    CAN WE BE FRANC? THE HUDSON VALLEY PREPARES FOR ITS CLOSE-UP —AND CABERNET FRANC IS THE STAR. Amy Zavatto he verdant, hilly climes of the Hudson Valley are known and praised for many things. The beauty of its rolling, roiling namesake river; its famed mid-nineteenth century naturalist art movement; its acres of multi-generational fruit orchards and dairy farms; T and, lately, as the celebrated place of culinary inspiration for chefs like Dan Barber and Zak Palaccio. But while these lands, just ninety minutes shy of New York City’s northern border, can claim the country’s oldest, continually operating vineyards and oldest declared winery, the cult of wine has yet to become the calling card of the region’s lore and allure. That might be about to change. 4 HUDSON VALLEY WINE • Summer 2016 Cabernet Franc, that beautiful, black French grape variety well known for its role in both legendary Right Bank Bordeaux and Loire Valley wines, is proving to be oh-so much more than a liquidy lark here. Not only does the grape seem well at home in the Hudson Valley’s cool-climate terroir, but collective work done between the area’s grape growers, winemakers, and Cornell University have tamed many of the conundrums that once plagued producers who yearned for success with vinifera. Now, with a force borne of a few decades of trial, error, and recent promising success, Hudson Valley vintners are ready (and more than able) to stick a flag in the ground for Franc.     (Bubbles and Pink) Two thoughts: 1. One should enjoy Bubbles on a regular basis. (End of discussion.) Sure, birthdays, anniversaries and holidays are great times to raise a glass, but why limit one’s self to just those events? Sparkling wines always seem to create a festive atmosphere, no matter how large or small the occasion. And perhaps the best part, Bubbles can be enjoyed on their own or paired with a wide array of dishes. A bowl of potato chips anyone! 2. Rosé wines are not, I repeat not, to be had just during the summer months. Yes, they are particularly delicious during those warm (and hot!) summer days, but Rosés can also transition nicely into the cooler days of autumn. Given that Rosés are made in a wide variety of styles – from off-dry to bone dry -- they are incredibly food friendly and pair well with an endless number of dishes. Fifth Annual PA Sommelier Judgment Reveals Refreshing Results Albariño, Sauvignon Blanc and Cabernet Sauvignon Score Top Marks in 2021 Blind Tasting Chadds Ford, PA - On May 24, sommeliers, beverage directors and other notable industry representatives from the region’s top wine programs convened for the fifth annual PA Sommelier Judgment, a blind tasting of vinifera wines produced in Pennsylvania using grapes grown in the state. The panel tasted an array of Pennsylvania wines from all regions of the commonwealth, sharing its marks following two extensive tasting rounds. Twenty-two wines from 13 individual Pennsylvania wineries were recognized. The ten highest scoring wines featured five white wines, three red wines, one rosé, and for the first time in the Judgment’s history, a sparkling wine made in the French pétillant naturel (“natural sparkling”) style. Albariño, Sauvignon Blanc and Cabernet Sauvignon were among the top varietals. This was the second year that an Albariño finished among the best wines. The complete breakdown of top wines and honorable mentions are listed below. The PA Sommelier Judgment is an initiative founded by the Pennsylvania Winery Association (PWA). For the second year, the judgment was held outdoors in Delaware County, Pennsylvania to provide guests with an opportunity to safely gather in person. Since 2017, the PWA has partnered with Scott Zoccolillo, wine director at Del Frisco’s Restaurant Group, to organize the annual event. “It was inspiring to see wineries submitting for the first time this year," stated Zoccolillo. "Local wineries are realizing the amazing potential of white wines in Pennsylvania's climate and geology, especially with Albariño and Grüner Veltliner," he added.

    2017 Cabernet Franc Estate Grown and Bottled Cabernet Franc is poised to become the flagship red variety of the Finger Lakes. It is particularly well suited to the growing conditions of the Finger Lakes, both in terms of temperature resistance and length of growing sea- son. The vibrant fruit, lively acidity, and earthy and spicy notes are the characteristics of this grape variety; par- ticularly in the Finger Lakes region. With good vineyard practices, a moderate crop load, and gentle winemaking practices, we can consistently make interesting, age-worthy wines with this grape variety. Vinification The grapes were all hand-harvested and de-stemmed into open top stainless steel and oak fermenters. After starting as a whole berry fermentation, multiple daily punch-downs and pump-overs were conducted. Giv- en the remarkable ripeness level, the Cabernet Franc was given almost three weeks of skin contact prior to pressing. At pressing, skins were hand bucketed out to leave behind most of the seeds and sediment and avoid sources of astringency.Malolactic fermentation took place in barrels for improved texture. The barrels used were 75% French oak and 25% Minnesota oak, with 20% new oak overall. Prior to bottling, the wine received a slight filtration. Appellation: Fingerlakes AVA, New York Varietal Composition: 100% Cabernet Franc Alcohol: 12.9% Acidity: 6.0 g/l RS: >2 g/l pH: 3.68 Vineyards White Springs Vineyard (60%) & 16 Falls Vineyard (40%) 16 Falls vineyard is a shale stone vineyard site and the White Springs vineyard is Honeoye loam over lime- stone. The 16 Falls vineyard has a lyre trellis system, whereas the Cabernet Franc is grown on the more con- ventional Vertical Shoot Positioning in Sam’s vineyard and at White Springs.
