The Connacht Distillery sits on the banks of the beautiful River Moy where the river widens into the Moy Estuary in Ballina, County Mayo. Here we distil and barrel-age our spirits in a rural, coastal environment unique to the West of Ireland. We prepare our mash, ferment, distill, age, and bottle our spirits all on site. The air in our distillery enjoys the heavenly scent of evaporating fine Irish whiskey known as “the angels’ share.” The heady odour of whiskey is a far cry from the yeasty tang the building used to enjoy when it housed the Duffy family bakery. The building surely has moved from one classic use of fine Irish grains to another. The distillery houses our three copper pot stills, which were custom designed by our master distiller, Robert Cassell, for the sole purpose of making great whiskey. We had our stills made to exact specifications in Victoria, British Columbia, Canada by the very experienced Specific Mechanical Systems. The dimensions of our stills, particularly their necks and heads, are different to others being used in Ireland, ensuring that our whiskey also will be unique and special. Connacht’s malt handling and brewing equipment was made in Germany by ROLEC, an internationally acclaimed craft brewing equipment manufacturer. The custom-made equipment combines the high efficiency and high capacity of modern beer brewing with the traditional distilling and fermentation processes needed for making fine whiskey. The distillery’s barrel room houses casks full of our whiskey; here our whiskey slowly matures. Our Irish whiskey never leaves our control and remains along the banks of the Moy, enjoying and benefiting from the unique terroir of our West of Ireland setting. This covers your cask, spirit, and up to five years aging and insurance. Further Costs After five years, additional storage and insurance can be purchased for an annual charge of €25. Excise duty will be payable on delivery of your final bottles. The current rate is €12.20 per 700 ml bottle at 40% ABV or 80 proof. (See terms and conditions for more details). The cask contents will be hand-bottled in our bottling facility at the prevailing rate; currently €3 per bottle. This charge includes label design and printing, bottles and corks, as well as bottling on our line at the distillery. You are welcome to assist with the bottling yourself, should you wish. An annual 100ml sample, which will be held at the Connacht Distillery upon request, is included free of charge. There are many external factors that go into the maturation of a cask and so any calculations done by ourselves are purely examples and are to be taken as a guide only. Your spirit will evaporate at approximately 2% per annum. This happens with every single cask in maturation and is unfortunately something that we are unable to prevent. We cannot predict the exact rate for individual casks, but the following could act as a guideline. You can decide whether to bottle at cask strength (59%) or at 40% ABV, with the cost breakdown estimated below for the 40% ABV option.
