Cocktail Recipes A TOAST TO OUR HEROES Cocktail Recipes Prepared by Jason Kornfeld, VP of Sales at KEVANI | www.kevani.com The Towers Paper Plane Freeway displays this tall call for the perfect whiskey cocktail for summer. Those that are intimidated by the boozy taste of whiskey will find this fruity citrus drink extremely refreshing. • ¾ ounce bourbon • ¾ ounce Aperol • ¾ ounce Amaro Nonino Quintessentia • ¾ ounce fresh lemon juice • Add all ingredients into a shaker with ice and shake for around 30 seconds. • Strain into a coupe glass CIRCA 1881 Old Fashioned While there is a debate to the exact date the Old Fashioned was created, there is no debating this is the essential whiskey cocktail. • 2 ounces rye or bourbon • 1 sugar cube (or 1 bar spoon simple syrup or a few dashes of liquid stevia for the sugar conscious) • 2-3 dashes Angostura bitters • Orange Twist • 1 Luxardo Cherry for garnish • Muddle the sugar cube and bitters with one bar spoon of water at the bottom of a chilled rocks glass. (If using simple syrup, combine bitters and one bar spoon of syrup.) Add rye or bourbon. Stir. • Add one large ice cube, or three or four smaller cubes. Stir until chilled and properly diluted, about 30 seconds. Slip orange twist on the side of the cube. The Queen Mary-garita Another summer classic which is perfect to sip near the ocean when it's safe again. This version is the skinny variety to reduce sugar, plus you can add different flavors (big fan of jalapeno and cucumber). • Kosher salt or coarsely ground sea salt • 2 ounces silver tequila • 1½ ounces (3 tablespoons/about 1″½ small limes) fresh lime juice • 1 ounce (2 tablespoons/about ½ of a medium orange) fresh orange juice • 1 teaspoon light agave nectar • 1 lime wedge or round, for garnish • Pour salt on a small plate, rub lime on the rim of your glass, and dip the top of the glass into the salt at a 45° angle and roll it from side to side to coat with salt • Fill a small cocktail shaker with ice. Pour in the tequila, freshly squeezed lime and orange juice and agave nectar. Put on the lid and shake for 30 seconds. Strain the liquid into your glass and garnish with a slice of lime. • Note: If you want to add things like cucumber or jalapeno, slice and dice these ingredients...then add to cocktail shaker to shake with other ingredients. Marriott Martini Our classic full motion screen in Downtown LA pairs nicely with the classic dry gin martini. • 2 ½ ounces gin • ½ ounce dry vermouth • Garnish: 1 or 3 olives or a lemon twist • Optional: 1 dash of bitters • Gather ingredients in a mixing glass filled with ice • Stir for 30 seconds • Strain into a chilled cocktail glass • Add a dash of orange or bitters, if desired • Garnish with olives or a lemon twist Ninth + Broadway French 75 This refreshing and citrus sparkling gin cocktail is perfect to celebrate the end of Quarantine. You might have even found one in the old Broadway theatre district of Downtown LA 100 years ago... • 1 ½ ounces gin • ¾ ounce fresh lemon juice • ¾ ounce simple syrup • 2-3 ounces of Champagne (you want to top the glass) • Lemon peel for garnish • Fill cocktail shaker with ice and pour in the gin, lemon juice, and simple syrup.     part one A California Wine Primer Olken_Ch00_FM.indd 1 7/13/10 12:07:51 PM Olken_Ch00_FM.indd 2 7/13/10 12:07:52 PM A Brief History of Wine in California more than two hundred years after Spanish missionaries brought vine cuttings with them from Mexico’s Baja California and established the first of the California missions in San Diego, researchers at Madrid’s National Biotechnical Center, using DNA techniques, have traced those first vines back to a black grape that seems to be a dark-colored relative of the Palomino grape still in use for the production of Sherry. That humble beginning may not seem like it would have much to do with today’s bur- geoning wine industry, but the fact is that the Mission variety became the vine of choice in California as its population grew first through the arrival of trappers and wealthy landowners, then with the small but steady stream of wagon trains that came west out of the country’s heartland and the establishment in the 1840s of the clipper ship trade. By the time the trans- continental railroad was completed in 1869, California’s wine economy had become established, and despite world wars and periods in which the sale of alcohol was banned, the industry hung on and finally exploded into its current shape with the wine boom of the 1970s. Today, the Mission grape is gone, but the wine industry it helped spawn now boasts over a half million acres of wine grapes from one end of the state to the other.
