The regulations are particularly severe for wine and include various aspects of the viticulture practices and winemaking techniques. Nevertheless, the use of phenolic profiles for quality control is still fragmented and incomplete, even if they are a promising tool for quality evaluation. Only a few methods have been already validated and widely applied, and an integrated approach is in fact still missing because of the complex dependence of the chemical profile of wine on many viticultural and enological factors, which have not been clarified yet. For example, there is a lack of studies about the phenolic composition in relation to the wine authenticity of white and especially rosé wines. This review is a bibliographic account on the approaches based on phenolic species that have been developed for the evaluation of wine quality and frauds, from the grape varieties (of V.

Likewise, Spain is incredibly rich in culture, with a wide array of languages, histories, cultures, and cuisines found throughout the nation. The sheer number and variety of Spanish wines and the incredible variety of cultures found in Spain may be daunting to the uninitiated. Thus, a guide to Spanish wine and culture, which not only details the two but links them, as well, may prove very helpful to the Spanish wine newcomer or perhaps even a sommelier. This thesis-guide was compiled through the research of the various Denominaciones de Origen of Spain, the history of Spain, the regions of Spain and their individual histories and cultures, and, of course, the many, many wines of Spain.

  • DAME's WINE COLLECTION: We've Gone All in on Natural Wine Because
DAME’S WINE COLLECTION: We’ve gone all in on natural wine because we believe in celebrating farmers and other stewards of the land who work tirelessly to create biodiverse landscapes. Great wine is a transmitter of a certain place and time in history: if made with nothing but grapes, a bottle has the ability to tell us what the soil in the vineyard is composed of, what the weather was like in a given vintage, and what the surrounding flora and fauna are doing. Cover it up with any number of 60-plus legal chemical additives, and what are you left with? Something engineered that no longer transmits its story. The winemakers represented on these pages make wine from their core; with dedication, integrity, and great care for the land they farm. We are delighted to share the wines and the stories of folks whose hearts lay in the same vein as our own. These producers represent some of the world’s most unique vineyards and rare heritage grape varietals. We believe sharing these special wines with you is an honest extension of our desire to provide thoughtful hospitality. Your evening is in our hands for a few hours and it’s with great pleasure we get to open bottles for you that represent our ethos, the deep culture of the winemakers, and the diverse areas they farm. It’s all about heart, from the vineyard to your table, we hope you find as much charm and joy in these wines as we do. Article Characterization of Sparkling Wines According to Polyphenolic Profiles Obtained by HPLC-UV/Vis and Principal Component Analysis Anaïs Izquierdo-Llopart * and Javier Saurina * Department of Chemical Engineering and Analytical Chemistry, University of Barcelona, Martí i Franquès 1-11, 08028, Barcelona, Spain * Correspondence: [email protected] (A.I.-L.); [email protected] (J.S.); Tel.: +34-934021277 (J.S.) Received: 13 December 2018; Accepted: 8 January 2019; Published: date 10 January 2019 Abstract: Cava is a sparkling wine obtained by a secondary fermentation in its own bottle. Grape skin contains several compounds, such as polyphenols, which act like natural protectors and provide flavor and color to the wines. In this paper, a previously optimized method based on reversed phase high performance liquid chromatography (HPLC) with ultraviolet/visible (UV/Vis) detection has been applied to determine polyphenols in cava wines. Compounds have been separated in a C18 core-shell column using 0.1% formic acid aqueous solution and methanol as the components of the mobile phase. Chromatograms have been recorded at 280, 310 and 370 nm to gain information on the composition of benzoic acids, hidroxycinnamic acids and flavonoids, respectively. HPLC-UV/vis data consisting of compositional profiles of relevant analytes has been exploited to characterize cava wines produced from different base wine blends using chemometrics. Other oenological variables, such as vintage, aging or malolatic fermentation, have been fixed over all the samples to avoid their influence on the description. Principal component analysis and other statistic methods have been used to extract of the underlying information, providing an excellent discrimination of samples according to grape varieties and coupages.
