Canton of Glarus

The includes the to the and the Linthebene west of the Linth to and the Kerenzerberg. Variation in height characterize the image of the Glarus region: from the flat valley floor at 414 meters, the terrain rises to over 3600 meters (Tödi, 3614 m above sea level). These contrasts are reflected in the climate: Within a few kilometers it changes from a mild climate on Lake Walensee with its southern flora to a cool glaciated mountain peaks altitude. But if the Föhn, (a warm south wind) blows through the valley, temperature increases rapidly, even in winter. The Sernf or Kleintal is the only side valley that offers space for the rural settlements of Engi, Matt and Elm. Politically, the canton of Glarus is divided into three municipalities, Glarus North, Glarus and Glarus South.

City of Glarus

In the heart of Glarus, the capital of the canton of the same name, you will find many shops and a weekly market (Wednesday and Saturday), which has local specialties to offer.

The Klöntal

The lake Klöntal lies at a height of 848 meters above sea level embedded in a deeply carved side valley. The Glärnisch (2904 m above sea level) rises to the south of the lake and Dejenstogg to the north (2012 m above sea level). Since the beginning of the 20th century, the lake Klöntal has been dammed up on its east side by a small dam and used for energy generation. With a length of about five kilometers and an average width of more than 300 meters, it is one of the largest lakes in Glarus. The reservoir is fed by the river Klön. The Löntsch in turn flows down the lake and flows into the Linth at .

Culinary Glarus

The canton of Glarus is rich in culinary delights. Whether mild or recent alp cheese; the Kalberwurst, a white veal sausage or, for dessert, the legendary Glarner Pastete, popularly known as “Öpfelbeggeli”, they all deserve to be tasted. In addition rounding it off with a beer from the local brewery Adler.

Glarner Schabziger

The most famous product is undoubtedly the Glarner Schabziger, a low-fat cheese flavored with blue clover (Trigonella Caerulea). Known for over 1000 years, the citizens of Glarus approved a law in 1463 that obliged all Ziger manufacturers to produce their product according to quality specifications and to mark it with a stamp of origin. The first registered trademark was born. The fat-free cheese is available as a "Stöggli" or as a ZIBU, a ready-to- spread paste. The "Stöggli" is grated with a fine grater and can be used as a "spice" to season a wide variety of dishes. The “Zigerbrüüt” is especially popular, it’s a piece of bread spread with ZIBU paste and decorated with various fruits. The main dish is “Ziger-Höreli”, pasta flavored with Ziger.

Zigerstöggli ZIBU Zigerbrüüt

Alpine cheese

Healthy animals, clean air and sustainable use mean that well over a hundred different herbs and grasses flourish on the alpine pastures. This rich vegetation contains many healthy nutrients that the grazing cows absorb with the feed and thus get into the milk. The fresh, tasty raw milk is processed into cheese on the alp while still warm after milking the cow. Only cheese made from alpine milk is allowed to carry the label “alp cheese” !!!

Why alpine cheese? Various studies have shown that alpine cheese contains higher levels of omega-3 fatty acids than mountain cheese or cheese produced in low lands. Alp cheese is therefore a real added value in a balanced diet! Young alp cheese is mild, with age it becomes more spicy.

Ask about Glarus Alpine cheese (Alpkäse) and enjoy a piece of nature.

Kalberwurst

Punctual to the Glarner Landsgemeinde, when the voters meet on the first weekend in May to advise and coordinate political and property business on the Landsgemeindeplatz in Glarus, it’s Kalberwurst time. The Kalberwurst is a white cooked sausage made from veal, bacon, milk, egg, white bread and spices. The sausage is served with a white onion sauce, mashed potatoes, dried plums and the Landsgemeinde Menu is ready. The Kalberwurst Menu is available all year round in many restaurants and the sausage can also be bought in any butcher's shop. It tastes just as good from the grill.

14

Cervelat, the Swiss national sausage

Cervelat, the sausage made from beef, pork and bacon is brewed at approx. 70 ° C and is probably the most eaten sausage in Switzerland. Whether roasted outdoors on a wooden stick, at home from the grill, as a sausage salad on a vinaigrette, cold from your backpack on a hike (with or without mustard), filled with cheese and wrapped in bacon and then fried (popularly known as “Workers Cordon Bleu”) or cut into slices or cubes in a portion of pasta.

Whoever did not eat cervelat, was not in Switzerland

Glarner Pastete

The Glarner Pastete, popularly called Öpfelbeggli, is a puff pastry that is half filled with plum and almond filling. The smaller versions are usually either filled with almond “süsses (sweet) Beggeli” or with a plum filling “Suurs (sour) Beggeli”. They are available in every bakery.

Gössi Glace

Not as long a tradition as the Schabziger, but no less known in Glarus, the ice cream (called Glace) from the local manufacturer Gössi has blossomed from an insider tip to a best seller in just a few years. Made from pure mountain milk and cream from local cows, the Gössi Glace is available in many flavors. A culinary delight that you have to try.

Brauerei Adler

Family-owned since 1828, the finest beers are brewed in the Glarus region of Schwanden. Whether light, dark or seasonal special beers, they all have one thing in common: they taste excellent and are a must. By the way, those who order draft beer in the restaurant are best asked for “eine Stange” (3 dl), “ein Grosses” or “ein Kübel” (4 dl).

Glarner Souvenir

Typical souvenirs from the Glarus are, in addition to the culinary specialties, cups, scarfs, bath towels or napkins with the typical motif used in the past which reminds of the blooming period of the Glarner textile industry.
