North Bay Italian Cultural Foundation Mosaico Culturale Marzo e Aprile 2021 Volume XXXVI I– Numero 2 Founded in 1984, NBICF brings people of all ancestries together to share all things Italian Messaggio del Presidente - George Golfieri- 707-843-3176 Cari Amici, I hope all of you and your families and friends remain in good health during this pandemic. This past year has been like no other that we will remember for years to come. Two months into 2021 and the pandemic continues to af- fect our lives. However, I am optimistic that 2021 will be a better year as COVID-19 vaccines are beginning to be administered. Hang in there as there is light at the end of the tunnel and we can once again come together to cele- brate our Italian traditions and culture. As they say in Italy, “andra tutto bene”. Everything will be alright. Financially, the Foundation ended 2020 with $37,648 in the bank, a balance much lower than in previous years. The pandemic had an impact on the Foundation’s ability to generate income to cover fixed expenses. The majority of income is generated from membership dues, donations, dinners, and fundraisers. The Foundation depends on these sources of income to support the scholarship programs, cultural events and to cover operating expenses. The Foundation depends on its members to support its fundraisers and events. Donations also go a long way to sup- porting the Foundation’s mission and our home, the Italian Cultural Center, as this is our heritage that binds us to- gether as Italian Americans and to further the Foundation’s commitment to the North Bay Italian community.

The Italian Table: So Many Easter Specialties Published on iItaly.org (http://iitaly.org) The Italian Table: So Many Easter Specialties N.L. (April 02, 2014) Like most holidays, Easter time is another reason for great Italian tradition and cuisine. The Easter lunch in Italy is a delicious reason for a spectacular meal, great company and a primal celebration of the end of winter and nature’s (not just Christ's) rebirth. After 40 days of food abstinence and sacrifice for Lent, Easter is not just a religious holiday that celebrates Christs' resurrection it is a day that marks the beginning of spring by delivering its freshest ingredient to the dining table. In Italy, the Easter menu varies from region to region, each region has its own irresistible andflavorful dishes, but no matter where you are, there are three main ingredients that shine in Page 1 of 4 The Italian Table: So Many Easter Specialties Published on iItaly.org (http://iitaly.org) every kitchen: eggs, lamb and Colomba cake. Their consumption is not just casual, it is has a deeper meaning as they have earned, through the ages, a Christian symbolic meaning. We can safely say that eggs represent birth and the never-ending renewal of life, lamb means sacrifice, having been a religious offering since the beginning of time. In Christianity it represents Jesus Christ, who is also called “the lamb of God.” Colomba cake, a sweet bread in the shape of a dove, represents peace. The reason for its use as a symbol of peace is the story of Noah and the release of the white dove to find land after the Great Flood.

  • Ciao Italia Colomba Di Pasqua
Breads Easter Dove Bread #1 Colomba di Pasqua Makes 1 Loaf The Colomba is a sweet bread similar to panettone but it is shaped like a dove and made during Easter all over Italy, most of it commercially these days. This bread, along with many others, was prepared on Good Friday and Holy Saturday, and eaten during Easter week. The recipe has come down through the Galasso family. INGREDIENTS 1/4 cup warm water (110º to 115ºF) 1 tablespoon active dry yeast 1/2 cup warm milk 2/3 cup sugar 8 tablespoons (1 stick) butter or margarine, melted 1 tablespoon grated lemon zest 1 tablespoon vanilla extract 3 large eggs, at room temperature 3 large egg yolks, at room temperature 4 1/2 to 5 cups King Arthur™ Unbleached, All-Purpose Flour 3/4 teaspoon salt 1 large egg white, slightly beaten 1 tablespoon turbinado (raw sugar) or coarse brown sugar DIRECTIONS In the large bowl of an electric mixer, put the warm water and yeast and stir to dissolve. Let the mixture proof for 10 minutes. Add the milk, sugar, butter, lemon zest, vanilla, whole eggs, and egg yolks and beat on low speed to blend well. Then beat on medium speed for 3 minutes. Add 4 cups of the flour and the salt and beat on medium speed. Gradually add the remaining flour a little at a time, until a soft dough is formed. You may not need all the flour. Turn the dough out onto a floured surface and knead until smooth and elastic, about 8 to 10 minutes.

  • Easter Breads – a Brief Overview and Sample Recipes European And
Easter Breads – A Brief Overview and Sample Recipes European and Eastern European countries, especially, enjoy traditional breads during Holy Week and Easter. Normally (but not in every case) these breads are sweetened (often with dried fruits)—a tradition dating as far back as ancient times in Greece’s Homeric period, when the treat was called “honey-leavened” bread; in ancient Rome, when people enjoyed panettone-type sweet breads; and in the Byzantine period, when Orthodox Christians ate sweetened “communion” bread to celebrate the “sweet” joy of Jesus’ resurrection and the new life in Christ offered to us as a result. American versions of Easter breads are also traditional in some families. Some of these breads enjoyed today include: Babka (Poland, Ukraine, Belarus): a tall, cylindrical bread often baked in a Bundt-type pan and containing raisins and/or candied citron or orange peel, optionally with icing on the top, thus making it much sweeter than Paska (see below)—also made only for Easter to celebrate the rising of Christ from the dead Cozonac (Romania, Bulgaria, Macedonia): a slightly sweet yeast bread containing raisins and walnuts or pecans—a type of Stollen (see Paasstol below) Easter Egg Bread (United States) (below, see the recipe shared by Director of Alumnae/i and Church Relations the Rev. Carolyn Cranston ’99) Folar (Portugal): a bread that may be either sweet or salty and is traditionally offered to godfathers, and priests at Easter in imitation of Jesus’ distribution of bread to his disciples at the Last Supper Gluten-free Communion Bread (below, see this creative idea provided by Director of the Church Planting Initiative the Rev.
