APPETIZERS 1 Cup of cava. 2 2 Chipá Chipa (cheese bun) with peach jelly. 3 Chipá (cheese bun) with ginger.

STARTERS 4 AREPA Oaxaca cheese, caramelized onion and hogao sauce with roasted peppers and cumin. 5 PERUVIAN CEVICHE Corvina with tiger’s milk of yellow chili pepper, and crunchy corn nuts. Vegan option: King oyster mushrooms and shiitake ceviche with mango tiger’s milk and chia seeds. 6 GRILLED SCALLOPS With quinoa crunch, creamy cheese and roasted glasswort. Vegetarian option: Grilled Oaxaca cheese, with smoked eggplant and quinoa crunch.

MAIN COURSES 7 CORVINA JAGUAR Corvina loin with passion fruit butter, lemon rice and roasted cabbage. Vegan option: Zapallo kabutia (a type of squash), avocado mousse, beet mayonnaise and spicy buds. 8 SMOKED RIB Smoked veal rib, rustic sweet potato puree and sauce of green coriander and ginger. Vegan option: Arroz Chaufa (peruvian fried rice), seasoned with soy sauce and mirin, with roasted vegetables to thyme.
