WOOO ! Spring Break 9.5 Cabeza Tequila, Elderflower, Manzanilla, Grapefruit, Smoked Salt Floral, savoury and ‘like…sooo refreshing’, this is a cocktail squeezed into a pink bikini at a pool party in Cancun. Served tall with a palm tree and smoky salt this drink is ‘totes amaze’.

Fino Bicyclette 9.5 Rhubarb, Campari, Fino Sherry, Soda Spring time means spritz time but you can get a spritz anywhere right? We swapped the white wine out of a classic Bicyclette and replaced it with almondy and citrusy Fino sherry, served tall with rhubarby bubbles. It’s like that guilty pleasure Rose you can’t stop drinking.

Tabbouleh Smash 9.5 Cana Brava Rum, Preserved Lime, Parsley, Basil, Apricot Bitters The Daquiri’s North African cousin. This ‘Baazar’ concoction smashes the hell out of fresh parsley and basil with rum, sugar and a smattering of salty lime. Pass the shisha!

Harrison 9.5 Fords Gin, Lemon, Violet, Italicus, Maraschino We landed on the name ‘Harrison’ for this twist due to Harrison Ford’s rogue landing of his plane on the day we were creating this drink. Tedious, possibly but delicious, definitely. We substituted half of the Violet liqueur in the forgotten classic with Italicus, a super Italian bergamot spirit. Served like a straight up .

Tipperary 10 Irish Whiskey, Sweet , Green Chartreuse, Orange Bitters Evelyn Waugh described imbibing upon Chartreuse as like ‘drinking a spectrum’. The Tipperary, a classic from way back when, adds more colours to that spectrum, predominantly red and Irish Whiskey colour. This is a spirituous herbaceous sipping cocktail that will make that long road to Tipperary a lot shorter.
