  • Primum Franciacorta Brut DOCG- Winebow
Primum Franciacorta Brut DOCG NV W I N E D E S C R I P T I O N La Valle is an idiosyncratic and leading Franciacorta estate founded in 1990. La Valle’s philosophy is to harvest fully ripe grapes and to avoid barrels, malo-lactic, and high dosage in order to preserve their flavors. The soil at La Valle is ancient and the goal is to express their venerable terroir. The vineyards of La Valle are situated in Rodengo Saiano where glaciers cut deep into the earth leaving morainic soils that contain a high concentration of fossils. The vineyards lie just 2 kilometers from Lake Iseo which helps to preserve freshness while the grapes reach full physiological ripeness. “Primum” Franciacorta Brut is a blend of Chardonnay, Pinot Bianco, and Pinot Nero and is the foundation of the La Valle line. The wine is vinified in stainless-steel tanks, sees no malolactic, and spends 24 months on the lees. “Primum” receives a low dosage of 4.5-5 g/l at the time of disgorgement. T A S T I N G N O T E S “Primum” is the classic offering from La Valle. The wine balances the richness and fullness that is typical of Franciacorta with the refinement and mineral expression that is the signature of La Valle. “Primum” is a strong and decisive Franciacorta Brut with an elegant delivery, unexpected complexity, and is a clear expression of terroir. F O O D P A I R I N G Because “Primum” Franciacorta Brut is a somewhat richer and fuller sparkling wine it can be paired with richer and fuller dishes at the table.

  • Terroir⎯The Footprint of Great Wines
TERROIR⎯THE FOOTPRINT OF GREAT WINES Thesis submitted in partial fulfillment of the requirements for the qualification of the Cape Wine Master Diploma Cape Wine Academy GERDA D. MOUTON July 2006 No great wine without the total commitment of the winegrower… “Attaining the purest expression of terroir, such should be the perpetual pursuit of the winegrower in his daily efforts. Every act counts. From the vine, where the grape, interpreter of the soil’s subtleties, is born, through to the winery where the fruit is slowly transformed, the hand of the winegrower along with the tradition and spirit that inspire him are decisive. This passion follows through to the cellar by the bottling of unfiltered wines. This high quality approach preserves the finest constituents of a wine, all these good elements that will allow the wine to develop its noble structure and its multiple aromas. Whatever the cru or the vintage may be, the ambition of the winegrower would be to stimulate the wine lover’s pleasure. Step for step, detail for detail, he should commit himself fully in order to preserve the soul of the wine. There can be no great wine without the total commitment of the winegrower.” Terroir and the Winegrower - Jacky Rigaux, 2006. ii ACKNOWLEDGEMENTS The author wishes to express sincere appreciation to all the winemakers for completing the surveys, and industry personalities and opinion leaders who gave up their time to answer questions and provide very detailed feedback. A special thank you to Mr. D. Saayman, for his expert guidance which has enabled me to complete this thesis.
