Both & lay claim to the origins of whiskey, and both have long histories of distillation.

Whiskey is made by crushing grain to create a grist, to which water is added to create a mash. This mash is boiled to release sugars and then cooled. Yeast is added to start fermentation, which consumes the yeast creating alcohol. The liquid – which is actually beer - is drained off and distilled using a still and then is aged in for an appropriate amount of time. These processes are individualized by each producer – different grains, the use of peat in the malting process, alternative casks – these are only a few ways that a producer creates a distinct and unique beverage.

The ancestral home of whiskey, and we dare you to prove otherwise, once reigned supreme, for a time in the 19th century even outselling its Scottish rivals. The Irish War of Independence cut off trade with Britain, then U.S. prohibition further devastated the industry and it never fully recovered. Until now. There are now 18 licensed whiskey distilleries in Ireland with another 19 in development. Irish distilleries are alive, growing and flourishing. There is also a tradition of “brands” of whiskey in Ireland – finished whiskies are bought from distilleries and marketed under independent branded names.

Irish whiskey can be produced anywhere on the island of Ireland. Traditionally it is triple distilled, making it lighter and smoother than Scotch, with more delicate aromas and flavours. It must be barrel aged a minimum of three years. Irish whiskies also tend to have a lower level of malt. This came about as the result of a “malt tax” in 1697 with which the government hoped to raise additional revenue. The Irish got around this tax by combining malted and unmalted barley in their mash – a tradition which continues today. The term “single ” refers to whiskies made with a minimum of 30% unmalted barley. Today’s Irish whiskies come in a vast array of styles and we hope you enjoy your Irish whiskey tour.

5 6 Midleton Distillery The largest Irish whiskey distillery in existence and home to many of Ireland’s most famous brands, including Jameson, Red Breast, and of course, Midleton.

Jameson’s Irish Whiskey | 5.65 The classic and still great value Irish whiskey awarded 95 points by Jim Murray’s Whiskey Bible. A full and floral nose, great body with orchard fruit and vanilla cream. A honey and spice finish. 40% abv.

Jameson’s Crested Whiskey | 6.09 A high proportion of Sherry casking along with a healthy proportion of pot still whiskey makes this a sweet and fruity whiskey with a balanced proportion of spiced nuts and peppery notes. An interesting and delightful tipple and a terrfifc value.

Midleton Very Rare | 20 Considered the pinnacle of Irish whiskey making, this releases a new version each year which is hotly anticipated around the world. It’s just really flippin’ amazing. 40% abv.

Red Breast Pure Pot Still 12 yr old | 9.14 Consistently one of our best selling and most loved whiskies. A nutty rich and oily nose which carries over to the palate, with citrus peel, melon and a bit of ginger. A long and creamy finish. 40% abv.

7 8 Kilbeggan Distillery Located in Westmeath since 1757, one of the oldest distilleries in Ireland. Kilbeggan went out of production I 1954 but has been lovingly restored and now boasts the oldest working pot still in the land.

Kilbeggan Traditional Irish | 6.09 Smooth and gentle with nut oils, barley cereal, honeyed sweetness and malt. A dry oaky finish. 40% abv.

Kilbeggan Single Grain | 6.09 Made with 94% corn and 6% malted barley, this easy going whiskey makes a terrific starter whiskey with a biscuit sweetness accompanied by nutmeg spice and vanilla. 43% abv.

Kilbeggan Small Batch Rye | 6.09 Rye was historically the primary grain used in Irish whiskies. Kilbeggan returns to that tradition with a limited edition small batch . Soft creaminess with a hint of spice, a simple and mellow dram. 43%abv.

8 9 Tullamore D.E.W. | 5.65 Made at the . Lots of sherry and citrus peel in this medium bodied whiskey. The finish is long with herbal notes along with toffee and caramel. The “D.E.W.” comes from the initials of a former distillery manager in the 19th Century and has nothing to do with the purported dampness of the Irish climate. 40% abv.

Glendalough Double Barrel | 5.65 A single grain whiskey from Glendalough Distillery in Wicklow. Matured in American bourbon casks then finished for six months in Oloroso Sherry casks. A thick, decadent body with caramel, salty melted butter and crème anglaise. A woody spice on the polished finish. 42% abv

Tyrconnell Single Malt | 5.65 From the in County Louth. Orchard fruits and a malty character. Toast and honey with a dry, grassy finish and just a little spice. 43% abv.

Tyrconnell 15 yr old Single Malt | 13.48 Produced at the Cooley Distillery and aged in American oak. Sweet grains and gentle bourbon, a truly traditional Irish whiskey 43% abv.

9 10 Kern Premium Irish | 5.65 *Sommelier Pick Copper pot still, triple distilled with three to five years in American oak. Not complicated but has very interesting spice and herbal notes which along with mellow smoothness make it a must-try. 40% abv.

Egan’s 10 yr old Single Malt | 9.57 An old whiskey brand recently revived. The 10 year old has been aged for a minimum of 10 years in ex-bourbon American oak casks. Tropical flavours of coconut, pineapple, mango, banana with oak and malt on a long finish. 47% abv.

The Sexton Single Malt | 5.87 *Sommelier Pick Made from 100% Irish malted barley, triple distilled in copper pot stills and aged in Oloroso Sherry casks, an unusual treatment for a young single malt. Rich aromas of nuts, chocolate and spice. Flavours of rich dried fruit – prunes, apricots and a honeyed and woody finish. Very balanced. 40% abv.

Mad March Hare Poitin | 7.40 *Sommelier Pick Pronounced “put-cheen,” poitin is Ireland’s oldest spirit, pre dating even whiskey. Made using only malted barley and triple distilled. Made illegal in 1661 and re-legalized in 1997, this unaged spirit is unique in both flavour and heritage. Clean, crisp with notes of lime and lemon with a malty finish.

10 11 Scotland

Scotland is the second historical home of whisky – here it is spelled without the “e”. Scotland has six whisky regions, Highlands, Speyside, Lowlands, Islay, Campbeltown and the Islands. Though not technically recognized by the Scottish Whisky Society as a region, The Islands have a distinct character and are included as a separate entity here. Scotland is best known for single malt whiskies. These are spirits made at a single distillery with three ingredients - water, yeast and malted barley. “Peated” malts are also a defining character of some Scotch whiskies. The flavours and aromas of peat smoke occur when peat fires are used during the drying of the malt. The amount of peat is measured in parts per million (ppm). This does not necessarily indicate the strength of the taste of peat however; like any good alcohol it’s all about the balance of flavour, intensity and alcohol.

Blended Whiskies

Although single malts are held in high esteem by connoisseurs, the majority of Scotch whiskies are blends. Like all Scotch it must be aged for a minimum of three years and a day in oak casks. It is usually made from , but most producers include some for added character. Johnnie Walker was at the forefront of blended whiskies and is the largest whisky producer in the world.

Chivas Regal 12 yr old | 6.31 A refined blended whiskey, world famous and deservedly so. A spicy, beautifully balanced blend with a complex nose and a very smooth palate. A consistent award-winning dram. 40% abv. 11 12

Johnnie Walker Red Label | 5.43 First created in 1909, a back bar classic perfect for any quality whisky cocktail. A surprisingly rich aromatic nose, cedar, butterscotch and a light smoky tail. 40% abv.

Johnnie Walker Black Label 12 yr old | 8.04 A well put together blend of about 40 whiskies. Rich and full with wood smoke, dry spice, creamy toffee and a long fruity finish. 40% abv

Johnny Walker Blue Label | 22 The rarest whisky in the brand, only 1 in 10,000 casks makes the grade. Rich and slightly smoky with a very balanced palate. Hints of grass, a shot of maltiness and a finish of dried fruit, spice and honey. Classic and timeless. 40% abv.

White Walker by Johnny Walker | 6.09 Just for fun. Inspired by “Game of Thrones” this whisky features malts from Clynelish – one of the most northerly distilleries. It has a soft palate of fruit pastilles and dried apricot, with baking spices and a decent finish. 41.7% abv

12 13 Speyside

Speyside is home to the largest number of distilleries in Scotland. Whiskies here display a wide range of styles but is best known for sweet single malts with little to no peat. This makes Speyside a great place to start whisky exploration.

Dalwhinnie 15 yr old | 10 One of the most famous of the Speyside Distilleries. Simple flavours, crisp and clean. Aromatic with toffee, fruit salad, and blossoms. Gentle smoke, walnuts honey and a long finish. 43%abv

Glen Grant 12 yr old | 7.18 Apple pie in a glass, with apple and orange, golden barley, pastry and a touch of almond on the finish. 43%abv

Glenlivet 12 yr old | 6.31 Now being replaced by the Glenlivet Founder’s Reserve, this is one of the best-selling malts in the world. A classic entry level Speyside with apples, almonds, creamy vanilla and honey. 40% abv

13 14 A small distillery with a long history and a fairly small capacity but known for a wide variety of styles.

Benromach Peat Smoke | 9.14 Moderately high peat. Smoky intense single malt with rich perfumed fruit and wood shavings and a herbal finish. 46% abv. 47ppm peat.

Benromach 15 yr old | 11.74 Aged in bourbon & sherry casks. Big spice notes, ginger and cinnamon balanced by juicy plum and clementine fruit. 43% abv.

Benromach Triple Distilled | 8.27 Not common in Scotland, triple distilling lightens esters and aromatics resulting in a lighter, more delicate spirit with high alcohol. 50% abv.

Benromach Wood Finish Cissac | 8.48 A lightly peated single malt aged first in bourbon casks then finished in Chateau Cissac Bordeaux wine casks for two years. 45% abv.

Glenfarclas 25 yr old | 19.57 Less pronounced than the 15 yr old but with even greater complexity. Tangy and clean with creamy barley and hints of gingerbread and chocolate, a silky texture and one of the longest finishes in whisky. 43% abv

16 17 Islay

Usually associated with world famous peaty single malt whiskies, Islay also produces some excellent lower peated malts and interesting experimental whiskies.

Bowmore 12 yr old | 6.96 Gentle peat. Round palate with vanilla, smoke, perfume and a sweet oily character. Minerality of a coastal nature. 40% abv

Lagavulin 16 yr old | 13.92 A benchmark Islay malt. Thick and rich palate, malt and sherry with a long spicy finish. A consistent gold medal winner. 43% abv. Peat 35ppm.

Laphroaig Quarter Cask | 8.04 Aged in smaller (quarter sized) casks, therefore reducing the aging time to about 6 years. An explosion of sweetness, rum and raisin with a medium finish of fruit and cigar smoke. 48% abv. Peat 40pmp

Ardbeg Uigeadail | 13.05 *Sommelier Pick Pronounce “Oog-a-dal”. Thoroughly complex with spice, salt, sweet and savory all mixed in together. An amazingly balanced and complex whiskey.

Once the most prolific whisky region in Scotland, now reduced to only three distilleries. Campbeltown malts are identified by their coastal salty, mineral character.

Springbank 15 yr old | 14.79 A complex nose with tropical fruit, dried leather and old ropes, with hints of caramel. Full rich palate of exotic fruit and a hint of spice. A long, warm finish. 46% abv.

Technically a part of the Highlands and not officially recognized as a distinct region, the Islands do have unique personalities which shine in their whiskies. Most show a distinct minerality due to the proximity to the sea. The following shows a diverse collection of styles within this region.

Scapa Glansa (Orkney) | 8.27 *Sommelier Pick A gentle introduction to the world of peated whiskey. Aged in casks that formerly held peated whisky. Soft, fruity with a very long smoky finish.

Highland Park 12 yr old Viking Honour (Orkney) | 8.27 Fresh, clean and aromatic. Full bodied and deep with grilled oranges, green tea and subtle flowers. Long spicy, woody finish. 40% abv. Peat 20ppm

Talisker 10 yr old (Isle of Skye) | 9.35 The only remaining distillery on Skye. A consistent gold medal winner. Fresh and fragrant combination of peat and pepper, fresh orchard fruit and a briny dryness. Long finish with beautiful balance. Peat 22ppm. 45.8% abv.

20 21 Highlands

Geographically vast, the Highlands produce a wide variety of styles of whisky. Styles are often but not always accurately, placed by sub regions. From light and grassy to rich and smoked, there is a whiskey here for everyone.

Glenmorangie Distillery Pioneers in the field of wood finishes. The lineup below is an excellent example of flavours, colours and nuances that can extracted by alternative cask . Glenmorangie 10 yr | 6.96 Aptly named “The Original,” this is a classic malt – fruity, creamy and a long, gentle finish. 40% abv.

Glenmorangie Quinta Ruban | 7.39 Sweet and thick, aged in Port pipes from the Douro. Juicy fruit, berries and a distinct sweetness. 46% abv.

Glenmorangie Lasanta 12 yr old | 7.39 Finished on Oloroso Sherry casks, rich and creamy with dark chocolate, dried fruit and honey. 43% abv.

21 22 A very old distillery (at least 1775) it was closed for the early part of the 20th Century. Formerly known for its use in blended whiskey, now producing its own independent brands.

Glenturret Peated Edition | 9.14 In the past, peated editions of Glenturret were used as part of The Famous Grouse blend of whisky. Now its own bottling at 43% abv.

Glenturret Sherry Edition | 9.14 Aged in both American oak and Spanish oak Sherry casks. Sweet and comforting with touches of honey, vanilla and spice. 43% abv.

Unlike the rest of Scotland, triple distillation is common in the Lowlands, resulting in lighter, floral blends often referred to as the “Lowland Ladies.”

Auchentoshan Distillery Most Scottish distilleries are rural. Auchentoshan is located in . It’s branding is modern and urban and none of their current range is peated.

Auchentoshan 18 yr old | 13.05 * Sommelier Pick Superbly rich with toasty vanilla from American oak along with dark nuts and a malty floral finish. 43% abv.

Auchentoshan Bartenders Edition Malt No. 2 | 7.83 If whisky were a cocktail… Created by 12 bartenders from five countries using whiskies from 5 decades and a plethora of cask types. A delicate palate of cherry blossom and brioche with zesty spice and a long, warm finish. 47% abv.

Auchentoshan 12 yr old | 8.27 This has replaced the former 10 year old as a core brand of the distillery. It boasts of cereal, exotic fruit along with vanilla and some tannin. A very dry and long finish. Very drinkable. 40% abv.

Canadian whiskies are often referred to as rye whiskies, barley and corn are used as well as rye and a whiskey does not have to contain rye to be called a Canadian rye whiskey. The spirit must be aged for a minimum of three years. Canada is also producing single malt whiskies, most notably here in Nova Scotia at the Glen Breton Distillery in Cape Breton.

Crown Royal Blended Canadian | 5.65 Probably the most famous of the Canadian whiskies. A blend of over 50 different whiskies, first created in 1939.

Canadian Club Canadian Whiskey | 5.22 The first whiskey produced by Hiram Walker. A giant of Canadian whiskey, aged for six years in oak to achieve the smoothest possible flavour.

Caribou Crossing Single Barrel | 9.35 The first produced in Canada since the 19th Century. Creamy vanilla, a smack of rye spice, bursts of citrus and fresh cut wood and an orange tang. 40% abv.

Forty Creek Unity | 8.27 A blend of Canadian whiskey, matured with high mocha staves, then blended with a 10 year old for smoothness. As a finishing touch a small amount of Portugese style Starboard wine that has been aged for 15 years in previously used Forty Creek . 40% abv.

Glenora Glen Breton Rare Single Malt | 10 The first produced in North America. Aged 10 years in American oak. Orange, spice, vanilla with fresh fruit, chocolate and hazelnut, with a long smooth finish. 43% abv.

Pacific Rim Flight: .5 oz of each: Crown Royal Blended Canadian, Hibiki Japanese Harmony, Amador Double Barrel Bourbon | 15

25 26 Japan

Japanese whiskies are crafted in the Scottish style, usually between a Lowland and a Speyside. Delicate and perfumed with a honeyed sweetness and occasionally peated in an Islay-ish style.

Hibiki Japanese Harmony | 11.96 Made with malt whiskies from three different Japanese distilleries and drawn from five different cask types. A well balanced elegant whisky with aromas of honey and orange with some herbaceous notes and warm oak spice.

Suntory Toki Whisky | 6.96 Soft orchard fruits with thyme and honey. Toasted almonds and vanilla oak. A blend from the three same distilleries as Hibiki but with a higher concentration of Hakashu single malt.

26 27 USA

American whiskies are best known for character associated with toastiness, spice and vanilla sweetness. Much of this comes from the preference of new charred oak in production. Bourbon is the most popular American whisky. It can be made anywhere in the USA (not just Kentucky) and must be made of at least 51% corn. It must be aged in new charred oak barrels. There is no minimum age requirement. The spirit cannot be distilled above 80% abv and it must be bottled at a minimum of 40% abv. Tennessee whiskies are basically bourbons which have undergone the “Lincoln Country process,” a method of filtering the spirit through sugar maple charcoal. Rye whiskies in the USA feature mainly rye (unlike Canadian rye whisky) which results in a whisky with pronounced spice and complexity.

Sazerac Straight Rye Whiskey | 5.65 An excellent spicy rye whisky from Buffalo Trace. Sweet with spice and ginger. A thick palate of Seville orange and a spicy, oily finish. 45% abv.

Jim Beam Kentucky Straight Bourbon | 5.65 undergoes distillation at lower temperatures and is distilled to no more than 62.5%. It is aged for four years and contains a high percentage of rye in the mashbill. It has good body with toasty oak, vanilla and spice with some resin notes. 40%abv

Jack Daniel’s | 5.65 Made with 80% corn and distilled with a bit of “starter mash.” The starter mash is fermented for a full six days before being single distilled. Light on the nose with plenty of sweetness. Dry spice and oily smoke make this spirit very distinctive. Caramel, cream, cereal and sweet spice on the finish.

Amador Double Barrel Bourbon | 7.40 A Kentucky made bourbon aged in new oak charred barrels but uniquely finished in Napa Valley wine barrels. A spicy and bold whisky with noticeable tannin. Vanilla, raisin and an interesting florality. A very well integrated and balanced spirit with studied complexity. 43.5% abv.

House Lannister 9 yr old | 11.96 Pay your debts by gifting a shot of this delightful whisky. Sweet smoke explodes on the nose and the distinct brine could only be from King’s Landing. Banana, marshmallow and vanilla and a salt caramel menthol finish. 46% abv.

House Tully Singleton Glendullen Reserve | 6.96 From Speyside’s Dufftown on the banks of the River Fiddich known as the Riverlands. (not Riverrun). Pronounced vanilla from 100% ex-bourbon casks followed by clove spices. Orchard apple, cinnamom, with a cereal and vanilla cheesecake finish. 40% abv.

House Stark Dalwhinnie Winter’s Frost | 11.53 The gentleness of Grey Wind after a good feed, this whisky has a rich honey palate with figs, a malty center and a rich fruit cake finish. It also has the characteristic Dalwhinnie floral heather nose. 43% abv.

House Targaryan Cardhu Gold | 9.14 Don’t worry about the dragons, this whisky has a generous, easy going nature that will sooth any savage beast. Biscuity oak, a bit of cinnamon along with toffee and apple notes with a gentle oak and milk chocolate finish.

White Walker by Johnny Walker | 6.31 Just for fun. Inspired by “Game of Thrones” this whisky features malts from Clynelish – one of the most northerly distilleries. It has a soft palate of fruit pastilles and dried apricot, with baking spices and a decent finish. 41.7% abv
