Quite simply, Clean Wine® is the highest quality wine on the market today. The process that Deerfield Ranch adheres to is based on science. The result is a clean wine® that is low in histamine and sulfites.

Two big misconceptions about wine allergies: • Tannins cause wine allergies (not true) • Sulfites cause headaches (not true)

The fact is, high histamine levels in wine is the primary cause of red wine headaches. Histamines are produced by bacteria during the fermentation. Elevated levels of sulfite may cause allergic reactions such as flushed face, ears and neck, hot flashes, puffiness, hives, and breathing difficulties. What’s the process Deerfield uses to produceClean Wine®? Deerfield triple sorts their to remove damaged grapes that have high levels of bacteria and MOG (Material other than grapes). Histamines are produced during the fermentation process by interaction of yeast and bacteria. By reducing the level of bacteria and by keeping the yeast well oxygenated and well fed, the yeast dominate the fermentation environment and histamine is not produced. Many winemakers and wine writers think SO2 is a preservative, keeping wine fresh and giving it a longer life in the bottle. SO2 (Sulfur Dioxide) is not a good preservative. It is an antioxidant that combines with the free oxygen in the wine, keeping it from prematurely oxidizing during the aging and bottling process. It combines with the free oxygen and becomes SO4, which is inert and non-reactive. Too much SO2 in the wine will lead to too much SO2 in your blood, which is toxic because it removes oxygen from your blood. By carefully monitoring the free oxygen in the wine and by knowing how much oxygen is necessary to properly age the wine, we use just enough SO2 to use up the excess oxygen, preventing the wine from oxidizing and leaving no extra SO2 to cause allergic reactions. Our protocols significantly reduce the histamine and sulfite levels, leaving very little in the finished wine. Those who get red wine headaches and have reactions to most wines can usually drink Deerfield wines and happily bring wine back into their lives.

Under rare and ideal conditions, Botrytis Cineria mold grows on the grapes late in the season, concentrating the sugars by dehydrating the grapes. We cold ferment the pressed juice over several months retaining the natural sugars and unique flavors from the botrytis. The long cold fermentation made the wine viscous and the botrytis preserves the wine. It is a gift from Mother Nature. The four acre Mandigo Vineyard is in Kenwood, just up the road from Deerfield. We do all the farming, making it an Estate Vineyard. Syrah reflects its terroir (French for“sense of place”) more than most grapes. Sections of a single vineyard can produce varied flavor nuances. Estate Syrah grows next to a wetlands and wild blackberries. The wetlands means the grapes are never stressed, so produce a round fruitiness rather than edgy earthiness. The pollen from the blackberries flavor the wine.

The car that started it all • PJ Rex in her 1974 Alfa Romeo Spider As a thank you gift for keeping her Italian car purring, PJ gave her Italian boyfriend at the time, Robert Rex, a wine making kit. She knew he was a chef and a chemist and figured he’d be a natural at making wine. He was. His very first wine won Best of Show at the California State Fair. PJ still drives the Alfa, Robert still keeps it purring, and together they make delicious wines. PJ was also Robert’s inspiration for DeerfieldClean Wine®. She is allergic to sulfite and gets red wine headaches. They call her the “canary in the cave”. Robert makes wine PJ can drink, which is a benefit to everyone. Robert and PJ got married at Deerfield Ranch in 1982, the year they moved to Sonoma Valley to start the Deerfield Ranch Winery. PJ is still Robert’s muse and the winery GM. Zinfandel Deerfield has a long tradition with and is renowned for its Zinfandel. My first wine was a Zinfandel, made in our garage in Berkeley in 1972. That wine took “Best of Show” at the California State Fair. My favorite everyday wine is Zinfandel. Zinfandel grapes make a wider style of wine than any other grape. Each of our Zins is unique. 2013 Zinfandel Sonoma Valley 82% Zinfandel, 9% Syrah, 6% Sangiovese, 3% Petit Verdot Zinfandel makes a wider style of wine than any other varietal. Our Sonoma Valley Zin is the one that is the most food friendly. It is great with burgers. It is great with steak. It is great with pasta. It has an even balance of fruit, body and strength and always satisfies with a very long finish. $42.00 2013 Zinfandel Los Chamizal Vineyard, Sonoma Valley 90% Zinfandel Blocks 3 and 4, 10% Malbec Los Chamizal Vineyard, near the town of Sonoma where Zinfandel was first planted in California in 1850, produces Zin flavors that are the quintessence of the varietal character, full of dark, rich flavor that screams, this“ is Zinfandel”. Peter Haywood, the grower, planted Zin in diverse blocks in his steeply terraced vineyard. The blend is from my favorites of 2 blocks. A bit of Malbec accentuates the Zinfandel berry flavor. $65.00

2014 Zinfandel Reserve Ivy Glen Vineyard, Sonoma Mountain 100% Zinfandel The Ivy Glen Vineyard is on a high bench near the top of Sonoma Mountain. Planted circa Prohibition, these old vines were coaxed back to a small yield of intensely flavored grapes that reflect the unique terroir of Sonoma Mountain. The vintage produced strong, full bodied wines and this one is spectacular. Gold Medal, American Fine Wine Competition 2013 Old Vine Zinfandel Reserve $85.00 Buchignani/Garcia Vineyard, Dry Creek Valley 100% Zinfandel This is our most renowned Zin. We’ve made every year since 1978. Planted about 140 years ago and is still farmed by the same family. This Old Vine Zin will knock your socks off with a huge amount of flavor, character and depth. Its high alcohol drives the flavors and yet is not hot. This is an end of dinner wine, with cigars and chocolate truffles. When the conversation lags and your palate seems dead this wine will wake up both. Robert and PJ, his wife and business partner, have lived at Deerfield Ranch, their hilltop retreat in Kenwood, Sonoma Valley, for 38 years. It’s where, in a converted horse barn, Deerfield Ranch Winery was founded. The view out their back door of Sonoma Mountain was the inspiration for the Deerfield logo. Winemaking Philosophy Making wine is like gourmet cooking. We start with the finest grapes, farmed by growers who put as much attention into their vines as we do into our wines. The best wine is made by a partnership between winemaker and grower. We allow the grapes to fully vine ripen, hand pick and sort the grapes, and use the gentlest production techniques. We make wine by hand in small lots and taste them constantly to manage their subtle changes. We experiment with the latest techniques while operating from a foundation of tradition. Our Clean Wine® techniques lead the industry. Our reds [email protected] receive extended barrel aging, which makes them mellow, complex and ready to drink when released. Proprietary Blends • Meritage • DRX I’ve been a fan of blending wines since we started making our own wine in our garage in Berkeley in 1972. I was a fan of French Bordeaux wines, which are blends of two or more of the Bordeaux varietals: Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot, and Malbec. In America, we call such blends Meritage, a coined word combining merit and heritage. Our wines labeled Meritage are from a single vineyard or appellation. DRX is a Meritage blended from barrels of Bordeaux varietals from multiple vineyards, selected by taste. Thinking outside the box created modifications on the theme, Red Rex and Super T-Rex.

2016 Red Rex Sonoma Valley 37% Merlot, 24% Cabernet, 12% Zinfandel, 11% Petit Verdot, 9% Syrah, 5% Sangiovese, 2% Cabernet Franc Taste has no rules and Red Rex is this philosophy personified. From 126 separate lots of wine, we made in 2016, we’ve woven the nose, taste, mouth feel, and character into a sensual experience. Red Rex is rich and full bodied without being aggressive. It is floral in the front with a long finish. It pairs with almost any food, from Paninis to lamb chops. T-Rex celebrates the Rex Family's Italian heritage and the winemaker's art. We accentuated the ripe strawberry flavors of the Sangiovese with Malbec and Zinfandel and structured the focus on your palate with the other three to give the wine a full and complex flavor with a smooth finish. It's perfect with pasta. $52.00 2006 Rancho Salina Meritage Rancho Salina Vineyard, Moon Mountain, Sonoma Valley 50% Cabernet Sauvignon, 34% Cabernet Franc15% Malbec, 1% Petit Verdot This field blend, grown in rocky red volcanic soil, 800 feet above the Sonoma Valley floor, exemplifies mountain terroir of Sonoma. This 2006 Rancho Salina is fruit forward, full-bodied and multidimensional, brought to perfection by 4 years in the barrel and 6 years in the bottle. $125.00 DRX DRX is our Flagship wine. It is a Cabernet based Meritage Blend, which follows the Bordeaux tradition of blending. We blend by taste the five Bordeaux varietals selected from the best tasting barrels of wine from our many source vineyards throughout Sonoma County. As we taste the barreled wine over a period of two years, we mark our favorites with an X so we can locate them when it is time to blend. The blend is then returned to barrels to age another couple of years, sometimes longer. The result is an exceptional wine that is the penultimate of our art.

2012 DRX 50% Cabernet, 20% Cabernet Franc, 15% Malbec, 10% Merlot, 5% Petit Verdot The blends are always done by taste so vary from vintage to vintage. In 2012 the blend was best with Cabernet Franc as the main support player. This accentuates dark Chocolate notes at the top of your palate. $125.00 2013 DRX 53% Cabernet, 17% Cabernet Franc, 15% Merlot, 10% Malbec, 5% Petit Verdot From the best vintage of the decade, it was barrel aged for five years. Drink some now, lay some down and it will be great when your toddler reaches her 21st birthday. $150.00 n the old days, when was king, you had to plan well ahead if you wanted something better than Carlo Rossi I or Blue Nun. You had to buy French wines in advance, and age them in your cellar. The reason is that the French wines are too acidic and tannic when young, because the grapes aren’t ripe enough when picked. In California, because of the better climate, we leave the grapes on the vine to fully ripen. Ripe grapes make wine that doesn’t need long bottle aging. Ripe grapes also make fruit forward wine. The best California wines are delicious when released and will age well. At Deerfield, we use good practices and organic food science to makeClean Wine®; wines that are free of excess sulfite, other additives or contaminants, and are low in histamines. I am often asked, “If your wines are made to drink shortly after release, will they age well?” Below we offer evidence that our wines age superbly. Those wines we consider the most age worthy, we continue to age in an ideal, temperature controlled environment at the place of their birth. When the wine reaches its peak, PJ says it is singing. When the wine sings, we offer it through our Wine Library. I'm looking forward to drinking this five or more year from now. It could be better than the '16, which was my favorite. The '17 is slower developing, which means it will achieve a higher pinnacle." This has been my favorite style for 50 years, and I’ve made Meritage style wines for 45 years. They age better than any other style of wine. Our 2007 DRX, is our best wine from the greatest vintage of the decade. long time ago in a galaxy far, far away, Obi Wine Kenobi, a Jedi Master, declared Deerfield the home planet of the Rebel Alliance. All Jedi Padawan journeyed to Deerfield to study how to control the force. They studied long, learned well, and went forth to mentor Padawan throughout the galaxy. ORGANIC AND ECO-FRIENDLY Deerfield Ranch Winery prides itself on being very “green.” We compost 100% of our production solid waste and recycle 98% of production water. The water is reclaimed by an on-site Bioreactor that uses bacteria and air to clean the water so we can use it for irrigation. We are restoring 14 acres of the Kenwood Wetlands and husbanding the endangered Kenwood Marsh Checkerbloom that resides in this wetlands. All the 23 vineyard sources for Deerfield wines are either organic or sustainability farmed.
