Put margarine, oil, carrots, onions, and tomatoes in large pan and simmer for 10 minutes. Add water and macaroni and bring to boil. Reduce heat. Add thyme, savory and pepper. Carefully add fish and simmer for 20 minutes.

12 Appetizers, Soups and Salads GOLDEN HARVEST SOUP Healthy Choice Club 1 medium Golden or Spartan apple, peeled, cored 1 small onion, chopped 1 medium potato, peeled and cubed 1 cup butternut or acorn sqash, peeled, cubed 2 medium carrots, peeled chopped 1 cup of turnip, peeled, cubed 2 tsp. oil 2 cans condensed chicken broth, 10 oz. each 2 cans of water, 10 oz. each ¼ tsp. dried thyme leaves ¼ cup half and half cream Wash, peel and chop the apple and all the vegetables. In a large pot (use a non-slick pot, if available), heat oil over medium- high heat. Add the chicken broth and water. Turn up the heat to high and bring the vegetables to a boil. Turn the heat down to medium-low and simmer about 30 minutes until the vegetables are very tender. Turn off the heat. Very carefully ladle about one-third of the hot vegetables and soup into a blender. Blend until very smooth. Repeat with the remaining soup. Return the soup to the pot and stir in the cream. Serve. If the soup becomes cold, you can reheat but do not boil the soup.

14 Appetizers, Soups and Salads GREEN SALAD Marilyn Barnes 1 head of romaine lettuce 1 English cucumber 1 ½ cups of green grapes 3 tbsp. chopped fresh dill Tear lettuce into bite-sized pieces. Slice cucumber into preferred size pieces. Half grapes. Combine and toss with dill. Keep tightly covered and refrigerate until ready to serve. Combine with dressing below. Dressing: ⅓ oil ¾ tsp. salt 2 tbsp. lemon juice ½ tsp. freshly ground pepper Toss with greens and add ½ cup sliced almonds or chopped pecans.

16 Appetizers, Soups and Salads HAM & CHEESE PUFFS Tynan Leong 1 cup water 5 eggs ⅓ cup butter 1 ½ cup cheese grated 1 tsp. salt 1 cup ham chopped fine 1 cup flour ¼ tsp. dry mustard Mix water, butter and salt in a sauce pan and bring to a boil. Add flour all at once and stir briskly until batter comes away from sides forming a ball. Cool for 1 minute. Add eggs one at a time and beat hard until smooth. Stir in the rest of the ingredients and form a batter. Drop on a greased sheet by tsp. Bake at 400˚F for 15-20 min.

Add enough water to come to the top of the beans to soak overnight. Next morning drain water, and then cover with fresh cold water. Add baking soda and bring to a boil. Gradually add ½ cup of sugar, beating all the time. Continue beating until mixture is light and fluffy. Add egg and beat well. Sift together flour, baking powder, salt, and nutmeg. Add flour mixture alternately with milk to butter mixture, beginning and ending with dry ingredients. Stir just enough to mix ingredients. Place spoonful of batter in bottom of each of 12 well greased medium size muffin tin. Add yeast and half of the water. Beat and let rise till bubbly, then stir in eggs and flavoring. Knead well and cover to let rise. Divide dough in half. Roll each ¼ thick. Then cut into 3”or 4” circles. Have 12 or more large marshmallows; dip in ¼ cup melted butter. Then into mixture of 1 ½ tsp cinnamon and ½ cup sugar. Note: This recipe is usually made with unpasturized unprocessed sour cream from the farm. Desserts and Beverages 163 STEAMED GINGER TREACLE Vicky Latour OR CHOCOLATE PUDDING 1 cup flour 1 ½ tsp. baking powder 1 ½ tsp. ginger or ⅓ cup cocoa or 1 ½ tsp. vanilla Pinch of salt ¾ cup sugar, white or 1 cup sugar, brown ½ cup Crisco 1 ½ cup milk 1 egg Cream Crisco and sugar until light; beat in the egg. Add the dry ingredients alternately with the milk, beating to a smooth batter. For ginger pudding, place enough golden treacle (golden syrup) to cover bottom of a medium sized pudding bowl then pour in the batter. If you’re making chocolate pudding, you may shave a little baking chocolate into the bottom of the bowl and butter sides. If it’s a plain vanilla pudding, place marmalade or strawberry or raspberry jam in the bowl first, then add the batter. Cover the top of the bowl and batter with a sheet of wax paper and then tie a cloth on top, pinning the four edges together with a safety pin, thus providing a ‘handle’ for lifting the bowl. (I use a clean piece of tea towel or old, well-washed pillowcase.) Place the bowl in a large covered pot or Dutch oven with sufficient boiling water to come up to about an inch below the rim of the bowl. Place the pot cover on and steam for about 1 ½ hours, keeping the level of the boiling water constant. Do not keep at a fierce boil, just a nice gentle roll.

Be careful to avoid steam when removing the pudding. Undo the cloth, remove the wax paper, slide a flar-bladed knife carefully between the bowl’s sides and pudding to loosen. Place a serving

Boiling: Add vegetables to boiling, salted water using as little water as possible. Cover saucepan. Bring water to boil again and then replace heat to a gentle boil. Cook until just tender. Drain; season to taste.

Steaming: Place vegetables in a steamer basket just over, not touching, rapidly boiling water. Sprinkle with salk, cook until just tender. Drain; season to taste.

Pressure cooking: A quick way to cook vegetables; helps retain colour, flavour and nutrients. Follow manufacturer’s instructions carefully.

Baking: Place prepared vegetables in a greased baking dish with a small amount of water; season, dot with butter, cover and bake. Potatoes and squash are best baked dry in their skin. Baking helps retain colour, flavour and nutrients. Vegetables can often be baked in the oven alongside another part of the meal.
