The name Chakana originates from a symbol used by ancient Peruvian indigenous cultures, the Andean Cross. It signifies the three worlds that exist around us: the world above, the ground we step on and the underworld. Above all it represents individuals living in harmony with each other and their surroundings, especially nature. has 84 Ecosystems & we express this throughout our menus.

OUR RESTAURANT

Situated within the walls of a historical bank, Chakana is a modern Peruvian restaurant from celebrated chef Robert Ortiz.

Robert’s menu is a modern take on traditional . Showcasing bold, unique flavours and ingredients from Peru alongside the best of British produce.

Our cocktail menu focuses on Peruvian and South American spirits and flavours and we are more than happy to create classic or bespoke to your taste.

We are one of 200 establishments in the UK to stock Estrella Inedit draught lager. Inedit was created in 2008 by Damm’s master brewers and Ferran Adrià from El Bulli alongside his team of sommeliers.

The oldest use of the word Pisco dates back to 1764 when the beverage acquired its Quechua (language of the Inca) name from the Peruvian town of Pisco.

Pisco is Peru’s national spirit, made by distilling fermented grapes, eight varieties of grapes can be used in Pisco production therefore three distinct styles of pisco were created. Puro, Mosto Verde, Acholado.

We have categorised our pisco range into their grape varieties and styles.

All our Pisco’s are served as 25ml measure as standard. QUEBRANTA GRAPE PISCO Quebranta is the most popular and widely grown grape in Peru. Quebranta has a special place in Peruvian hearts making up 85% of the grapes they grow.

BARSOL QUEBRANTA 4.00 A great all rounder. Well structured with nutty, almond and raisin aroma. Long finish with light citrus on the palate.

LA CARAVEDO QUEBRANTA 3.25 Fresh cut grass, red apples and hay with light banana and dried fruit, bright and bold finish.

MACCHU PISCO QUEBRANTA 5.00 Created by two sisters in 2006. Fresh bread, pastry aroma, little bit of spice with a slight herbal, earthy tone and a vanilla pepper finish.

PISCO SOL DE PLATA QUEBRANTA 3.25

Orchard fruit, light spice, bright citrus oils and a medium finish.

QUIEROLO QUEBRANTA 3.50 Well rounded, light spice, fresh orchard fruit aroma with a rich and nutty finish on the palate.

1615 QUEBRANTA 3.50 More delicate than most Quebranta . This is bright and light with flavours of pear, orchard fruit, vanilla, cherry and a touch of spice.

ITALIA GRAPE PISCOS Italia grape is the most highly aromatic and floral grape of the 8 grapes allowed to be used in Peru, producing some of the most wonderfully delicate and floral Piscos.

BARSOL ITALIA 5.00 Huge bouquet of aromas, tropical fruits & flowers. On the palate, lychee, mango, rose, honeysuckle and a touch of violet.

QUIEROLO ITALIA 3.50 Highly aromatic and heady, lots of dark forest fruits, cassis, prune, with a spicy finish and beautiful notes.

OCUCAJE ITALIA 4.00 Marzipan on the nose, tropical aromas of fresh pineapple with a bright citrus finish.

1615 ITALIA 6.00 Light, delicate, aromatics of cinnamon, almond and Jasmine. ACHOLADO PISCO

This is a blend of two or more grape varieties, allowing master distillers to craft a perfectly balanced and well rounded Pisco. Family recipes are often kept and passed down through generations.

BARSOL ACHOLADO 4.50 Maintains the well-structured tones of Quebranta but with the addition of the delicate floral and tropical notes coming from the aromatic grapes used.

1615 ACHOLADO 3.75 A perfect blend of aromatic and non-aromatic grapes. Bright and limpid with a touch of sweet fruit aromas such as banana and apple.

OCUCAJE ACHOLADO 4.00 Fruity and sweet smelling with a rich nutty aroma. Stone fruit and red berry on the finish.

TORONTEL GRAPE PISCO After the Italia grape, The Torontel grape is another very heady and highly aromatic grape variety offering bags of flavour and aroma.

BARSOL TORONTEL 3.25 Beautiful bright purple grape smelling, followed by orchard fruit, fresh pear, Jasmine and cinnamon and a subtle finish.

1615 TORONTEL 3.75 A nice bouquet of aromatics, vanilla, Jasmine and orange peel with a complex finish and silky mouth feel.

MOSTO VERDE PISCO Meaning ‘green ’. The term green refers to the grape juice having a much shorter fermentation meaning the ABV is much lower when distilled, making a pisco with a silky mouth feel that is much closer to the actual flavour of the grape itself.

BARSOL MOSTO VERDE TORONTEL 6.00 Creamy, rounded and filling the palate with lush fruit aromas finishing with a silky mouth feel.

BARSOL MOSTO VERDE QUEBRANTA 6.00 Delicate and fragrant, fresh cream, caramel and almonds, with a touch of Woody spice on the finish.

BARSOL MOSTO VERDE ITALIA 6.00 A rich and elegant Pisco with fruit on the nose of pear and bittersweet citrus with a lingering fruity finish and a touch of spice.

1615 MOSTO VERDE QUEBRANTA 4.50 Nice and aromatic with notes of vanilla, white rose and stone fruit. A creamy mouth-feel with a long slightly spicy finish.

PISCO PORTÓN MOSTO VERDE ACHOLADO 4.20 From the oldest distillery in the this is aromatic and pronounced on the nose with hints of Jasmine, angelica, rose and exotic fruits with a herbal finish.
