By using the glassware under vacuum method this allows a very low temperature control, eliminating harsh & bitter flavours so preva- lent in higher temperature distillations. His style & taste is quite unique.

SAVAGNIN 2010 DOMAINE MOREL Poligny, Jura £30.50 Grapes: 100% Savagnin grape The vineyard is on an exposed south facing location with perfect soil conditions for making these style of wines. The vinification takes its time to develop the typical character of the wine. A beautiful golden hue with brightness in the glass. The elegant aroma has a citrus and mineral as- pect with notes of fresh hay. Great flavours that are generous and structured with a wonderful crushed hazelnut finish. Will keep for dozens of years. Open at least 2 hours

LES CHENES DE BOUSCAUT Pessac-Leonan Blanc 2016 £34.95 Grapes: 54%Semillon, 46%Sauv.Blanc Aged in oak barrels. A complex aroma, fruity with fresh citrus and sweet spice. It is full and generous with round, intense flavours. There is a silkiness to the texture and the very aromatic character from the grape styles.

SAVIGNY-LES-BEAUNES 2015 Fanny Sabre, Burgundy £57.60 ORGANIC NATURAL WINE. Grapes: 100% Chardonnay Tiny domaine. Grapes are hand harvested with direct press cold maceration in s/s vats for 4-5 days. Natural fermentation (with indigenous yeasts) is in the barrel. Ageing for 12 months on old oak giving taste subtlety & depth. There is no intervention when fining the wine, giving the style a very distinct character with hints of richness plus fresh acidity & elegance in the glass. Enjoy with medium mature goat cheese, creamy cheeses & lighter blues

MONDEUSE Terre Rouges Le Villard, Chignin, Savoie £22.00 Jean-Francois Quenard. Grape: Mondeuse The grape has a lovely dark plum hue with red fruits such as raspberry and cherry, warm spice notes include black peppercorns with tannins that are rustic and a little wild.

DON QUIXOTE (Chateau Le Roc) Côtes de Frontonnais, SW France £23.00 Grape: Negrette 60%, Syrah 40% The immediate aroma is violet and licorice and once in the mouth there is a burst of rich fruity flavours with a white pepper hit, more fine and silky with a wonderful length.

CHATEAU VILLEGEORGE 2007 Haut Medoc Cru Bourgeois £28.95 Grape:55% Cab Sauvignon 45% Merlot The estate was classified as a Cru Bourgeois at the inception of the classification in 1932 confirmed as such since then. Matured for 10-16 months in barrels including 30% of new oak. A fine, rich, fruity wine, concentrated and dense with some sharp blackberry flavours. Juicy but with tight tannins and acidity showing it is capability to age for many years. These wines are perfect with game and roast meats and are not lighthearted but wonderfully fleshy and full bodied. Open 2 hours+ before drinking. GREAT WINE FOR CHEESE

Rigorous selection produces low yields, & all the above grapes are the dominant vines with Syrah, Malbec & Abouriou also featuring. Matured for 12 months in 75% new oak barrels. Deliciously dense with exceptional concentration. Fruity with spice & chocolate and good tannin strength. Open and decant at least 4 hours.

CHATEAU DESMIRAL 2009 Margaux 2nd wine Bordeaux £56.90 70%Cabernet Sauvignon, 30% Merlot A complex wine with expressive fruit character (black fruits) with an earthy, coffee, liquorice aroma, floral notes of violets, and a good balance between freshness and power. The 2009 Bordeaux vintage was notable showing that the tannins were balanced well with the fruit which is exactly the right taste sensation to enjoy with food.

CHATEAU LABEGORCE 2014 Margaux £57.50 Grapes: 58%Merlot 40% CabSauv 2% Petit Verdot Smoke on the nose with purity of redcurrant & wild strawberry. Supple tannin to the medium body although slightly dry but the sharp fruits, dark coffee & chocolate mingle with hints of mint, bay & savoury undertones. Open at least 2 hours to allow tannins to settle a bit; and you will enjoy how the wine evolves after each taste.

DOLCETTO D’ALBA £16.85 Ressia, Neive, Piedmont 100% Dolcetto. Garnet red hue has an ethereal violet edge in the glass. Gentle rounded aroma with hints of vanilla and wood rose. Full bodied and rounded with moderate dryness low in acidity.

VALPOLICELLA CLASSICO SUPERIORE “FIGARI”£19.75 Az Ag Villa Spinosa, Negrar in Valpolicella, Verona Grapes: Corvina Veronese & Corvinone with a tiny permitted selection T. Being a Superiore it is elegant, fragrant; a little austere but very agreeable. Notes of preserved fruit & vanilla and spice. More complex than Classico it still has the fresh & lively style which is very drinkable. PINOT NERO £21.50 Vigneti delle Dolomiti ‘Centa’ Marco Donati, Maso Donati in Ezzocorona-Campo Rotaliano vineyards, Trentino 100% Pinot Noir grapes. Soft character with a smooth blackcurrant ‘bitterness’ to the finish. Aromas of wild cherry and black currants.

LAGREIN RUBINO TRENTINO DOP ‘Fratte Alte’Marco Donati, Mezzocorona-Campo Rotaliano, Trentino £21.50 100% Lagrein Brilliant ruby red hues with the aroma intense and full of character, countered by a delicacy with hints of vanilla, violet, tobacco & chocolate. The flavours are robust with a pleasant austerity (tannin) and elegance. Perfect for stews, grilled meats, dry brittle cheeses and blue cheeses such as Stilton.

BARBERA d’ALBA SUPERIORE CANOVA RESSIA Neive, Piedmont £21.85 Grape: 100% Barbera in first week of October – vines face south. Soft crushing & traditional alcoholic fermentation in steel with malolactic fermentation in small wooden barrels for 18mths transferring to s/s for 3 months before bottling. A complex rich bouquet with blackberry,coriander & rose then spice. Classic Barbera d’Alba structure with good acidity and well structured tannins. Perfect for red meat & game dishes and aged hard & blue cheeses.

VALPOLICELLA CLASSICO SUPERIORE RIPASSO JAGO £23.95 Az Ag Villa Spinosa, Negrar in Valpolicella, Verona Grapes: Corvina Veronese & Corvinone with a tiny permitted selection One of the best crus of Valpolicella, it is made with the traditional “Ripasso” a traditional technique which involves maceration- refermentation on the grape skins. Rich in scents of wild red fruits & spices, it distinguishes itself for its elegance and easy-drinking quality.

ROSSO “LA BERRA 1912”Azienda Agricola F.lli Fraccaroli Peschiera del Garda, Brescia £26.85 Grapes: 50% Cab.Sauv 50%Merlot An Amarone style from Lake Garda! Grapes are dried for 40 days on wooden racks to produce a wonderfully aromatic style. The wine spends 3 years in oak and leaving for 1 year in the bottle before ready to sell. This very well balanced almost succulent wine with rich red berry fruits and cherry has vanilla overtones & typical tobacco and bittersweet chocolate.

SANGUE DI DRAGO Teroldego Rotaliano 2015 Marco Donati, Maso Donati in Mezzocorona Campo Rotaliano vineyards, Trentino 100% Teroldego grapes. £37.85shop £68.10cafe 476 This is considered the prince of wines from Trentino, and on first impact there is a very rich, fruity and darkly violet intensity. Vigorous and not too aggressive, yet with a smooth finish. Very good when partnered with rich meat dishes, venison and game, reduced wine sauces, and fully matured cheeses. Drunk young it has a racy vibrancy, but can age for several years giving way to a more rounded taste.
