Holiday Breads & Winter Pastries Instructor Holiday Breads & Winter Pastries Instructor: Robert Jörin September 21-22, 2019 Saturday 8-3, Sunday 9-3 Long Beach Community College 4901 East Carson St. Long Beach, CA 90808 Skill Level: Beginner to Advanced This class will cover a variety of classic Holiday Breads and Cookies and some unique Pastries traditionally eaten during the winter months. During this two day hands-on class, we will ex- amine the classics and look at new, interesting ways to use laminated dough. Some of the items presented will include: • Christmas Stollen • Italian Easter Doves (Colomba di Pasqua) • Classic Hot Cross Buns • Laminated Hazelnut Babka • Laminated, Fried, Ricotta Turnovers • Classic Holiday Cookies Guild Members $ 375 Non-Members $ 460* (*includes 12-month Guild membership) Registration deadline: September 5th Robert Jörin brings experience as both owner and pastry chef of a highly successful bakery in Northern California, and credentials as a culinary and hospitality educator in the baking and pastry arts, to his role as the Associate Dean of the degree programs at The Culinary Institute of America at Greystone. Chef Jörin joined the Institute in 1996 and was part of the three-member Team USA that won the prestigious Coupe du Monde de la Boulangerie in February, 1999. Since then he has been a judge at various international baking and pastry competitions and the Bread Bakers Guild’s national baking competitions to select the US Baking Team for the 2005 and 2008 Coupe du Monde de la Boulangerie in Paris. Chef Jörin was certified by The American Culinary Federation as an Executive Pastry Chef and Certified Culinary Educator. He is also a Certified Master Baker and a Certified Hospitality Educator. The pandemic had an impact on the Foundation’s ability to generate income to cover fixed expenses. The majority of income is generated from membership dues, donations, dinners, and fundraisers. The Foundation depends on these sources of income to support the scholarship programs, cultural events and to cover operating expenses. The Foundation depends on its members to support its fundraisers and events. Donations also go a long way to sup- porting the Foundation’s mission and our home, the Italian Cultural Center, as this is our heritage that binds us to- gether as Italian Americans and to further the Foundation’s commitment to the North Bay Italian community.

    Breads Easter Dove Bread #1 Colomba di Pasqua Makes 1 Loaf The Colomba is a sweet bread similar to panettone but it is shaped like a dove and made during Easter all over Italy, most of it commercially these days. This bread, along with many others, was prepared on Good Friday and Holy Saturday, and eaten during Easter week. The recipe has come down through the Galasso family. INGREDIENTS 1/4 cup warm water (110º to 115ºF) 1 tablespoon active dry yeast 1/2 cup warm milk 2/3 cup sugar 8 tablespoons (1 stick) butter or margarine, melted 1 tablespoon grated lemon zest 1 tablespoon vanilla extract 3 large eggs, at room temperature 3 large egg yolks, at room temperature 4 1/2 to 5 cups King Arthur™ Unbleached, All-Purpose Flour 3/4 teaspoon salt 1 large egg white, slightly beaten 1 tablespoon turbinado (raw sugar) or coarse brown sugar DIRECTIONS In the large bowl of an electric mixer, put the warm water and yeast and stir to dissolve. Let the mixture proof for 10 minutes. Add the milk, sugar, butter, lemon zest, vanilla, whole eggs, and egg yolks and beat on low speed to blend well. Then beat on medium speed for 3 minutes. Add 4 cups of the flour and the salt and beat on medium speed. Gradually add the remaining flour a little at a time, until a soft dough is formed. You may not need all the flour. Turn the dough out onto a floured surface and knead until smooth and elastic, about 8 to 10 minutes.

Normally (but not in every case) these breads are sweetened (often with dried fruits)—a tradition dating as far back as ancient times in Greece’s Homeric period, when the treat was called “honey-leavened” bread; in ancient Rome, when people enjoyed panettone-type sweet breads; and in the Byzantine period, when Orthodox Christians ate sweetened “communion” bread to celebrate the “sweet” joy of Jesus’ resurrection and the new life in Christ offered to us as a result. American versions of Easter breads are also traditional in some families. Some of these breads enjoyed today include: Babka (Poland, Ukraine, Belarus): a tall, cylindrical bread often baked in a Bundt-type pan and containing raisins and/or candied citron or orange peel, optionally with icing on the top, thus making it much sweeter than Paska (see below)—also made only for Easter to celebrate the rising of Christ from the dead Cozonac (Romania, Bulgaria, Macedonia): a slightly sweet yeast bread containing raisins and walnuts or pecans—a type of Stollen (see Paasstol below) Easter Egg Bread (United States) (below, see the recipe shared by Director of Alumnae/i and Church Relations the Rev.
