    “L’Italia nel bicchiere”. Novembre, tempo di vino novello | 1 RUBRICA – Cari amici del vino e del bere moderato e di qualità, questa volta sarò breve, anche perché ho intenzione di parlarvi del Vino Novello, prodotto che esce proprio ad inizio di novembre e quindi di assoluta attualità. Purtroppo negli ultimi anni ho potuto costatare un progressivo calo d’interesse per un prodotto che, a dire il vero, non è stato mai troppo amato dagli italiani. Il Vino Novello è stato concepito in Francia alla metà degli anni trenta nella zona del Beaujolais, a sud della Borgogna, allorchè un’équipe di ricercatori locali ha elaborato un metodo molto particolare e molto diverso da quello della vinificazione ordinaria chiamato a “macerazione carbonica”. Molto sinteticamente, i grappoli d’uva belli sani e raccolti leggermente in anticipo, vengono messi interi, intatti, in piccole autoclavi ermetiche. Questi “fermentini” presto si saturano di anidride carbonica perché grappoli più in basso , schiacciati dal peso dell’uva sovrastante, liberano un po’ di mosto che inizia a fermentare. In assenza di ossigeno, all’interno degli acini intatti, si produce una fermentazione alcoolica intracellulare che favorisce la riduzione dell’acido malico (acidità/durezza) e l’aumento della glicerina (morbidezza). Inoltre l’alcool che man mano si forma estrae dalla polpa e dall’epidermide tutte le sostanze fenoliche (colore) e le essenze aromatico – varietali dell’uva. Questa macerazione in situazione anaerobica può durare dai 7 ai 15 giorni dopo di che viene ultimata la pigiatura, vengono separate le vinacce, e viene fatta completare la fermentazione alcoolica in presenza di zuccheri residui.
