° Production = 400,000 - 500,000 cases per jaar/1970’s, 12 million cases rond 1900 ° takeover Irish Distillers by Pernod Ricard 1988 – inkrimpen Irish whiskeys cf Jameson . ° Sinds 1990’s Irish whiskey snelste groeier wereldwijd. ° Production van 4.4 million cases in 2008 tot 6.8 million in 2013 ° Vooruitzicht 12 million cases by 2018 Huidige distilleerderijen ° Cooley Distillery 1987 inclusief Kilbeggan Distillery (est. 2007, owned by Beam Suntory since 2011) ° Dingle Distillery (est. 2012) – has not yet had time to age its spirits for sale as whiskey ° The Echlinville Distillery (est. 2013) - Distills Dunvilles . The newer term was brought into use when the United States Tax and Trade Bureau objected to the use of the term "pure" in the marketing name for such a product.[ Pot Still (2) One Irish distillery , the New Midleton Distillery owned by the Irish Distillers unit of Pernod-Ricard , currently uses the term for marketing whiskey brands such as Redbreast and Green Spot . Two others, Cooley and Kilbeggan , both owned by Beam Inc. , make a single pot still spirit that is too young to qualify as "whiskey" and has only been sold as newmake spirit or un-aged poitín .The fourth Irish distillery (the Old Bushmills Distillery ) does not make a mixed-mash pot still product. The term should not be confused with the theoretical concept of whiskey produced solely in a pot still (which would also apply to single malt whiskey as well as some examples of pot still bourbon and rye whiskey ). Potcheen - Poitin Poitín (Irish pronunciation: [ˈpˠot ʲiːn]), anglicized as potcheen or poteen (/ˈpʊtʃiːn/ PUUT -cheen ), niet te verwarren met Moonshine (USA) Gedistilleerd in een kleine pot still ‘pota’, kater in Iers is “Poit’ Gemaakt van granen, suikerbieten, molasse, aardappelen Vanaf 2008 legaal karakter, nu typisch Iers product Green Spot, OB, 12 y, Chateau-Léoville – Barton, Mitchell and Son, 46 % ° Mitchell & Son wine merchants 1805 ° Late 19de eeuw, Jameson casks ° Bekend als "Pat whiskey", “labels carried the logo of a man on a green background.” ° The Mitchells hadden een range aan ‘Spot’ brand names. Also, single malt whiskeys were generally distilled twice, whereas single pot still whiskeys were generally distilled three times. • Dr. William Moran
Dr. William Moran Dr. William Moran is remembered by the people of Tullamore with affection and respect. To many parishioners he was seen as a character and there are few of the older parishioners who have not some humorous story to relate concerning him. Dr. Moran came to Tullamore from Trim in October 1949 where he had been parish priest. He was a native of Castletowngeoghegan near Tullamore and was educated at St. Finian’s (Navan) and Maynooth College where he was ordained in 1910. He received a doctorate in divinity in 1913 and after four years as a curate in Mullingar and Collins town he was appointed professor of dogmatic theology in Maynooth in 1917. In 1932 he became prefect of the Dunboyne establishment and librarian in 1932. From there he moved to Trim and in 1949 to Tullamore. Although a competent parish administrator who gave his full support to the local schools building programme of the 1950s, Dr. Moran was happiest among his books and produced a number of books and pamphlets on religious topics including his well known catechism. He also published a number of historical articles including this booklet on the history of Tullamore in 1962. But if Dr. Moran was interested in the past he was also a forward thinking practical man. He seemed to take a special delight in running the annual Corpus Christi procession from the organ gallery of the church with the ‘Tannoy’ system he purchased in 1951. With this system Dr. Moran could broadcast a Maynooth choir for the procession together with a taped recording of his own sermon while he walked around the church and listened, presumably, admiringly, to the whole event.

Unsurprisingly, it uncovers a tightly knit, interdependent relationship. Ireland’s tourism sector is a fundamental pillar of the economy. In 2016, international tourism spend exceeded €8.3 billion. The Government’s ambitious 2015 tourism strategy, “People, Place and Policy: Growing Tourism to 2025”, expects to increase overseas visitor numbers to 10 million per annum and increase sector employment by 50,000. Holding up this pillar is a sturdy base comprising many different supporting industries, the most important being the drinks and hospitality industry. Across the country, 92,000 people are employed in public houses, restaurants, hotels, off-licences, breweries, distilleries and other distributors, producers and wholesalers.

Addendum regarding: The 2016 Certified Specialist of Spirits Study Guide, as published by the Society of Wine Educators Note: This document outlines the substantive changes to the 2016 CSS Study Guide as compared to the 2015 version of the Study Guide. All page numbers reference the 2015 version. These items will not appear on Exams based on the 2015 SG. Page 9 – the following was added to the information under the “Fermentation” heading: Fermentation may also create small amounts of other alcohols, such as methanol (methyl alcohol) and a range of compounds collectively referred to as fusel oils which contain small amounts of amyl alcohol, n-propyl, and isobutyl alcohols. Page 17 – the following information was added to the section on Filtration: Many spirits undergo a process known as chill filtration. Chill filtration removes components common to many spirits that can cause a spirit to appear hazy or dull. Matured spirits in particular are likely to require chill filtration. To carry out this process, the spirit is chilled, which causes a haze to form that can then be removed. With all types of filtration, care must be taken to avoid filtering out desirable components that contribute to body and flavor along with those that are unwanted. Page 18 – the following information was added under the “bottling strength” heading: Most spirits are bottled at 37 to 43% alcohol by volume.
