  • How to Taste Wine
HOW TO TASTE WINE Presented by Presque Isle Wine Cellars Kris Kane (Winemaker) www.piwine.com Overview • Discuss why and how to taste wine – Look – Smell – Taste • Go over a tasting wheel • Look, Smell, Taste, and discuss a few wines Tasting wine • When it comes to tasting wine consider wine in three stages – Look at the wine – Smell the wine – Finally taste the wine • After tasting it is nice to have a notebook to record your thoughts about the wine How to Look • Take lighting and background into consideration • Begin by not pouring the glass to full • Hold the glass at the base and tip away from you at a 45 degree angle • Look down on it • Now what are we looking for? What we are looking for • White wines color not as important but can tell us some things – First look to see if wine is clean and bright – Make sure there is no haze or cloudiness • Throws out red flag possible flaw (contamination) – Make sure there are no crystals (tartrates), which are harmless but not aesthetically pleasing – In a still wine make sure there are no bubbles which could be signs of a refermentation • Some young whites are purposely given a small amount of CO2 for some more zip Look Continued • If deep gold yellow gives idea of possible sweet wine affected by botrytis where color and taste is concentrated (ice wines) • If clear and pale, gives idea of young cool fermented white (German Rieslings) • If sunny yellow sign of warmer climate white (Australian Chardonnay) • If brownish tinges- things not looking good – Typical sign of oxidation (sherry like taste)

  • Introduction: Castles
Introduction: Castles Between the 9th and 10th centuries, the new invasions that were threatening Europe, led the powerful feudal lords to build castles and fortresses on inaccessible heights, at the borders of their territories, along the main roads and ri- vers’ fords, or above narrow valleys or near bridges. The defense of property and of the rural populations from ma- rauding invaders, however, was not the only need during those times: the widespread banditry, the local guerrillas between towns and villages that were disputing territori- es and powers, and the general political crisis, that inve- sted the unguided Italian kingdom, have forced people to seek safety and security near the forts. Fortified villages, that could accommodate many families, were therefore built around castles. Those people were offered shelter in exchange of labor in the owner’s lands. Castles eventually were turned into fortified villages, with the lord’s residen- ce, the peasants homes and all the necessary to the community life. When the many threats gradually ceased, castles were built in less endangered places to bear witness to the authority of the local lords who wanted to brand the territory with their power, which was represented by the security offered by the fortress and garrisons. Over the centuries, the castles have combined several functions: territory’s fortress and garrison against invaders and internal uprisings ; warehouse to gather and protect the crops; the place where the feudal lord administered justice and where horsemen and troops lived. They were utilised, finally, as the lord’s and his family residence, apartments, which were gradually enriched, both to live with more ease, and to make a good impression with friends and distinguished guests who often stayed there.

  • The Egg Test for Period Brewers and Mead Makers - Belinda Sibly (Mistress Roheisa Le Sarjent)
The Egg Test for Period Brewers and Mead Makers - Belinda Sibly (Mistress Roheisa le Sarjent) Sir Kenelm Digby, (11 July 1603 – 11 June 1665) was a 17th century English courtier, diplomat, privateer, entrepreneur, natural philosopher and inventor of the modern wine bottle, but is perhaps best know for his posthumously published cookbook, The Closet of the Eminently Learned Sir Kenelme Digbie Knight Opened. Compiled from Digby's life long collection of recipes by a close servant and published in 1669, several years after Sir Kenelm's death, it is an excellent source of period brewers recipes, especially those for honey based drinks. At least 55 of Digby's recipes (all for meads, metheglens and hydromels) contain the instruction to make your liquor “to bear an egg” or words to that effect. The same instruction appears in a mead recipe from the Danish Koge Bog of 1606, and in numerous pickling recipes of the new world colonies. Some versions are as brief as “try with a new-laid- egg” whilst others go into considerable detail. In this article I will explore those details and see how the egg test might be applied to historical brewing. How does the “Egg Test” work? The larger end of a birds egg contains an air cell that forms when the contents cool and contract after the egg is laid. A fresh egg has a relatively small air cell, but the size increases with time as the shell is very slightly porous allowing slow evaporation. An old egg has such a large air cell it will actually float in water and this is often used as the test for whether an egg is fit to eat.

  • First Evidence of Active Transpressive Surface Faulting at the Front of the Eastern Southern Alps, Northeastern Italy
Dear Editors, We have received the revisions that have been suggested for our manuscript "First evidence of active transpressive surface faulting at the front of the eastern Southern Alps, northeastern Italy. Insight on the 1511 earthquake seismotectonics". 5 In the following pages, please find the details of our comments and the changes we have made to the revised manuscript, along with our answers to the Reviewers to each point. We hope that in light of these changes and improvements, you and your Referees will now feel that our manuscript is of sufficient quality and impact for publication in 10 Solid Earth. We would also like to thank you and your Referees for your comments and suggestions, as we believe that these have permitted us to improve the quality of our research and manuscript. 15 We look forward to hearing from you further. Best regards, 20 Dr. Emanuela Falcucci For and on behalf of all of the Authors 25 Reviewer 2 (Luke Wedmore): 1) The authors make a lot of inferences that both structures were active at the same time. The data do not support such a statement as the authors only conducted palaeoseismic analyses on the Colle Villano thrust fault (CVT). The abstract and discussion and concluding remarks should be amended to make this clear. It would be fine to discuss the possibility that both the CVT and the Borgo Faris-Cividale fault (BFCF) are active at the same time in accommodating partitioned strain. However, it needs to be clear that the data only support the activity on 30 the CVT.

  • Collio Rosso Cjarandon DOC
Collio Rosso Cjarandon DOC Ronco dei Tassi is a family-owned and run estate, founded in 1989 when Fabio Coser and his wife Daniela bought their first 9 hectares (22 acres) in Collio Goriziano, in the township of Cormons in Friuli. The estate now extends 30 hectares (75 acres) of which 18 (45 acres) are under vine, all located in a beautiful natural park, which is protected by the region of Friuli. Ronco dei Tassi takes its name from the way the vineyard are set up: ronchi in Italian means terracing. They are set up this way so the vines get the most sun possible. While tassi, means badger in Italian, which reminds us of the small groups of badgers that visit the property during harvest to sample the ripe and juicy grapes. The winemaking team believes that great wines are made in the vineyard and they thus spend a lot of time up close and personal with the vines with the aim of cultivating perfect and healthy grapes to be transformed, using the least invasive and most natural ways possible, preserving the innate characteristics of the grapes, the terroir and of course, the vintage.
