Dubbed the "Mash Lass," Lauren is the first woman to serve as Mashhouse Production Operator at Glengoyne and, for that matter, one of comparatively few women working in Scotch whisky. Spirits of Whisk(e)y Eps 36 Show Notes 3/3/2021 The pace of change overtook Glengoyne Highland Single Malt Scotch Whisky a long time ago. With everything hurtling along around us, we’ve held true to practices honed since 1833, our year of establishment. We’re proud to be the slowest whisky distillery in Scotland. In the stillness of our quiet glen, we know patience is rewarded. For every minute other whiskies spend in their stills, ours spends three. Only then is it transferred to casks, themselves prepared for six years. This is the Glengoyne way. While we respect the past at Glengoyne, we also believe in protecting our future. Our liquid waste is cleansed in CO2-capturing reed beds and our solid waste is harvested for enough energy to power 354 homes each year. We also harness the power of the wind to help us reach our destination by sourcing all our electricity from turbines. At Glengoyne, we raise our glass to a greener future. Words from Weezy: Glendoyne 21 The dried fruit, honey and apple notes of Glendoyne 21 has me craving a big wedge of a creamy, slightly stinky blue cheese, potentially swathed in a layer of buttery puff pastry and served with fresh, ripe apples, and the whole lot drizzled with honey and fresh thyme. This could be dessert, yet this could also be a midday treat after a long walk through the Highlands. The distillery is supplied by the Rivers Lour and Spey, which is a short distance from Ben Rinnes and is in the heart of Speyside. As a little curiosity, the distillery pours a bottle of Aberlour 12-year-old into the River Spey every year, to mark the start of the salmon fishing season in February. This little ritual is to ‘bless’ the water in hope of a good fishing season for locals.
