Elegant and refined with freshness and acidity, this wine is a perfect combination of typicity and modernity.” Cédric Jenin - Winemaker PRECISE QUALITY MANAGEMENT AOC Muscadet-Sèvre-et-Maine owes its name to two rivers, the Sèvre and the Maine, which run through the Nantes countryside and some of its best wine growing areas. The words "sur lie" on this 100% Melon de Bourgogne mean that the wine spends the winter on its lees in tank, which gives it fullness and an attractive aromatic richness. This top-quality wine from Maison Castel is the result of working with a Terra Vitis-certified partner, and a carefully managed vinification process. MAISON CASTEL KNOW-HOW The Maison Castel winemaker and his team follow the ripening process very closely to optimise the aromatic expression and minerality of the grape variety. The teams check the must following strict criteria before it arrives at the Maison Castel winery. Different terroirs are vinified in different ways to get more precise aromatic results, and the aromatic expression is enhanced via several days of Residual sugars 2g/L cold soaking, settling (carried out according to the desired result), the choice of yeast, and alcoholic fermentation at controlled temperature. Finally, a six-month ageing period with lees stirring (as for premium white wines) gives this wine roundness and complexity. Enjoy as an aperitif or with seafood. -

Welcome to the wine list of Birkenhead House. Having spent much of my working life involved with wine, I have tried to create a wine list that has a true representation from the wines in South Africa and balanced with wines of both New World and the Old World in style, providing wines to suit most tastes and palates. I am often asked what my favourite wine is and my answer would be that I really do not have one. There are so many great wines made in South Africa that it depends upon the occasion, what I am eating, the time of year but I think most importantly the company I’m in. I have selected a range of House wines from our surrounding areas to offer a variety of grape types to suit many dishes, which are all available by the glass or bottle. This wine list is a work in progress and hopefully will never be finished. Please also note that some of the vintages offered are rare and we might not carry large quantities. If you have the time look through the list there are some fantastic wines from both individual family producers to large winemaking companies. They all have their place on our list and I have tasted them all. If you would like to talk about a particular wine or need some help selecting, please feel free to ask. However I am a great believer in “Drink what you like, when you like.” Wine is all part of the occasion, the more you enjoy what we have to offer at Birkenhead House the better the wine will taste. -

Most of our big changes take some getting used to. For example the room I am writing this introduction in was designed in 1940 to commemorate our one hundred year anniversary of operation. We call it The Last Room because it was the last room added onto the restaurant. Since then many rooms have come and gone without mention, but this name has remained. Many people have remained with our restaurant as well. We have a waiter who has been with us over fifty years. A couple of our chefs have been with us over forty years. Many of our menu items are over a hundred years old. And it is not unreasonable to believe that a handful of the wines we house today were poured in our dining rooms over a hundred and fifty years ago. At Antoine’s we are motivated by our tradition. Our traditional dishes became traditional because they were radical when they first appeared. We have wines that appeared in our books and on our tables a hundred and fifty years ago, and, hopefully, we always offer wines that have appeared just a couple weeks ago. The tradition of wine drinking is about the discovery of old and new memories. -
