We bring these back from Madagascar ourselves and as far as we know are 1 of only 2 places that sell it in the United States. Madagascar Green Peppercorns $6 for 1 oz A distinct and flavorful pepper great for sauces, sauces and flavored salts.

BACONS

Shoulder (All-Natural Duroc ) $8 per lb. Same taste as our country bacon, but made from leaner all-natural pork shoulder.

Garlic Bacon (All-Natural Duroc Pork) $8 per lb. Dry-cured like our country bacon, but with a whole lot of garlic. Great for or just about anything else.

Duroc Country Bacon (All-Natural Duroc) $8 per lb. (sliced) Dry-cured bacon smoked over real wood fire for 6-8 hours. Just good simple bacon made with exceptional pork and traditional techniques.

Berkshire Country Bacon (Heritage Breed Pork) $10 per lb. (sliced) Dry-cured bacon smoked over real wood fire for 6-8 hours. Just good simple bacon made with exceptional pork and traditional techniques.

English Bacon (Heritage Breed Pork or Local Pasture-Raised) $10 per lb. (sliced) Dry-cured bacon smoked over real wood fire but pork is cut from the loin and top of the ribs instead of the belly. A little bit of lean meat and some fatty too.

Hungarian Bacon (Heritage Breed Pork) $10 per lb. (sliced) Dry-cured with a lot of paprika and garlic and smoked local burr oak for 8 hours.

Sweet Black Pepper Bacon (All-Natural Duroc Pork) $8 per lb. Dry-cured with lots of black pepper and extra black pepper. Sweet, savory and a nice little bite from the pepper. Double-Smoked Asian Slab Bacon (All-Natural Duroc Pork) $8 per lb. Dry-cured cold-smoked once over burr oak and then hot smoked over a traditional Chinese smoking mixture of rice, tea and sugar.

Herbed Tesa (flat ) (Heritage Breed Pork) $14 per lb. (small slabs) Thinner slabs of pork belly coated with black pepper and fresh thyme and then dry-cured and dry-aged.

Larding Bacon (Heritage Breed Pork) $4 per đ lb. pack (sliced) These are the fattier slices of our dry- cured country bacon. They are perfect for wrapping or draping over leaner cuts of meat for roasting or grilling. Cover your next oven roasted chicken with it and you will be very far from disappointed.

Italian (Heritage Breed Pork) $3 for 2 oz (thin sliced) Traditional Italian Lardo from the pork belly . It is cured, pressed and aged. Comes sliced super thin and ready to be paired with fruit or roasted vegetables.

Tuscan Salami (All-Natural Duroc Pork) $5 per link. This traditional Italian Salami features red wine and local toasted fennel. Slice thinly and enjoy with a nice dry wine. This is a true salami dry-aged for 2 months.

Spanish Chorizo (All-Natural Duroc Pork) $5 per 4 oz link. This traditional Italian Salami features red wine and local toasted fennel. Slice thinly and enjoy with a nice dry wine. This is a true salami dry-aged for at least 2 months. Herb & Molasses Breakfast (Duroc Pork) $6 per lb. More than 10 herbs and spices mixed with fresh all-natural Durco pork and just a touch of molasses. Smoked Garlic & Beer Summer Sausage $7 per stick (approx. 1 lb.) This ready-to-eat sausage is made with all-natural Duroc pork shoulder, pilsner beer and house-smoked garlic.

Ham Hocks (Heritage Breed Pork) $6 per lb. Heritage breed hock dry-cured and smoked. Perfect for soup and has enough meat to make a meal.

Ham Bones (Heritage Breed Pork) $3 Smoked heritage breed ham bones. Great for soup or stocks.

Honey-Glazed Boneless (All-Natural Duroc Pork) $6 per lb. (1.5 - 2.5 lb.) All-natural pork shoulder dry-cured, smoked over real wood fire and glazed with honey.

This and That Heritage Breed $5 per pint regular $6 per pint leaf Rendered in-house from local heritage breed pork fat. Smoked Tabasco-style Hot Sauce $5 for 5 oz. Naturally-fermented hot sauce using smoked red jalapeños and other medium hot peppers. Sauce is fermented and for 2 months ands then mixed with our own house- fermented raw apple cider vinegar. Smoked Green Chili & Apple Hot Sauce $5 for 5 oz. Naturally-fermented hot sauce using a mixture of smoked green chilies (mild-medium) and local apples.

Madagascar Vanilla Beans $3 for 1 or 8 for $10 The juiciest vanilla beans around. We bring them back ourselves from Madagascar, so they are not overly dried like almost all other beans. Garlic & Rosemary Frying Lard $4 per pint Rendered from all natural Duroc pork fatback. This lard was simmered with garlic and local rosemary and is great for frying everything from eggs to steaks.

Fresh Meat Bacon-Wrapped Pork Tenderloins $10 per lb. (.8-1 lb.) Soft pot belly pork tenderloins seasoned with sea salt and wrapped in dry-cured garlic bacon. Ready for the grill or oven. Herbed Pot Belly Pork Roast (only 1) $11.30 for 1.13 lb. piece An small fresh ham roast cut from incredibly well marbled pot belly pork. Roast is seasoned with sea salt and black pepper and then coated with basil.

Heritage Breed (Heritage Breed Pork) $5.50 per lb. (about 3 lbs. full rack) This is about as a good as ribs get. The ribs are from local heritage breed Berkshire pork. The meat is darker, richer and more succulent than commercial pork.

Wagyu Eye of Round Roast (Local) $7.50 per lb. This tender and normally leaner cut is beautifully marbled and from local all-natural Wagyu beef from Imperial Wagyu Beef farms.

Local Foods French Sourdough Bread $5 per loaf Made right in Ft. Calhoun by Stick & Stone Brick Oven Bakery.
