Perceptions of the Authenticity of Food: a Study of Residents in Dorset (UK) Perceptions of the authenticity of food: a study of residents in Dorset (UK) Sean Christopher Beer A thesis submitted in partial fulfilment of the requirements of Bournemouth University for the Degree of Doctor of Philosophy October 2015 Bournemouth University Abstract In this thesis I critically explore the relationship between authenticity, the individual, society and the food consumed within that society for a group of residents in Dorset in the United Kingdom. The authenticity of food impacts on our understandings of the economic, social, political and environmental contexts of food and is worthy of research. As such I focused on my participants’ perceptions of the authenticity of food as something a priori; as it was perceived before other considerations, in ordered to get a primary understanding of the subject. I have positioned myself as a reflexive explorer / researcher who views the world from the position of interpretive constructionism derived from the ideas of postmodernism. I have utilized a qualitative research strategy; phenomenology and more specifically Interpretative Phenomenological Analysis (IPA). My explanation of the methodology is accompanied by a description of the philosophical underpinning to the work with specific reference to Husserl, Heidegger, Gadamer, Levinas and Derrida. Data were collected using focus groups based around a meal. When I asked my focus group participants about their perspectives on the nature of the authenticity of food, they described understandings that were vested in four key areas: Family and friends; Saucing: cooking and flavour; Sourcing: where does it come from? and; Interaction with the distinctly other (people that were not friends and family). In terms of the discussion of family and friends, much of this was to do with their experiences of growing up and their relationships with their parents and grandparents. In analysis, ideas such as time, tradition, heritage and gender came to the fore. When looking at saucing, the focus was on the process of cooking and eating, and memories of flavour and aroma. Sourcing highlighted feelings of localness and led to the development of concepts relating to connectedness to those that produce the food and connection to the food itself. There were also concerns as to the provenance of food and feelings of trust and mistrust. Finally, in looking at the distinctly other, as opposed to kith and kin, participants related experiences of trust and vulnerability, authority and independence, and inclusion and exclusion. These ideas informed a discussion on the nature of hospitality in the context of the authenticity of food. In my conclusions I describe how I found my participants’ perceptions of authentic food to be constructed in a place between them as individuals and the Other and changed over time. Perceptions of authenticity were fluid and playful.     Finnan Haddock Kedgeree Finnan Haddock originated from around Aberdeen on the east coast of Scotland. Heavily smoked with peat – leaving the skin darkened and the flesh a distinct lemon colour. Finnan haddock is traditionally used in Cullen Skink – a thick soup of Finnan Haddock, potatoes and onions cooked in fish stock. For the Rice 2 shallots, finely diced 100g butter 2 tsp Madrass curry powder 2 tsp turmeric 350g wild rice 850ml chicken stock sea salt and freshly ground pepper For the Dressing 2 shallots, finely dices 50g butter 2 tsp curry powder (pinch of saffron strands, optional) 100ml white wine vinegar 300ml crème fraiche sea salt and freshly ground pepper For the Finnan Haddock and Presentation bits 500ml full fat milk 2 fillets of Finnan Haddock or undyed smoked haddock, Arbroath smokie, smoked mackerel or kipper fillets 8 large free range eggs, medium boiled (about 5 minutes) until the yolk has only just set, shelled and quartered 8 spring onions, finely sliced hand full chives, finely chopped Braise the Rice Put an ovenproof casserole dish on the hob, sweat the shallot in some butter until soft, add the curry powder and turmeric. Cook the spices for a few seconds then add the rice. Stir the mixture until all the rice grains are well coated, pour over the hot chicken stock and bring to a simmer. Place the lid on and put in a hot oven for around 40 minutes or until all the liquid has been absorbed (wild rice takes a little longer to braise than regular long grain or basmati).

By folding into an aberrant shape, the normal prion turns into a rogue agent. It then co-opts other normal prions to become rogue prions. Prions have been held responsible for a number of degenerative brain diseases, including scrapie (a fatal disease of sheep and goats), mad cow disease, Creutzfeldt-Jacob disease, fatal familial insomnia, kuru, an unusual form of hereditary dementia known as Gertsmann-Straeussler-Scheinker disease, chronic wasting disease in deer and elk, bovine spongiform encephalopathy (BSE, commonly known as “mad-cow” disease), exotic ungulate spongiform encephalopathy, Transmissible Mink Encephalopathy (TME), and feline spongiform encephalopathy, albino tigers, pumas, and cheetahs. Currently, definite diagnosis of prion diseases is still considered to be possible only after histopathological examination of biopsied or autopsied brain material. There are three related ideas … imagination, which is the process of bringing to mind things that are not present to our senses; creativity, which is the process of developing original ideas that have value, and innovation, which is the process of putting new ideas into practice’ (Robinson 2011: 3). This paper looks at cooking in terms of these three elements – imagination, communication and creativity – during World War II and immediately after, when food shortages, rationing and coupons presented limited food options, and into the post-war period when home cookery, newly released from domestic drudgery, rapidly became a creative art. It argues that creative cooking relies on recipes and how they are written and presented, as well as the cook’s skill and creative intuition. Biographical note: Jillian (Jill) Adams (B Arts (Hons), Dip Ed, MA) is a qualified teacher, a graduate of Cordon Bleu École de Cuisine in Paris, has been the Training and Development Manager of Coffee Academy, a joint initiative of Douwe Egberts Australia and the William Angliss Institute, and is president of the Oral History Association of Australia.
