One 48-count lug of avocados: 25 lbs.

Average peel, pit and trim loss is 45%, leaving less than 14 lbs. of usable fruit from a 25 lb. avocado lug, a mere 55% yield.

Removing unusable fruit (under/over-ripe and damaged) takes time, reduces yield and varies in each lug. Slicing, pitting, peeling and trimming defects take upwards of 15 minutes per lug, reducing yield even further.

Prep time for common guacamole ingredients is approximately 10 minutes per 10 lbs. of finished product.
