WINE LIST: Coravin Selections Domaine Julien Gros ‘Clos Du Roi,’ Grand Cru, Aloxe-Corton, Burgundy 2016 3 oz. $50 6 oz. $90 Designated a Grand Cru in 1937, this wine was already well-known in the 15th century when the King of France added Corton wines to his personal cellars. Upon the death of Charles le Téméraire, the final duke of Burgundy, this parcel of vines passed into the hands of the royal winemakers and therefore became Corton "Clos du Roi" (plot [of land] of the king). Egon Müller ‘Scharzhofberger,’ Spätlese, Mosel-Saar-Ruwer, Germany 2014 3 oz. $48 6 oz. $86 The Scharzhofberg, or Scharzhof Mountain, is among the finest Riesling sites in Germany and is considered Grand Cru. As such, it is allowed to be labeled with its vineyard name, or “Einzellage”, rather than its village name. The Müller holdings here include a parcel of un-grafted vines that were planted in the 19th century. These wines deliver at the highest level of quality and are without question among the world’s greatest wines. Nikolaihof ‘Vinothek,’ Wachau, Austria 2002 3 oz. $52 6 oz. $94 The Vinothek cuvée is the philosophical apotheoses of the Demeter Certified Nikolaihof estate. Though Nikolaihof commonly holds back their wines until they believe they have fully developed, the Vinothek cuvée is extreme for even these standards. Harvested in 2002 from the Im Weingebirge site (the oldest named site in Europe 470 A.D.), this wine rested in barrel for 17 years in Nikolaihof’s ancient, Roman-built cellar. This profoundly extended barrel aging along with the inherent distance of it’s vintage creates a singular wine not to be experienced elsewhere. Vinothek is the only dry Riesling to receive a 100 pt. score from Robert Parker. Gunderloch ‘Nachenheim Rothenberg’ Beerenauslese, Rheinhessen 2004 3 oz. $48 6 oz. $86 Gunderloch is a thriving estate, consisting of approximately 25ha of vines in the "Roter Hang" ("red slope") area of the Rhein- hessen appellation. The average yield is held to 45 hl/ha, among the lowest in Germany, resulting in wines of high extraction and great quality. The wines are never de-acidified, and in high acid vintages, bottling is delayed to allow the wines to har- monize and soften. Cellar work is accomplished with minimum handling, the resulting wines from Rothenberg are consid- ered among the finest and most important in Germany. Sine Qua Non ‘Trouver l’arene,’ Syrah, CA 2015 3 oz. $50 6 oz. $90 Sine Qua Non (an essential condition) is the benchmark for Rhône varietals in California. Founded by Manfred and Elaine Krankle, there is no competition when it comes to creativity in the wine making, having never repeated a blend, label or bot- tle shape. SQN is a wine many Rhône collectors believe is an essential part of their cellars. Critics Jeb Dunn and Robert Park- er have both given this wine a perfect 100 score, while Jeb compared it to the great vintages of Guigal’s Côte Rôtie La Mouline.     100% Sylvaner VINTAGE Since 1971; current 2020 BACKGROUND INFORMATION Sylvaner in general: Originally from Germany (where it is known as Silvaner), it became famous in early 20th century when it was Germany’s most planted varietal, before the discovery of the early ripening and higher production attributes of Műller Thurgau. Wine from this grape has a naturally high acid level, but no real longevity. It’s still popular in Nahe, Franken and Rheinpfalz where Riesling struggles to ripen - Sylvaner ripens 2 weeks earlier than Riesling. Excellent late harvest style wines are made in these regions. Sylvaner is also grown in other European countries such as France (Alsace), Czech Republic, Slovakia, Hungary and Russia. Sylvaner at Overgaauw: David Snr planted the first Sylvaner at Overgaauw in the 1960s (currently 1 ha). It was bottled in 1971 when most of the local producers were bottling Steen (Chenin Blanc) and Riesling (Cruchen Blanc). The Overgaauw Sylvaner is the only Sylvaner produced in SA. It’s made in small quantities and has a loyal following due to its flavour spectrum and uniqueness. German tourists enjoy tasting ‘their’ varietal in SA and comment that you can “taste the sunshine in the wine”. Restaurants often list it as a unique varietal on their wine lists and are pleasantly surprised at its versatility as a food wine. VITICULTURE Vineyard location: Stellenbosch Kloof, 200m above sea level, south facing, 15km from False Bay Moderate climate: Winter ave temp: 13ºC (min 7ºC, max 17ºC) Summer ave temp: 21.5ºC (min 20.5ºC, max 30.5ºC) Soil: Deep Hutton and Clovelly (decomposed granite) Age of vines: 27 years Trellising: 4-wire hedge system with moveable wires Pruning: Cordon system with 2 bud spurs, ensuring low yield Harvest date: February 2020 Yield per hectare: 8 tons Sugar at harvesting: 23ºB VINICULTURE Length of fermentation: 21 days in stainless steel at average 14ºC Alcohol: 12.5% vol Total acid: 5.1 g/l pH: 3.56 RS: 2.3 g/l OUR WINEMAKER DAVID VAN VELDEN’S COMMENTS First produced in 1971, our Sylvaner is still unique in South Africa.

Zu seinen früheren beruflichen Stationen zählen «Thurnher’s Alpenhof» in Lech, «Geisels Werneckhof» in München und das «Wald- und Schlosshotel Friedrichsruhe». Schwerpunkt: Baden Felix Bodmann Gründer und Moderator der Webweinschule (webweinschule.de). Begann seine Karriere als Autor und Redakteur in einem Fachzeitschriftenverlag. Dann 15 Jahre im digitalen Marketing. Preisgekrönter Weinblogger (schnutentunker.de) und Autor des Buchs «Weinschule 2.0». Schwerpunkte: Nahe, Ahr Cordula Eich Schrieb und verlegte sieben Jahre lang den «Super Schoppen Shopper», einen Einkaufsführer für Supermarktwein, für den sie über 14'000 Weine verkostete (supershoppen.com). Lieferte zwei Jahre lang Beiträge für die stern.de-Weinschule. Regelmäßige Auftritte als Weinexpertin beim WDR. Lehrbeauftragte an der University Geisenheim im Bereich «Wein und die Neuen Medien».     Silvaner subtle, shapely & stylish A RENDEZVOUS WITH TRADITION 3 THE STYLE OF SILVANER WINES Silvaner is one of the most important white grape varieties in German viticul- tural history. From its debut in Germany in the second half of the 17th century through the mid-1960s, it was the most widely planted grape variety in Germany. At its peak, it was cultivated in ca. half of Germany’s total vineyard area. It replaced inferior grape varieties, including Elbling and Gutedel, until it was supplanted by the more prolific grape Müller-Thurgau. But Silvaner has made its comeback. The world’s largest acreage of Silvaner lies in Germany, with ca. 5,000 ha (12,500 acres), where it is the fifth most important grape today, equal to 5% of the country’s vineyard area. Of this 2,371 ha (ca. 5,859 acres) are planted in Rhein hessen and 1,406 ha (3,474 acres) in Franken, the world's largest Silvaner regions. The grape is particularly adept at reflecting its terroir: mineral tones clearly underscore fruity, spicy or herbal / vegetal aromas remi- niscent of honeydew melon, apricot, apple, orange or lemon peel; coriander; celery and new-mown hay or grass; and sometimes, toasty notes – as depicted in the glass to the right. Silvaner 4 A RENDEZVOUS WITH TRADITION Leading producers plant Silvaner in top sites that are protected from wind and cold, yet have good circulation and sufficient moisture. If left unchecked, it is a prolific bearer of grapes suitable for uncomplicated everyday wines. With quality-oriented vineyard maintenance, including stringent pruning, Silvaner grapes can produce very good and excellent Prädikat wines.
