It gives you hints of ripe fruits and vanilla on the palate with a long finish Writers Tears Pot Still 14 A unique pot still with traditional spiced ginger and green apple flavours hidden in honey milk chocolate Irish Malt Whiskies Glendalough Distillery, County Wicklow Glendalough 13yo Single Malt 16 Jumps to the front with an intense vanilla fudge, luxurious sweetness and almost rock candy mixed with touches of fruit - lemon citrus, peach and dried apricot County Cork Hyde ‘Sherry Finish’ Single Malt 18 Aged for 10 years in flame charred bourbon casks and then aged a further 10 months is oloroso sherry casks this whiskey is wonderfully smooth yet complex with notes of caramel, apricot and honey. Delightfully peachy on the nose with a rich and oaky finish Hyde ‘Rum Finish’ Single Malt 22 Like the sherry finish, this rich and spicy whiskey is first aged for 10 years in flame charred bourbon casks and then spends a further 8 months in charred Caribbean rum casks. Premium dark Caribbean rum casks are hard to find so this whiskey is special. It has notes of sweet rum, vanilla, apple and mango in the background. One to try and enjoy Hyde ‘The Aras Cask 1916’ Single Grain 12 This whiskey is one of a kind, a celebration of the Irish Rebellion of 1916. Aged for 6 years, it is a pure grain whiskey that is smooth with a full and rich taste. Western Highlands Oban 14yo 15 A well known slightly smoky, dry palate is enhanced with a rich body of autumn fruits and spice Scottish Whiskies Speyside Glenfiddich 12yo ‘Valley of the Deer’ 12 An elegantly rounded fresh whisky with subtle oak influences and notes of pear and peat Glenfiddich 18yo 19 Rich aromas of oak and orchard fruits with a warm finish of spice and apples The Balvenie 12yo ‘Double Wood’ 16 Traditional vanilla and honey nose backed by cinnamon spiciness, nutty sweetness and a delicate layer of sherry Cragganmore Single Malt 15 This Speyside malt has beautiful sweetish notes with a smokey malt on the finish Monkey Shoulder 11 Ripe on the nose with vanilla custard and a honeyed centre to taste Singleton 12yo 12 Palate of orange zest spiciness and a malty core of nuts, oak and toffee Macallan Amber 16 The second tier in the 1824 series of unaged single malts Macallan Ruby 28 Olorosso sherry casks give this a bold colour and a rich flavour that can’t be beat. Aultmore 12yo 14 A refreshing dram, with plenty of vanilla, honey and citrus, alongside a touch of grassiness Craigellachie 13yo 14 A lot of dynamic fruit notes with a distinct smokiness through the middle Isle of Skye Talisker 10yo 13 Nose of maritime saltiness and peat smoke with an explosive pepper and smoke finish Talisker Port Ruighe 15 Finished in port casks, it has taken on added sweetness and characteristics such as plum and chocolate Talisker 18yo 22 Voted ‘Worlds Best Single Malt Whisky 2007’ On the nose, this whisky is clean

    Addendum regarding: The 2016 Certified Specialist of Spirits Study Guide, as published by the Society of Wine Educators Note: This document outlines the substantive changes to the 2016 CSS Study Guide as compared to the 2015 version of the Study Guide. All page numbers reference the 2015 version. These items will not appear on Exams based on the 2015 SG. Page 9 – the following was added to the information under the “Fermentation” heading: Fermentation may also create small amounts of other alcohols, such as methanol (methyl alcohol) and a range of compounds collectively referred to as fusel oils which contain small amounts of amyl alcohol, n-propyl, and isobutyl alcohols. Page 17 – the following information was added to the section on Filtration: Many spirits undergo a process known as chill filtration. Chill filtration removes components common to many spirits that can cause a spirit to appear hazy or dull. Matured spirits in particular are likely to require chill filtration. To carry out this process, the spirit is chilled, which causes a haze to form that can then be removed. With all types of filtration, care must be taken to avoid filtering out desirable components that contribute to body and flavor along with those that are unwanted.
