La Colomba Bonifanti and Easter Colomba Cake 11 Bonifanti e la Colomba Bonifanti and Easter Colomba Cake 2 A metà febbraio in tutt’Italia ci sono stati tre giorni di sole tiepido che hanno fatto venir voglia di primavera. Dalla inestra dell’uicio di Giuseppe, che in Bonifanti si occupa di acquisti, si vedono le montagne vicine coperte di neve che si stagliano nel cielo azzurro intenso. Pare che nevicherà la prossima settimana, la stagione invernale è salva, ma l’idea della primavera ha fatto irruzione, senza chiedere permesso. Giuseppe parla con Antonio, che segue l’amministrazione. Lui nel weekend porta la famiglia a sciare, in meno di mezz’ora arrivano sulle piste più belle d’Europa. Antonio invece andrà con moglie e igli al mare, da lì ci vuole solo un’ora. Villafranca Piemonte è in un posto particolare, tra mare limpido e montagne ricche di sorgenti d’acqua purissima, dove iniziano le colline delle Langhe e i paesaggi sono immersi nel verde di una campagna generosa. “E a Pasqua dove vai?” chiede Antonio. “Non mi muovo, sto a Villafranca perché viene a trovarmi la famiglia dalla Sicilia. Porteranno i Palummeddi, il loro tipico dolce pasquale, e vorranno in cambio la solita ‘fornitura’ di colombe Bonifanti”. “Perché? È facile trovare i prodotti Bonifanti in Sicilia…” “Sì, ma ricevere la colomba Bonifanti da me, per loro, è una solenne questione di principio. Lo sanno benissimo che la qualità Bonifanti è la stessa in tutti i negozi d’Italia. Ma ogni anno a Pasqua, quando a ine pranzo mettiamo in tavola la colomba, si ripete una tradizione che ci fa stare bene, ci fa sentire migliori, ci avvicina ancora di più”. After three balmy days mid-February across Italy everyone’s thoughts turned to spring. From his oice window, Giuseppe, in charge of purchasing in Bonifanti, could see the snow-capped peaks of the nearby mountains silhouetted against the bright blue sky. The weather forecast was saying that it would snow again the following week, so the winter season was far from over, but spring had burst in, without asking for permission. Giuseppe was talking to Antonio, from administration. He was planning on taking his family skiing that weekend: some of the most amazing slopes in Europe were less than a half-an-hour drive away. Antonio would be heading to the coast, instead. It would take him about an hour, he said. Villafranca Piemonte is a special place, located at the beginning of the Langhe hills, between the clear blue sea and the mountains with their pure springs. The countryside here is green and generous. “What are you planning for Easter?”, Antonio asked. “I am staying here in Villafranca. My family will be visiting from Sicily. They will be bringing boxes of Palummeddi, their typical Easter biscuits, which are also dove-shaped, and will expect the usual supply of Bonifanti Colomba cakes in exchange!”. “Why is that? Bonifanti products are not diicult to ind in Sicily…” “True, but receiving a Bonifanti Colomba cake directly from my hands is a proper matter of principle. They know that Bonifanti quality is the same in all shops nationwide. But every year, at the end of the Easter dinner, we set the Colomba cake on the table and repeat a simple tradition that makes us happy and brings us even closer”. 3 Antonio annuisce, sorridendo. È una bella sensazione, che conosce bene e che gli fa tornare in mente la sera prima quando sua iglia, Elisabetta, 3 anni, prima di addormentarsi gli ha chiesto di raccontarle, di nuovo, la iaba della colomba e la formica. Inutile farle notare che era la terza sera di ila con la stessa richiesta, inutile provare a cambiare iaba. E, quella sera, Antonio ha cominciato a raccontare. “Una colomba bianca, mentre vola sopra la campagna, vede una formica che beve a un ruscello, ma è talmente assetata che si sporge troppo e cade in acqua. La colomba, allora, prende una spiga di grano e la getta nel ruscello. La formica, aggrappandosi, riesce così a salvarsi. Ma, poco più tardi, ecco arrivare un contadino a piedi nudi, con un fucile in mano. L’uomo vede la colomba e prende la mira, pronto a sparare, ma la formica, nascondendosi nell’erba, lo raggiunge in tempo e riesce a pungerlo su un tallone. Il contadino, colto di sorpresa, guarda in basso per capire cosa l’abbia punto, ma non vede la formica che nel frattempo si è nascosta, mentre la colomba riesce a volare via approittando della situazione. La colomba si salva grazie al gesto eroico e riconoscente della formica, perché fare del bene porta bene. In questa iaba la colomba è il simbolo dell’altruismo, dell’attenzione verso il prossimo…” Antonio si ferma e guarda la sua bambina che si è addormentata con espressione serena e sognante. Antonio nodded and smiled. He was pleasantly reminded of the evening before, when his three-year old daughter Elisabetta asked him to tell her a bedside-story: the fable of the dove and the ant. He protested that it was the third evening in a row that he had be asked for the same tale but all attempts to change the story were of no avail. So, Antonio told her the fable all over again. “Once upon a time, a white dove was lying over the countryside when it saw an ant drinking from a stream. In its eagerness, the ant leaned too far and slipped into the water. The dove picked an ear of wheat and threw it into the stream. The ant climbed into it and was safe. But soon after came a bare-footed farmer holding a rile. The man saw the dove, took his aim and was about to shoot when the ant bit him in the foot. The farmer was startled. He looked down to see what had bit him but could not see the ant hiding in the grass and the dove was quick to ly away. So, the dove was safe because of the heroic and grateful ant, because one good turn begets another. In this fable, the dove symbolises sellessness, altruism and...” Antonio stopped. His little girl had fallen asleep with a dreamy smile on her face. 4 5 6 Nel fantastico linguaggio dei simboli la colomba, animale dolce e mite, rappresenta da secoli la purezza, l’innocenza, l’amore, la prosperità, la igura materna che protegge e crea armonia mentre, come tutti sanno, nell’iconograia cristiana la colomba dello Spirito Santo è il simbolo della pace universale: è una colomba a portare a Noè il ramo d’ulivo, annunciando l’inizio di una nuova era di pace tra Dio e gli uomini dopo il Diluvio universale. La colomba è diventata poi simbolo delle feste pasquali creando tradizioni popolari che si sono tramandate nel tempo, adattandosi alle realtà e alle abitudini locali. Ed è arrivata nelle cucine e sulle tavole. Nelle leggende questo dolce pasquale risale ai tempi dei Longobardi, nel VI secolo: il Re Alboino durante l’assedio di Pavia ricevette un pan dolce a forma di colomba come segno di pace, mentre si narra che la Regina Teodolinda ofrì un sontuoso pranzo all’abate irlandese San Colombano in visita alla sua città, ma, essendo tempo di Quaresima, il santo trasformò la selvaggina arrostita in bianche colombe di pane. For centuries, the mild dove has symbolised purity, innocence, love and prosperity. It is a maternal creature that protects and fosters harmony. In Christian iconography, the dove represents the Holy Ghost and is the emblem of universal peace: a dove carried an olive branch in its beak to Noah heralding the new age of peace between God and humankind after the great lood. The dove then became the symbol of Easter in Italy giving rise to popular traditions handed down over time which were adapted to local customs. And so it arrived on the Easter table. Legend has it that the dove-shaped Easter cake can be traced back to the 6th century when during the siege of Pavia King Alboin of the Lombards was given a dove-shaped cake as a peace ofering. According to another legend, the Queen Teodolinda ofered a rich banquet in honour to the Irish abbot Saint Columbanus, who was visiting the city. It was Lent and the saint turned the roasted wildfowl into white doves of bread. 7 Oggi, la colomba di Pasqua è un dolce che si consuma in famiglia e con gli amici, che celebra la bellezza dello stare insieme per condividere un momento di serenità diventando a sua volta un simbolo di unione, di armonia, di altruismo, come le colombe delle iabe più belle, le iabe che si ricordano più facilmente. E con Bonifanti la iaba diventa realtà: perché la colomba pasquale è conviviale, accomuna le tradizioni locali, rappresenta l’armonia e mette d’accordo, quando sboccia la voglia di primavera, nasce la voglia di Pasqua e nasce la voglia di una colomba Bonifanti. Se la colomba bianca delle iabe potesse volare nei reparti della Bonifanti, a Villafranca in Piemonte, ritroverebbe tutti quei valori positivi che la accompagnano nei racconti fantastici: l’armonia, i ritmi della natura, l’altruismo, il piacere dello stare insieme per condividere un pensiero, un obiettivo, un traguardo comune. In Bonifanti le iabe si realizzano perché, in un’azienda che è come una famiglia, è facile incontrare personaggi, situazioni e sentimenti che sembrano provenire da storie di fantasia e invece sono reali e, con semplicità e senza retorica, deiniscono un modo di lavorare fondato sulla passione, sulla responsabilità, sulla cultura della qualità. The pandemic had an impact on the Foundation’s ability to generate income to cover fixed expenses. The majority of income is generated from membership dues, donations, dinners, and fundraisers. The Foundation depends on these sources of income to support the scholarship programs, cultural events and to cover operating expenses. The Foundation depends on its members to support its fundraisers and events. Donations also go a long way to sup- porting the Foundation’s mission and our home, the Italian Cultural Center, as this is our heritage that binds us to- gether as Italian Americans and to further the Foundation’s commitment to the North Bay Italian community.

    Breads Easter Dove Bread #1 Colomba di Pasqua Makes 1 Loaf The Colomba is a sweet bread similar to panettone but it is shaped like a dove and made during Easter all over Italy, most of it commercially these days. This bread, along with many others, was prepared on Good Friday and Holy Saturday, and eaten during Easter week. The recipe has come down through the Galasso family. INGREDIENTS 1/4 cup warm water (110º to 115ºF) 1 tablespoon active dry yeast 1/2 cup warm milk 2/3 cup sugar 8 tablespoons (1 stick) butter or margarine, melted 1 tablespoon grated lemon zest 1 tablespoon vanilla extract 3 large eggs, at room temperature 3 large egg yolks, at room temperature 4 1/2 to 5 cups King Arthur™ Unbleached, All-Purpose Flour 3/4 teaspoon salt 1 large egg white, slightly beaten 1 tablespoon turbinado (raw sugar) or coarse brown sugar DIRECTIONS In the large bowl of an electric mixer, put the warm water and yeast and stir to dissolve. Let the mixture proof for 10 minutes. Add the milk, sugar, butter, lemon zest, vanilla, whole eggs, and egg yolks and beat on low speed to blend well. Then beat on medium speed for 3 minutes. Add 4 cups of the flour and the salt and beat on medium speed. Gradually add the remaining flour a little at a time, until a soft dough is formed. You may not need all the flour. Turn the dough out onto a floured surface and knead until smooth and elastic, about 8 to 10 minutes.
