Although the exact origins of the brown stuff can be debated for an eternity, one thing we can all agree on is that it’s delicious! With the practice of distilling water being traced way back to ancient China, the process soon found its way to the Middle East for the production of perfume. It was the catholic monks we can thank for bringing it back to Europe where any beer that was not drank in time and about to go off was distilled in order to avoid wastage. This clear spirit was enjoyed straight off the still and was a much stronger and livelier drop compared to what will be in your glass this fine evening! It was the mighty cask that soon came about to tame this fiery spirit. For a minimum time of 3 years (usually much longer) the spirit mingles with the cask until it can be officially christened whisk(e)y. 3 INTRODUCTION With whisk(e)y today being more popular than it has ever been, there is no better time to enjoy it. Gone are the days where the older it is the better; we are now wise to the fact that there are numerous qualities that equate to what makes a good nip of whiskey. Where was it made? What was it made with? How strong is it? What cask was it matured in? Do I need ice with this one? Am I having a good/bad day?... and so on. With our joint belief at 1806 being that ‘Whisk(e)y is for drinking’, please enjoy our selection, as we celebrate tradition and what’s to come for the water of life. You’re in good hands here! *Spelling with or without the ‘e’ is a common debate we at 1806 deem pointless. As at 30 June 2021 • At 30 June 2021, TSI had maturing spirits (Whisky & Agave) with a Net Sales Value of $272 million, an increase of 521% YOY and 154% above Prospectus. • TSI’s total spirit inventory increased to 3.5 million litres in FY21, an increase of 410% on 30 June 2020. • In FY21 2H, TSI achieved an Average Net Sales Value per litre for NED Whisky of $71.40 (an increase of 23% from FY21 1H to FY21 2H). TSI engaged PwC to perform certain procedures on the calculations and methodology to derive the 30 June 2021 whisky Net Sales Value per litre calculation. Forecast • With planned production considered: • By 30 June 2022, TSI forecasts that Net Sales Value of maturing spirits will increase to $418 million. • TSI will have a total of 6.6 million litres of mature spirits (Whisky & Agave) available for sale within the next five years (prior to 30 June 2026) with a Net Sales Value of $500 million. • Net Sales Value over a five year period is an important metric for TSI. It provides an indication of timeframes in which inventory can be expected to be available for sale.     ©2019 scotch whisky association DISCOVER THE WORLD OF SCOTCH WHISKY Many countries produce whisky, but Scotch Whisky can only be made in Scotland and by definition must be distilled and matured in Scotland for a minimum of 3 years. Scotch Whisky has been made for more than 500 years and uses just a few natural raw materials - water, cereals and yeast. Scotland is home to over 130 malt and grain distilleries, making it the greatest MAP OF concentration of whisky producers in the world. Many of the Scotch Whisky distilleries featured on this map bottle some of their production for sale as Single Malt (i.e. the product of one distillery) or Single Grain Whisky. HIGHLAND MALT The Highland region is geographically the largest Scotch Whisky SCOTCH producing region.     Scotch Whiskey The Gaelic "usquebaugh", meaning "Water of Life", phonetically became "usky" and then "whisky" in English. However it is known, Scotch whisky, Scotch or Whisky (as opposed to whiskey), it has captivated a global market. Scotland has internationally protected the term "Scotch". For a whisky to be labeled Scotch it has to be produced in Scotland. If it is to be called Scotch, it cannot be produced in England, Wales, Ireland, America or anywhere else. Excellent whiskies are made by similar methods in other countries, notably Japan, but they cannot be called Scotches. They are most often referred to as "whiskey". While they might be splendid whiskies, they do not captivate the tastes of Scotland. "Eight bolls of malt to Friar John Cor wherewith to make aqua vitae" The entry above appeared in the Exchequer Rolls as long ago as 1494 and appears to be the earliest documented record of distilling in Scotland. This was sufficient to produce almost 1500 bottles, and it becomes clear that distilling was already a well-established practice. Legend would have it that St Patrick introduced distilling to Ireland in the fifth century AD and that the secrets traveled with the Dalriadic Scots when they arrived in Kintyre around AD500. St Patrick acquired the knowledge in Spain and France, countries that might have known the art of distilling at that time. The distilling process was originally applied to perfume, then to wine, and finally adapted to fermented mashes of cereals in countries where grapes were not plentiful. The spirit was universally termed aqua vitae ('water of life') and was commonly made in monasteries, and chiefly used for medicinal purposes, being prescribed for the preservation of health, the prolongation of life, and for the relief of colic, palsy and even smallpox.
