MEM = Member’s Price There’s more distillation in the Lowlands than any other Scottish region, but its days as a significant single malt player are consigned to history. This is the home of the blend, and of the large quantities of grain whisky which form its foundation – but a few producers keep up the trademark light and grassy Lowland malt style. 4 All spirits are sold in measures of 25ml or multiples thereof. All prices listed are for a large measure of 50ml. Should you require a 25ml measure, please ask. All whiskies are subject to availability. MEM = Member’s Price AILSA BAY (ALE-sah Bay) Ailsa Bay was built within Girvan grain distillery in 2007 to produce malt whisky for William Grant's range of blends. The first single malt, a heavily peated no-age-statement release, was launched in February 2016, after eight years of operation. 1154 Ailsa Bay 48.9% £17.55 Creamy with sherried fruit, a touch of honey and spice on the nose. A sweet, malty, marmalade-like taste with a mellow malty and citrusy finish. AUCHENTOSHAN (OCHun–TOShun) Founded by Irish refugees in 1825 on the outskirts of Glasgow, Auchentoshan is one of the last active distilleries in the Lowlands. In common with other Lowland (and Irish) whiskies, Auchentoshan malt whisky is distilled three times (as opposed to most Scottish malt whisky, which is distilled twice). This triple-distillation has the effect of softening the flavour and body of the end product. 3259 Auchentoshan American Oak 40% £13.30 Auchentoshan American Oak was introduced in 2014 to replace the MEM £12.00 Classic. Matured exclusively in first-fill bourbon casks, this is a vanilla- rich and fruity whisky. 3679 Auchentoshan Bartender’s Malt Annual Edition 01 47% £14.15 The first edition of Auchentoshan Bartenders Malt was created by 12 competition-winning bartenders. Comprised of whiskies distilled between the 1970s and the early-2010s, this has notes of brioche, milk chocolate and dark apricots. 622 Auchentoshan 12yr 40% £14.80 Cereals and exotic fruits on the nose with sherried tannins, a little MEM £13.35 sweet barley and vanilla in the mouth. Dry and very long finish, with a little sweetness from the barley. 625 Auchentoshan Three Wood 43% £15.55 The ever-popular Auchentoshan 3 Wood is matured initially in bourbon casks before being finished in Oloroso then Pedro Ximénez casks for an extra layer of rich, sweet fruitiness. 1198 Auchentoshan 18yr 43% £23.40 Rife with toasty oak and vanilla spice. Chocolate cake and a lovely grassiness. Toasty vanilla, dark nuttiness on the palate, with a malty finish, little custard and fresh flowers. 623 Auchentoshan 18yr 1980’s 43% £88.90 An old rectangular bottling of triple distilled Auchentoshan 18 year old, bottled at 43% for the French market. We estimate this bottle dates from the 1980s. 624 Auchentoshan 1965 31yr Cask 2510 45.5% £255.15 An old 1990s single cask bottling of cask strength Auchentoshan 1965, MEM £229.65 bottled at 31 years old. Lowland whiskies at this age are fairly rare and take on complexity, but keeping their lighter style, making an elegant malt. 5 All spirits are sold in measures of 25ml or multiples thereof. All prices listed are for a large measure of 50ml. Should you require a 25ml measure, please ask. All whiskies are subject to availability. MEM = Member’s Price BLADNOCH (BLADnoch) Scotland's most southerly working distillery has an echoing connection with Northern Ireland. Built in 1817, the distillery as sold in 1911 by the founding McLelland family to the Belfast based whisky merchant Dunville & Co., who made their own whiskey in Ireland but were in need of stocks of Scotch to fulfil customer demand. As of July 2016, Bladnoch was scheduled to resume production by spring of 2017, with much new equipment, including four 5 tonne mash tuns, six Douglas Fir wooden washbacks, two 12,500 litre capacity wash stills, two 9,500 litre capacity low wines stills, and a steam boiler that will be fuelled with LPG. In late 2016, Prior officially relaunched Bladnoch, and announced three new expressions, created from aged stocks by master distiller Ian MacMillan: the no age statement Samsara, the 15-year-old Adela and the 25-year-old Talia. 3878 Bladnoch Adela 15 Yr Sherry Cask 46.7% £29.90 Adela is the 15-year-old offering from the revitalised Bladnoch distillery in the Lowlands. Matured in oloroso-sherry casks, this is rich and sweet with notes of dark chocolate, dried fruit, coffee and liquorice.

  • Spirits, Bottled Wine & Fossils
Our complete Treasure List of SPIRITS, BOTTLED WINE & FOSSILS Each the result of human curiosity and discovery. 1 FROM CURIOSITY, DISCOVERY EVOLVES. Humans have long tried to understand our world, explaining its complexities through theories of spirituality, biology, geography and astronomy. This insatiable thirst for understanding fuelled a period of unprecedented discovery during the 1800s with the mapping of our globe, the industrial revolution and the collection of countless botanical, zoological and geological artefacts. Our minds expanded with curiosity as mysterious fossils were uncovered; answering some questions, but presenting thousands more. And just as palaeontologists have captured our imagination with incredible beasts from centuries past, so too have the world’s master distillers by hand-crafting the finest spirits through alchemy of earth’s elements. These spirits endeavour to explain the complexities of our world and are celebrated, wholeheartedly, at Evolve Spirits Bar. 2 SPIRITS & WINE Tasmanian Vodka & Gin 82 – 87 Vodka & Gin 88 – 93 Whisk(e)y Tasmanian 4 – 12 Australia (Mainland) 13 – 14 Scottish 15 Blends, Vatted, Fusion 16 – 17 Lowlands 18 Speyside 19 – 29 Highland 30 – 34 Campbeltown 35 – 36 Islands 37 - 38 Islay 39 – 46 Irish 47 – 49 Japanese 50 – 53 American 54 – 59 World 60 – 62 Cognac, Armagnac & Brandies 63 – 69 Rum, Ron & Rhum 70 – 76 Tequila, Mezcal & Sotol 77 – 81 Wine by the Bottle FOSSILS 94 3 Tasmanian Whisky Tasmania is ideally situated to make malt whisky, and yet 150 years after the last licensed Tasmanian distillery closed its doors, it took a whisky lover to realise the environment was perfect. Bill Lark, owner and founder of Lark Distillery and renowned godfather of Australian whisky realised that that everything you need for a world-class whisky was in Tasmania: rich fields of barley, an abundance of wonderfully pure soft water, highland peat bogs and the perfect climate to bring all the ingredients together in a marriage of science, art and passion.

  • The Orkney Hotel Whisky Menu
THE ORKNEY HOTEL WHISKY MENU ORKNEY MALTS Orkney’s rugged and windswept character has shaped some of Scotland’s most distinct and warming malt whiskies. Highland Park 12yr (40%) From Scotland’s northernmost distillery comes a full flavoured Malt. With a nose of malt, sherry and peat, a palate of smoke, heather and other earthy elements. Highland Park 15yr (43%) Highland Park 15 has a remarkable complex nose with notes of camphor, peat and citrus fruits and flowers. The drying sensation on the finish leaves a rich smoky feeling and the immediate desire to refill your glass. Highland Park 18yr (43%) Burnished gold in colour with a rich, mature oak and aromatic smoke aroma. It has a rich, full flavour, honey and peat taste and a soft, round and long finish. Highland Park 21yr (47.5%) Drawing its incredible character from predominantly American oak casks which have been seasoned with sherry, this 21 year old is a truly dynamic whisky with an intensely fruity and spicy centre, surrounded by complex layers of candied orange peel, dark chocolate and rich, slightly drier smoke. A malt that rewards patience and delivers experience like no other. Highland Park 25yr (50.7%) With its golden dark red colour and very rich, mature oak, chocolate fudge aroma, this whisky is universally acclaimed, by the critics as one of the great single malts. It has a full, rich burst of flavours, soft honey and nutty toffee and a long and surprisingly sweet finish for its age. Highland Park 30yr (48.1%) 30 years ago after deciding to lay down the casks that would go on to become the heart of this exceptional whisky and over these 3 decades, the whisky maturing inside them has developed an outstanding balance, with a seductive sweetness and extremely delicate smoke.
