To create stable long lasting health it is important to look at the ratio of Alkaline forming & acid forming foods in the diet. A balance of 80% ALKALINE (anti-inflammatory)- 20% ACID (pro-inflammatory) is a good guide. Many health conditions are worsened and possibly caused by the excessive consumption of acid-forming foods. When acidity builds up within the body and is not neutralized by alkaline buffers disease can occur. Confusion surrounding what is ‘acidic’ and what is ‘alkalising’ is very common. Generally what is acidic outside of the body is alkalising once metabolized inside the body. The following list should be used as a guide, with 80% of the diet coming from ‘good choice’ alkaline forming foods and no more than 20% coming from ‘good choice’ acid forming foods. 80% Extremely Alkaline Moderately Alkaline Forming Slightly Alkaline Forming Neutral Forming Fruits Fruits Miso & Tamari (wheat-free soy) Fruits Millet Dates (fresh & dried) Apples, Apricots Sea salt, Spices Cherries (fresh) Sesame seeds Miscellaneous Figs (fresh & dried) Avocados Vegetables Coconut Soy cheese, milk, Butter (unsalted, Grapes (sweet, seedless) Bananas (ripe), Alfalfa sprouts Rhubarb beans fresh) Kiwifruit Berries Beans (green, fresh) Tomato (sweet) Sprouted grains Cream (fresh & Lemon, Lime Breadfruit Bamboo shoots, Beets Vegetables Tempeh & Tofu raw) Mango Currants, Cantaloupe Bell pepper (red & green) Artichokes (Globe & Dairy & Animal Milk (raw cow’s) Melons (all) Guavas, Gooseberry Broccoli Jerusalem) Products Oils (except Passionfruit Grapefruit, Grapes Cabbage (red & & white) Brussel Sprouts Buttermilk olive) Paw Paw & Papaya (Sour) Cauliflower Cucumber Egg Yolk (soft Whey (fresh) Pineapple Nectarine Dalkon garlic Eggplant horseradish cooked) Yoghurt (plain) Raisins Oranges Ginger (fresh) Leeks Goat’s milk (raw & Umeboshi Plums Pear (sweet), Green herbs (leafy) lettuce Mushrooms whey Vegetables Peaches (sweet) (green) Okra, Olives (ripe) Miscellaneous Asparagus (ripe) Persimmon Kale Onions Brown rice syrup & Carrots Raspberries Lima beans Radish, Taro vinegar Celery Strawberries Okra Water Chesnut Honey raw, Endive Miscellaneous Parsnip, Peas (sweet) Nuts, Grains, Seeds Horseradish Parsley Acidophilus Potato (with skin) & Legumes Mayonaise Seaweeds (kelp, Apple cider vinegar Pumpkin (sweet) Almonds, Amaranth (homemade), Miso karengo) Arrowroot flour Spinach, Squash Barley Malt, Olive Oil Watercress Brown Rice Vinegar Sweet corn Chestnuts Pickles (homemade) Miscellaneous (sweet) Turnip Quinoa (great protein Spices Cayenne Carob, Honey (raw) Zucchini Yeast 20% Slightly Acid Forming Moderately Acid Forming Extremely Miscellaneous TO AVOID Acid Forming Fruits Dairy & Animal Fruits Dairy & Animal Dairy & Sugar (brown & white) Blueberries Products All fruits- Products Animal Artificial Sweeteners Tea (black) Coconut (dried) Butter (salted) preserved, jelled, Products Alcohol White pasta Cranberries Cheeses (mild & canned, sugared, Cheese (sharp & Beef Beer White rice Plums crumbly) dried, sulphred, tasty) Chicken Bread (wheat) White wheat flour Prunes (& juice) Goat’smilk glazed, raw with Eggs (whole, hard Goat Candy & White vinegar Soy Beans (homogenized) sugar, unripened, cooked) Lamb confectionery (processed) Vegetables Cow’s milk & pickled Fish Pork Carbonated Drinks TOO LITTLE SLEEP Beans (dried- mung, products Bananas (green) Shellfish Turkey (soft/fizzy) TOO MUCH STRESS adzuki, Pinto, kidney (homogenized) Fruit juices (with Yoghurt (sweetened) Chocolate & cocos & OVERWORK & garbanzo) sugar) Miscellaneous Cigarettes (tailor- Olives (pickled) Miscellaneous Vegetables Maple syrup made) Nuts, Grains, Seeds Barley Malt syrup Asparagus (tips, (processed) Coco-Cola & Legumes Nuts, Grains, Seeds Honey (pasteurized) white) Mayonnaise/Ketchup Coffee Roasted Nuts (all) & Legumes Maple syrup Potatoes (without Molasses Condiments – curry, Barley (unprocessed) skin) (sulphured) etc Dairy & Animal Bran Molasses (organic/ Nuts, Grains, Pickles (commercial) Dressings & sauces Products Brazil nuts unsulphured) Seeds & Popcorn (salted) Drugs (asprin, etc) Custard Cashews Mustard Legumes Rice (brown & Jams & Preserves Icecream Cornmeal Popcorn (with butter) Buckwheat basmati) Pastries & Cakes Milk (boiled, dried, Lentils Rye crackers Corn & rice Soy sauce Salt (table- refined & cooked, pasteurized, Macadamias (unrefined) breads (commercial) lodised) melted, canned) Nutmeg Rye grain & Rye Oats, Peanuts Tobacco (roll your Semolina Pistachios bread Tapioca,, own) Soda Water Pumpkin (pepita Spelt Wheatgerm Refined breads seeds) Unrefined cereals Wholegrain Pasta (corn, oats, rice, rye) Sunflower seeds (with honey or fruit) Wholegrain Refined cereals (eg.
