The semi-hard cheese has a sparse perforation and its consistency is reminiscent of a dough. The processing is done by Fläcke-Chäsi Beromünster and is matured for 6-8 months. Blue 61 Elegant blue cheese made from cow's milk, refined with wine (Raboso Passito) and cranberries. On the palate, the aromatic and fruity notes of the wine enhance the typical and intense flavor of the blue cheese. It is aged for 2 months. Mont Vully le Reserve The Reserve is a highlight for those who like a little more intense in flavor. In contrast to the Classique, the Reserve matures half a year longer. This makes it sharper, but not spicier. The loaf is rubbed with the original Vully wine (Pinot Noir). Emmentaler Rezent Emmentaler is made from fresh untreated milk from cows that eat grass and hay and never silage. Our Emmentaler from a sandstone cave in Mühlethal is being rubbed with must and matures in there. Delice de Bourgogne Delice d’Bourgogne is a special creamy soft cheese made from cow's milk. The milk for the Delice is mixed with creme fraise. This method gives it a high fat content of 75% i.d. It gives the cheese a particularly rich, creamy and a soft taste. Berg Vacherin Berg Vacherin is a soft cheese made from raw milk from the Zurich Oberland. It is a very soft, almost runny, heavy cream soft cheese with a washed, reddish rind that gives off a strong, slightly "stinky", odor. Merlischacher Quellwasser!
