Tasting notes Color: dark ruby-red tinted with deep purple glints. Nose: charming combination of fresh red fruits and toasted notes. Mouth: Full-bodied and firm, with powerfull tannins. Spicy aromas and especially vanilla linger in a generous finale. Serving suggestions In its youth, the ideal serving temperature is around 15°C / 59°F. With time, its delicate aromas will need caring and so will the serving temperature. So, 18°C (64°F) will be perfect for a wine above 8 years. Ageing potential Fixin for its rich and full-bodied structure can easily age for 8 to 10 years, depending on the vintage characteristics. Origins The Cuvée Signature range is a selection of reputed villages, Premier and Grand Crus from Côte de Nuits and Côte de Beaune principally. These wines are produced in very limited quantities and every step from harvesting to ageing is mastered by our winemaker. Fixin is a Côte de Nuits appellation which takes its name from the village of Fixin, nestled at the entry of the combe north of Gevrey-Chambertin. This village appellation spreads over 100 hectares, of which 19 are classified as Premiers Crus, with only 4% producing white wines. The plot "La Mazière" stands north of the village, along the Route des Grands Crus and spreads over 2.2 hectares. Its name comes from the latin word MACERIA that refers to an enclosure wall made in dry masonry and to some extent, also refers to the ruins of stone houses. -

CRAFT + ESTATE PRESENTS Location: Morey-Saint-Denis Grape Variety: Pinot Noir Domaine Michel Magnien has evolved into a Burgundy producer of a singular style and philosophy in the village of Morey-Saint-Denis. Michel Magnien was born in 1946 and worked alongside his father Bernard from an early age. The Magniens sold their grapes to the local cooperative until 1993 when his son Frédéric joined the family business and persuaded his father to bottle the entire harvest themselves. Frédéric Magnien began experimenting with organic practices in the late 1990s and the entire production was certified biodynamic by Demeter in 2015. JOSH JENSEN Founder – Calera In the world of fine wine, Josh Jensen is a legend. An innovator and a pioneer, Josh has been named the San Francisco Chronicle’s “Winemaker of the Year,” honored as a “Rockstar of Wine” at World of Pinot Noir, and has graced the cover of Wine Spectator. More than just being universally respected by his peers, Josh played a pivotal role in establishing Pinot Noir as one of North America’s great varietal wines. In doing so, he also built Calera into one of the world’s most revered wineries. Beloved by connoisseurs, Calera has been honored by Wine & Spirits as one of the “Top 100 Wineries in the World” four times, with Robert Parker calling Calera “California’s Romanée-Conti.” For those who know Josh’s story, there is a particular aptness in the compassion to Romanée-Conti, In the early 1970s, after studying at Yale and Oxford, Josh was exploring Europe, when a desire to try his hand at vineyard work led him to Romanée-Conti, where he worked harvest. Inspired by his experience at the famed Pinot Noir estate, the following year he deepened his understanding of great Pinot Noir at Domaine Dujac. Returning to the United States, he began a quest to create a style of Pinot Noir that had not previously been realized in the United States. To achieve this goal, he spent the next two years searching for land rich in limestone, like the vineyards he most admired in Burgundy. In 1974, he found what he was looking for on the steep slopes of Mount Harlan, a 3,278-foot peak in the Gavilan Mountains that divide Monterey and San Benito counties. -

France Few regions can claim the fame and admiration that Burgundy BURGUNDY has enjoyed since the second century. Comprised of the Chablis, Côte d’Or, Côte Chalonnaise, Mâconnais and Beaujolais regions, Burgundy occupies a long and narrow stretch of vineyards in eastern France. The critical effect of terroir in Burgundy is expressed in its complex classification system. • Vineyards are divided into separate appellations along terroir France boundaries; the full range of classification levels from broadest to the most distinguished follows: District (e.g. Beaujolais or Chablis), Village (e.g. Pommard), Premier Cru (e.g. Pommard les Rugiens) and Grands Cru (e.g. Clos Vougeot). • As a result of Burgundy’s rules of inheritance, vineyard ownership is quite fragmented, with multiple owners for most crus. The Clos de Vougeot vineyard, for example, is split between 80 different owners. • Though soils vary, clay and limestone predominate in the Côte d’Or and granite is common in Beaujolais. DOMAINE DUJAC Clos Saint Denis 1970 - 2004 by Neal Martin March 2020 By Neal Martin | March 31, 2020 Walking back from a dinner last year, a friend asked if I was aware of the current market price for mature bottles of Domaine Dujac. “No,” I replied. All I knew was that they are beyond my budget. He whipped out his smartphone and dug up the price for a 1990 Clos de la Roche. I was gobsmacked – it was a cool £5,000 per bottle. Of course I am inured to the escalation in Burgundy prices in recent years, but even so, I found it staggering how much 750ml of Pinot Noir could cost. Then I remembered a bacchanal in Paris the previous January with a gaggle of high-rolling, wine-loving friends vowing serious damage to Tour d’Argent’s astonishing wine list. Jeremy Seysses joined us for a dinner that ranks among the greatest in my life, one where my already lofty estimation of Dujac went up a few notches. It was not Clos de la Roche that blew my mind but mature vintages of Clos Saint-Denis. I confess to an ardent passion for this vineyard, one shared by a number of winemakers, though it seems to lie unfairly in the shadow of Clos de la Roche within the context of Morey-Saint-Denis. So, when I was invited to a vertical of Dujac’s Clos Saint-Denis in London last April, there was no way I was going to miss it. This vertical tasting was organized by collector Jordi Orriols-Gil and took place at Hide restaurant in central London, with around fifteen Burgundy lovers in attendance. -
