Both have travelled widely and been exposed to hands-on winemaking from Bordeaux to Barossa. During the past 10 years both writers contributed to a diverse range of wine information media. They were involved with the London based Vinopolis Wine Experience in its inception, ensuring its authenticity as a major Wine tourist attraction. In 2000-2001 they were the principal wine judges for Wine Today Europe for the New York Times. From 2001 the pair pooled their substantial wine tasting expertise to set about creating a wine guide of unprecedented depth and scope. The result, the critically acclaimed Wine behind the label (first edition 2003) covers all the world's top wine producers, and their wines, in a truly global context, in a way no other wine book has before. They both actively sought out new producers, travelling extensively to visit them at their wineries or meet them at the most important of the world's major wine fairs. The pair gained wide recognition resulting in three major awards for Wine behind the label in 2006 and 2007, the Louis Roederer Wine Guide of the Year, Glenfiddich Drink Book of the Year and the André Simon Drink Book of the Year. Crucially, they have had no commercial links with wine producers in order to maintain their independent stance and unreserved critical analysis. Philip has now left and David has taken the overall role as editor for the whole project. Neville Blech, who has provided assistance since 2005 has been a contributor to this 7th edition. He has written a number of new winery profiles in both California and Liguria in North-West Italy and has upated the sections on Burgundy, Beaujolais, Piedmont and North-West Italy as well as North-East Italy.     Structure in Wine steiia thiAst What is Structure? • So what is this thing, structure? It*s the sense you have that the wine has a well-established form,I think ofit as the architecture ofthe wine. A wine with a great structure will often remind me ofthe outlines of a cathedral, or the veins in a leaf...it supports, and balances the fiuit characteristics ofthe wine. The French often describe structure as the skeleton ofthe wine, as opposed to its flavor which they describe as the flesh. • Where does structure come firom? In white wines, it usually comes from alcohol or acidity; in red wines, it comes from a combination of acidity and tannin, a component in the grapes' skins and seeds. Thus, wines with a lot of tannin (like cabernet) also have a lot of structure. Beaujolais is made from gamay which does not have much tannin. As a result, Beaujolais can lack structure; it feels soft, flat or simple in the mouth (though its flavors can certainly still be attractive). • While structure is hard to articulate, you can easily taste or sense it —^and the lack of it. • Understanding structure is critical to understanding any ofthe ''powerful" red varieties: cabernet sauvignon, merlot, syrah, nebbiolo, tempranillo, and malbec, to name a few. I just don't think you can understand these wines unless you understand structure, and how it frames and focuses the powerful rush of fruit. It adds freshness, and a "lightness" to the density ofripe fiuit. Structure matters when pairing wine and food. Foods with a lot of structure themselves— like a meaty, thick steak-need wines with commensurate structure (like cabernet), or the food experience can dwarfthe wine experience.

The vineyards are planted in the slops as part of a complex ecosystem that includes vegetable crops, pastures and native forests, which sustain a varied wild, native spices – wild boar, fox, wild cats – as well as butterflies and other insects that help maintain a healthy vineyard and inspire some of their label designs. The vineyards sit at 750m (2,500fts) altitude and have soils composed of silty clay from Pleistocene era sediments. The climate is continental with cold (low to mid teens) winters and sunny hot summers with wide intraday temperatures variations. All their wines are state grown and vegan. The production area includes lime soils which are ideal for obtaining colorful wines. Also the sand textures of these lime soils benefit the ripening of the grapes. The vineyard is situated 800 – 850 meters above sea level with an N / SE orientation resulting in maximum sunlight exposure. Vinification: The wine making process without the use of sulfur means that the hygienic conditions have to been extreme during harvest season. The grapes are harvested solely by hand in small crates. Every effort is made to avoid breakage and bacteria attacks. The wine deposits are filled very briefly so as not to delay the delicate fermentation process. All elements that come in contact with this no sulfite added wine are subject to the most extreme hygienically conditions. Terroir: Mix of sandy and clay soils, with the presence of stones. Training system: The vines are guided by the Gullot doble system, although the vines are not held. This system enhances the airing of the vines, avoids the emergence of cliptogamic diseases. Also, a shading cover of the vegetation avoids the direct impact of the sun on the vines. Tasting Notes: Aromas of strawberry, stewed plum, vanilla custard, and baking spice with a bright, dry light-to-medium body and an interesting, medium-long , prune, and bittersweet chocolate finish with well-integrated tannins.

    CHATEAUNEUF DU PAPE Blanc Chateauneuf du Pape, certifé Biologique FR01BIO Original blend of the 6 white grapes of the Appellation : Grenache, Clairette, Bourboulenc, Roussanne, PIquepoul and Picardan. Organic certified. THE VINTAGE 2018 LOCATION The Domaine is situated in the area of the CHATEAUNEUF DU PAPE Appellation. TERROIR The terroir is clavey-chalky with large rounded sun-warmed stones, which diffuse a gentle, provenditial heat that helps the grapes to mature. IN THE VINEYARD For 40 years, we cultivate the vineyard with agriculture in an environmental friendly way. The yield is low : 35 hl/ha. The grapes are harvested by hand in the morning at fresh temperature with a selection of the best grapes. VINIFICATION The grapes are directly pressed to extract their juice at low pressure. The juice is then fermented at a controlled temperature to extract the grape aromas. We do add no sulfites during the vinification. 40% is vinified in barriques of 400 liters. AGEING It’s then preserved in fine lees in suspension. Maturing during 10 months. Malo-lactic fermentation is done (it brings more aromatic expression).
