Unlike a Filet Mignon on it’s own, these steaks are best cooked slow, so you can maximize the flavor that comes from a bone-in steak. Oil your cast iron pan and season with fresh herbs and garlic, then after your steaks are browned on each side, place in the oven at 375° until you reach an internal temperature of 135°.
