ONE TO WINE

One to Wine is all about a perfect alignment of the stars:

Maxime, a wine geek, quit is consulting job in politics to dedicate himself to deliver the best wine to Londoners, the easiest way possible.

Stéphie, a sommelier buying wines for large retail, helped us by taking care of the first level of selection of the wines.

Benjamin, passionate about discovering organic and authentic wines from around the world, willing to be the bridge between good wine and good taste.

Then, holding a kind of conclave of people from different backgrounds (wine expert and wine noobs) gathering to taste, spit, enjoy and give their opinion about the gems collected through the vineyard during the summer.

From hundreds of bottles, we then deliver only a few ones. The following catalogue is the Happy Few of them.

We are pleased to offer distribution to United-Kingdom restaurants and retailers.

Delivery is free of charge from 3 cases of 6 bottles in the London area.

In order to do so, please send an email to: [email protected]

For new customers, payment is due upon delivery. For standard deliveries, payment is due within 30 days.

Orders placed before 12pm will be delivered within 48h hours. Orders received after 12pm will be delivered within 72 hours.

A £30 rush fee will be applied to orders for delivery within 24 hours.

Pierre Wach and Jessica Ouelet are taking care of 8 marvellous hectares of vines in the Andlau Valley, North of Alsace region. All their Grands Crus are facing East and South. The beauty of this estate lies in three things: more than a two hundred year of production (love of the terroir), an organic and natural approach of the viticulture (love of the environment) and three amazing Grands Crus terroirs made of black shist for Kastelberg, silice and quartz for Wiebelsberg and limestone-marl in Moenchberg, (terroirs of love). The finest Alsace wines we tasted so far.

FAMILLE BROUSSEAU BORDEAUX Saint Estèphe – Château Haut Coteau, Château Hauteville Haut Medoc – Château Brousseau

Settled in 1908, the Brousseau family is one of the rare independent estate in the prestigious Saint-Estèphe A.O.C. The Estate is 25ha, where half of it is vineyards planted at 8,500 p/ha density in order to give qualitative grapes. Those are surrounded by forest, meadows and swamps that create a proper ecosystem with an abundant wildlife. All the grapes, mainly Cabernet Sauvignon, then Merlot and a bit of Cabernet Franc are manually harvested and selected. The family, each year, succeed to work with an organic viticulture approach but doesn’t want to brand it (Sorry, I can’t help it but to thank them for that). Their focus is on independently making beautiful wines in Saint-Estèphe with Château Haut-Coteau and Château Hauteville and in Haut-Médoc with Château Brousseau, period.

TERRES DE GAILLAC

This association has the aims of making the most expressive wines and to encourage winemakers to meet, federate and share their terroir and consumer-friendly practices through a specific charter. To be part of this beautiful endeavour, the winemakers need to get at least one of the numerous existing organic certifications and to respect a few of sustainable (good sense) development rules. Those are either linked to the soil (long-term approach), the autochthones varietals, the social link through manual and the prohibition of chemical inputs and unrespecting physical (meaning “technological”) treatment to the wine. The result is some vibrant and lively wines that are a pleasure to discover each year from the visit of the winemakers to bringing them abroad and share the love!

LA PETITE TUILE SOUTH WEST – Gaillac

Clémence and Clément, took over Clémence’s family’s vineyards in 2016 and created Le Domaine de la Petite Tuile as the grapes were before that going to the local cooperative. They are now Organic Agriculture certified as they started to cultivate this way since day one. They are based on the first slopes of the Gaillac area and face East and South, overlooking the Tarn Valley. In the vines, they are doing an amazing mechanical (meaning by hand) weeding work, use the soft Poussard method for pruning and a gentle bi-annual ploughing to welcome a complementary seedling. Moreover, being part of Terres de Gaillac, only indigenous lees are used for fermentation. All of this combined make the wines of La Petite Tuile something far from standardisation, even with the 100% syrah that has a true identity of freshness and fruit. This is what we like with Le Domaine de la Petite Tuile, hard work and true wine. This way, we are sure about what we drink.

DOMAINE DE BROUSSE SOUTH WEST – Gaillac

Amandine Boissel is the fourth generation of the family to take care of these great 10 ha of Syrah, Duras, Braucol, Sauvignon, Merlot, Loin de l’oeil and Mauzac vines located on the most beautiful place of the area: the first slopes of the Cordais plateau (alt. approx. 300m). The magic of this estate lays in the fact that all the varietals are grown in a one- piece patch on a south exposed, clay-limestone soil, getting that particular south-western wind named "Autan". Following her principles and the Terres de Gaillac charter, Amandine doesn’t use synthetical inputs and relies on her indigenous yeasts for fermentation. We did select both barrels and inox tanks ageing in order to get a true panel of variations from grapes and wine-making styles made by Amandine.

At the heart of a great terroir, the Domaine Gayrard has been established for 5 centuries on the edge of the Causses, a land of oaks, stones and truffles, on the edge of the Gaillac vineyard. The current owners replanted vines in 2013 on their great grand-father’s land.

The Domaine Gayrard has the ambition of restoring a great dynamic to the family property through modern, convivial and refined wines. They manage to protect both the land and long-lost tradition of local fine wine producer and doing so while respecting their terroir and traditions.

DOMAINE PHILÉMON SOUTH WEST – Gaillac

When you are visiting the vines of Mathieu Vieules, you are on the top of the plateau Cordais, having a stunning 360 degres see-sight on Tarn valley and the Grésigne forest.

The Domaine Philémon has been run by the Vieules family since 1804 and Mathieu is the seventh generation. The estate covers 65 hectares, entirely organic. 40 of them are cereals, 22 are for vines and 3 for beautiful truffle oaks (Yummy!).

In order to produce the most authentic wines possible, the estate respect the Terres de Gaillac charter. Well, actually, he goes one step further by bottling monovarietal wines only, aged in “neutral-taste” tanks that allow the complete expression of the varietal.

That is why we selected the Philémon estate, to bring you a very rare variety: the Jurançon Noir (that has nothing to do with the Jurançon appellation, 400km south-west far)

CHÂTEAU DE SAURS SOUTH WEST – Gaillac

When you are going to the Château de Saurs, you are firstly visiting the most beautiful château of Gaillac. Then, when the wine tasting comes, you are just overwhelmed by their organic wines. A true dedication to quality. Gravity-flow cellar, 5 permanent workers (four times more for pruning and harvesting) in the 46 vines (the estate is 100ha in total), 100 french oak barrels (225L), 4 casks (472L) laying in the most beautiful vaulted cellar I’ve been able to visit (800 square meters). The wines you have here are made by David Devynck, who likes to work with the expert Stéphane Derenoncourt.

When they told us that their motto for life is “A wine should look like the place it was made and carry the guts of the one who made it”, from Jacques Puisais, we knew we could have fun with their wines. Digging into local grapes such as Gros Manseng (literally “Big Manseng”), Folle Blanche (“Crazy White”) and Colombard (we cannot translate this one, sorry), the winemakers at French Wines & Terroirs are all self-driven to bottle the just taste and the accuracy of taste in order to share it with you. And just for you to know, the average yield in Côte de Gascogne is 124hL/ha, so 90 is a choice for quality.

LA CELESTIÈRE RHÔNE VALLEY – Vaucluse

La Celestière. Celestial by its name and its wines, a true dedication to the terroir and the best varietals of the area. Only manual harvest for a true selection of the best grapes (grape-pickers are paid by the hour, not per kilograms. Just have a look at the yield per hectare…). In the cellar, the family uses gravity to get the grapes in inox and concrete tanks, avoiding harassing pumping. They like to refine the whites in oak barrels and the reds in demi-muids (600L) to soften the tannins and let the fruit talk for itself. Would you like another glass?

CHÂTEAU DALMERAN PROVENCE – Baux de provence

Let’s travel right between Saint-Rémy-de-Provence and the Rhône river. In the heart of the Alpilles Regional Park. Well hidden in the small mountains of the park, surrounded by garrigue and pines forest. You can’t avoid but to fall in love with the 11ha of vines, aside of olive trees, rosemary (it grows like weeds there!) and all the sculpted trees and other works of Art. A true hidden gem in Provence that lies on pure condensed limestone. Nothing else but Nature and Voluptuousness. They do organic and vegan wines because they are vegan themselves. So, they can drink the wines they make, as simple as that.

Here we go! Pays d’Oc. First producing area of France in volume, a true maze before finding the right quality at the right price. It’s like being at this restaurant where the menu is 12 pages long, everything looking appealing, only one to pick… The de Saint-Exupéry family (The one from “The Little Prince” book? We are afraid not) runs the estate with one aim only: Pleasure. The vines are bordered by the Aude river for freshness in the hot summers (very hot, trust us), the Cers wind that dries the vines for natural protection from diseases, pine forests and garigue for fauna and flora. Have a sip, get some fruity pleasure.

Susan and Peter Close left UK (in order to abandon their grown-up kids?) after they felt in love in 2001 with this estate as it is laying on an exceptional limestone terroir, facing the Mediterranean Sea, at a 150m altitude. Yann Claustre, well-known in the Languedoc area for his delicate winemaking approach, is the director of vineyard operations of the estate from the beginning. Following reasoned agriculture principles to respect the vines and the wines, and the consumers, of course, and you. And your children that will be on earth after you. How beautiful is that?

ABBAYE DES MONGES LANGUEDOC – ROUSSILLION – La Clape

Marie-Claude and Paul de Chefdebien are settled in the massif of La Clape between Gruissan and Narbonne in one one of the rare Cistercian abbeys of women of Languedoc. In a constant research of quality, the owners are very happy to be part of the La Clape AOC since 2015. We can find there a particular soil of “poudingue” wich is a sandy clay filled with pebble. This mixed with the Medditeranean Sea influence and local grapes, and you’ve got a wine telling the truth regarding its environment. Marie-Claude and Pierre are active members of “Vins d’Abbaye” association and Terra Vitis association, which gathers winemakers with the same belief of a sustainable winemaking. To prove such things – and to keep the long-list short – they are using wild yeast only, and the reds are manually harvested. But the main interest appears while tasting it there or here, as we brought some bottles with us for you to acknowledge.

DOMAINE DU PETIT CLOCHER LOIRE

Located at the source of the Layon, in the heart of Anjou, they’ve grown from 5 to 86 ha in the span of 50 years. What they like the most is to perfectly adapt the grapes regarding the soil: Schists for Chenin grapes and volcanic rocks under the Cabernet Franc and Cabernet Sauvignon vines.

“They” is the Denis family. Now, Vincent, Julien and Stéphane Denis – the fourth generation is leading the naturally growing estate. “They” are looking forward the best expression of the grapes, mainly bottling mono-varietals wines. That is what we learnt when we felt in love with the 2014 vintage, the very last one of the of Jean-François Maison’s (current winemaker) father before he retired. One day at a friend’s birthday in the Côte de Sézanne area, we knew we wouldn’t have enough bottles to celebrate as a lot of people came in. I jumped into my car to visit the closest champagne-maker that I didn’t know yet: Sylvia and Hervé Jacopé and their daughter, Marion (fourth generation). On 6 ha, they are doing reasoned farming in their small and not so known area of Côte de Sézanne, south of the drier Côte de Blancs. We get along well, their champagnes were and are year after year, amazing. What about the birthday party then? It went well, obviously. Moreover, they’ve got a truly amazing view on the landscape from the top of their vines and a very kind dog.

Three generations are the pride and joy of the BIDOLI winery, which was founded in 1924 by Cav. Alessandro Bidoli in SAN DANIELE DEL FRIULI.

Today, winemaker Arrigo and sales manager Margherita take pride in harmonizing tradition with the most modern technology and they have transformed the winery into a viable and modern business.

The vines are grown in the area called “Friuli Grave”, which straddles the Tagliamento river between the provinces of Pordenone and Udine.

For almost hundred years now, they are working with the best winegrowers around the winery and get only the best, for each vintage, knowing each vine and each wine-growers.

They only do manual harvest and reasoned farming, under the supervision of Alessio Kurtin who’s philosophy is always led by the proper design of their logo which is a “K” meaning the elevation of the spirit, through wine and passion and where tendrils are born from his graces and they sinuously pursue the infinite, from earth to heaven. Who’s Giovanni Dri? Someone that’s happy to share the simplicity and beauty of his wine, who’s humble because he’s always thriving to make it better, who’s deeply attached to his vines and the soil below it as he’s born at the foot of the hill. And her daughter Stefania is now being the natural continuation of this familial tradition of perpetual improvement. Their ambition for the small patch of land they have is big, trust us. More than a hundred harvests since the grand-grand-father won medals for the quality of the bottled wines and the wines are each year an endeavour.
