A deep knowledge of its territory and of its natural products, achieved through five generations at the service of agriculture, orients the company to attentively choose the raw materials from local producers, who process them within few hours after the harvest, therefore preserving their freshness and organoleptic properties. WHERE TO FIND US CICAS Ltd. was founded and developed in Bisceglie, in the heart of ’s Tableland, between the Adriatic Sea and the Murge Plateau’s wide slopes, where the Mediterranean scrub grows thriving and luxuriant. This is a region full of history, a spectacular land filled with centuries-old groves, just like in a Pointillist painting, and autochthonous vineyards, which make Puglia famous locally and worldwide. Here agriculture is one of the most important activities, and its products, and grape in particular, are inestimable resources that we carefully treasure, together with the old arts of producing precious wines and extra-virgin olive oils.

This is CICAS’ mission, where the delicious taste of Puglia’s natural products marry with a wide set of formats and exclusive packaging solutions. Oilò is a high quality extra-virgin , with an enticing scent, an intense colour, and a delicious flavour. Dolmen Valley, pure expression of Puglia’s gastronomic specialties, “Ready to Eat”, includes jarred vegetables, traditional organic Apulian , and sauces. Lastly, Masseria Barone Melodia is a selection of red, white, and rosé wines obtained from Apulian autochthon wine varieties, and this offer is enriched by balsamic vinegar.

Last but not least, CICAS is in direct contact with clients and suppliers: logistics, products’ lab analysis, certifications, products and packages’ customization are crucial aspects that we attentively consider and address in every phase.

Oilò – Apulian Extra-Virgin Olive Oil Inebriating scent that opens your mind, an irresistible intense colour and a flavour which will seduce you at first taste, with its light tingle in the throat. Superior quality “Oilò Extra-Virgin Olive Oil” is produced from autochthon cultivar. Olives are processed within 24 hours from harvesting with the cold pressing system, which ensures the preservation of our oil’s fragrance and flavour, as well as retaining the product’s nutrients such as vitamins and polyphenols with its notorious anti- ageing properties.

A greenish-gold colour, a mildly spicy flavour and a well-framed and rounded palate, with an aftertaste of sweet , and a long fruity finish, peculiarly characterize Apulian extra-virgin olive oil. Oilò brings out the flavour of the dish it gets paired to. Its classical version “One” is the perfect dressing for main courses, soups, and salads. The “Medium Fruited” version brings out the taste of fish main courses, white and red meat carpaccio, game, cooked vegetables and legumes. The flavoured line “Oil Essence” is a delicious alternative to butter and similar products when baking “dry dough” pastry. Oil Essence dressings are exclusively obtained by infusion in extra-virgin olive oil of spices and fruits, produced in the same area; this exquisite dressing, used by the best chefs and in haute patisserie, is available in two flavours: Aromatic (chilli pepper, garlic, and oregano) and Agrumes (lemon and orange). Our oil products, in their refined and elegant packages, are available in various formats, from the 200ml bottle to the 1.75L one. This is the ideal choice both for adding a touch of class to your daily table and to enhance the best restaurants’ cellars. CICAS’ oil selection also fulfils the needs of the Ho.Re.Ca. sector, with the 3 and 5 litres metal kegs.

Masseria Barone Melodia – Wine & Vinegar Apulian wine tradition proudly goes back millennia, with a twist of colours, flavours, fragrances, and culture clearly distinct in time. Masseria Barone Melodia is a rich Made in CICAS collection of full-bodied, well-structured red wines, but also of classical whites and rosé, which will satisfy the most demanding and expert palates. Our offer comprises balsamic vinegar.

The requirements for a first class gastronomic product, that instills a sense of safety, pleasure, and trust in our clients, lie in our high standard quality checks during the whole production chain: grape growing and hand picking, selection, processing, packaging, lab tests and panel tests.

Among the most appreciated white grape varieties in the northern area of

Bari, and chosen for you from CICAS Ltd., there are the Chardonnay, the Greco, the Fiano, the Falanghina, the Bombino Bianco, and the Malvasia, which produce well-structured white wines with gentle aromas of fruit, and a correct acidity level that will ensure the fragrance preservation and the conservation through time. The Primitivo (also known as , source: Wikipedia), the Syrah, the Aglianico, the Nero di Troia, the Cabernet Sauvignon, the Negramaro, the Salice Salentino, and the Sangiovese enrich our collection with red grape varieties, which produce well-balanced, harmonic red wines, supported by a full-bodied palate, and with elegant tannins. Lastly, the Malvasia Nera and the Negramaro grape varieties are the ingredients for our precious rosé, which completes our wines’ offer.

Masseria Barone Melodia selection continues with the “Balsamic Vinegar” line. Our PGI and USDA certified balsamic vinegar, aged for 3 years and 7 years in oak barrels, contains the fragrances and the flavours typical of the contact between grape must and wood. The correct balance between organoleptic and physical properties (e.g. density and acidity), are perfectly matched to the fragrance and the persistence of the aromas, and exalt the superior qualities of Puglia’s natural culinary specialties.

Dolmen Valley – Foods Puglia is a region kissed by the sun and caressed by the sea, a fertile and welcoming territory. All our vegetables are grown on the Apulian soil with knowledge and mastery and respecting the nature and its biological cycles.
