COCKTAILS Four Play · 18 LEMON, CREAMY, FLORAL, BITTER Gin + Elderflower Liqueur + Sweet Vermouth + Lemon + Egg White A floral take on the classic sour, finished with just enough bitter to balance it out. Jack ROse· 18 RIPE RED APPLE, CITRUS, OAK SPICE Apple Brandy + Grenadine + Lime + Apple Some credit this cocktail to an early 20th-century hit man called ‘Bald Jack Rose’, while others connect it to Jersey City bartender Frank J. May, who was also known as Jack Rose. Old Pal · 16 WINTER SPICE, OAK, FLORAL, BUTTER, ORANGE, DRY Rye Whiskey + Dry Vermouth + Campari + Citrus Oil Harry MacElhone of Harry’s Bar in Paris credited his ‘old pal, ’journalist William ‘Sparrow’ Robertson, with the inspiration for this drink. As the sports editor for the New York Herald in Paris. La Poire Mule · 20 CITRUS, ACIDIC, REFRESHING, FRUITY, HERBAL Pear Vodka + Benedictine + Lime + Ginger Beer + Mint + Dehydrated Pear The classic Moscow Mule was created in 1941 in The Chatham Hotel in Manhattan, and was later popularized in large part due to the vessel of the drink: the copper mug, which is still used today for the classics and adaptations of the cocktail. New York Sour · 20 ACIDIC, FRUITY, NUTTY, DRY, SEMI-SWEET Bourbon + Lemon + Sugar + Red Wine Formerly known as the Continental Sour or the Southern Whiskey Sour, this cocktail dates back to the late 1800s. Though originally thought to be crafted by a bartender in Chicago, the cocktail’s name was changed after it’s popularity took root in the Big Apple. Silver Gin Fizz · 19 LEMON, CREAMY, SEMI SWEET, DRY, REFRESHING Gin + Lemon + Sugar + Egg + Carbonate In the days when scurvy was ravaging the British Navy, the idea dawned on Admiral Nelson to mix gin with some lemon. The result: a remedy so effective the scurvy disappeared! Rum Saxerac · 20 LEMON, SPICE, BITTER, FULL BODIED Amber Rum + Peychaud Bitters + Orange Oleo Saccharum + Yellow Chartreuse + Orange Oils The official cocktail of New Orleans, classically made with American Rye, the seminal cocktail of the Pre-Prohibition era has played a leading role in the modern cocktail renaissance. Blood and Sand · 19 CHERRY, ORANGE, FRUITY, SMOKY, PEAT Scotch + Sweet Vermouth + Cherry Herring + Orange Juice It gets it’s name from a 1922 bullfighter movie and points to it’s ingredients: The “blood” represents Heering cherry liqueur, and the “sand” is for the orange juice. Sake Spritz· 18 REFRESHING, LIGHT, CITRUS, SPICE Cucumber Sake + Prosecco + Ginger Beer + Lemon + Mint There is no certain data on the birth of the Spritz, but it is believed that it’s origins can be traced back to the period of Austrian domination in Lombardy and Veneto between the late eighteenth and early nineteenth centuries when soldiers, traders, diplomats and employees of the Hapsburg empire stationed in Venice, took to diluting the high alcohol level of local wines with sparkling water Oaxacan Old Fashioned · 19 SMOKY, BITTER, CITRUS, WINTER SPICE This twist on the ever popular Old Fashioned was created in 2007 at New York’s famed cocktail bar Death & Co. It is seen as one of the most renowned of the twenty first century variations of the Old Fashioned and is regarded as a gateway in to the pleasures of tequila and mezcal Stig · 19 GRAPE, FLORAL, CITRUS, LIGHT Elderflower Liqueur + Pisco + Sauvignon Blanc + Cognac + Lemon Bitters All things grape distilled come together to create a light, refreshing cocktail with balanced sweetness and acidity. Chrysanthemum · 18 DRY, HERBAL, CITRUS, SPICE Dry Vermouth + Benedictine + Absinthe + Orange Bitters + Lemon A vermouth forward creation that offers delicious complexity. Though the origins of the name are lost, what remains is a beautifully balanced cocktail. Paper Plane · 20 ACIDIC, CITRUS, NUTTY, BITTER, HERBAL Bourbon + Aperol + Amaro + Lemon This modern variation on The Last Word is made with equal parts bourbon, Aperol, amaro and lemon juice and strikes a beautiful balance between bitter, sour and herbal. Tiki Manhattan · 19 BITTER, SPICE, CITRUS, TROPICAL Anejo Rum + Pineapple Rum + Sweet Vermouth + Amaro + Coconut Rum Rinse The Manhattan is one of the six basic drinks listed in David A. Embury’s classic The Fine Art of Mixing Drinks. This take is sweetened by coconut and pineapple rum and the result is smooth, balanced with tropical notes. THE BLOODY MARY In 1934, famed barman Fernand Petiot perfected the recipe for a vodka-and-tomato juice cocktail, known as the Bloody Mary at The St. Regis New York’s King Cole Bar. Originally christened the “Bloody Mary”, the cocktail was renamed the “Red Snapper” so as not to offend the hotel’s refined clientele. After more than 80 years, the iconic Bloody Mary remains the signature cocktail of the St. Regis. Bloody Mary · 19 SPICY, SAVORY, ACIDIC, GARDEN SALAD, BRINE Vodka + Tomato Juice + S & P + Worchestire + Tabasco + Lemon When Petiot originally created the drink, it was called the Bucket of Blood. In search of a more appealing name, Petiot renamed the drink the Red Snapper upon arrival at the St. Regis’s bar. And as for the name Bloody Mary, there are conflicting reports. Most agree the name has ties to Queen Mary of England, known for her gruesome executions and most likely came about as the drink spread through Europe. Rouge 140 · 20 SPICY, SAVORY, ACIDIC, RICH, BRINE, HERBAL, FLORAL Vodka + Soy + Oven Roasted Red Pepper & Tomato Juice + Chili + House Savory Spice Blend This version of the classic Bloody Mary pays tribute to “the most multicultural” city in the world. There are over 200 cultures and over 140 languages spoken around Toronto. Every culture has their own flavors in the culinary world but is bound together through the tomato, which is in undoubtedly one of the most important vegetables in Ontario. A multitude of flavors from these various cultures are represented in our version of the Bloody Mary as we look to honor the people that live here. THE BLOODY MARY Bloody Brunello · 20 Grappa + Tomato Juice + Acacia Honey + Tabasco + Lemon The St. Regis Florence’s signature cocktail derives inspiration from the city and the sorrounding Tuscan countryside. It includes grappa made from the grapes used in one of Tuscany’s most renowned wines, Brunello di Montalcino, to give the concoction its unique flavor - slightly earthy with just a hint of sweetness. Chilli Padi Mary · 19 Vodka + Lemongrass + Gingeroot + Chilli Padi + Sugar + Tomoato Juice The Chilli Padi Mary is inspired by the myriad influences found in Singaporean culture, at a crossroads of Asia. This libation incorporates ingredients found throughout the region. Lemongrass, chilli Padi and ginger give this cocktail a distinct spiciness that reflects Singapore’s eclectic cuisine.
