in preheated oven for 15 minutes or until dumplings are golden brown and puffed.
