Regardless of years of experience, size of the team or location, there’s one constant: opening a restaurant is among the most challenging and rewarding projects a person can take on. I founded my hospitality consulting company Salt & Roe to help current and aspiring restaurateurs across the country gracefully open restaurants. By helping tackle everything from drafing a business plan to menu design and staf training, my career is all about taking on projects and setting them up for success through opening night and beyond. Since graduating from Cornell University’s School of Hotel Administration, I’ve participated in 16 openings -- ranging from Michelin-star concepts for Chef Daniel Boulud’s Dinex Group in New York City and James Beard-nominated Spoon and Stable in Minneapolis to neighborhood and fast-casual restaurants in my native San Francisco. Along the way, I’ve learned that while the process is far from formulaic, there are numerous best practices that can ensure your restaurant has the best shot at success. I’ve teamed up with dozens of restaurateurs in the United States and abroad to collect cautionary tales, dos and don’ts, and “If I only knew...” stories, and deliver them in one comprehensive resource on how to open a restaurant.     HISTORY OF THE JEWS IN ITALY The Jews of Italy have strong bi-cultural roots dating back to the second century BCE, when many Israelites, under the leadership of Judah Maccabeus, left the land of Israel to go the "Eternal City" (Rome). They also settled in Naples and in various localities in the southern part of the peninsula. Jews in pre- Christian Rome were very active in proselytizing their faith. It was not until the Jewish revolts in 132 CE, culminating in the destruction of the Second Temple in Jerusalem in 70 CE, that the Jewish-Roman alliance was broken and the Jews were forced into slavery. Approximately 10,000 Jews were transported to Rome to be used as work hands to help build the Coliseum. This image of history remains frozen in time for all to see in the ’Arch of Titus,’ where the Roman victory over the Jews is etched in stone. Although enslaved, the Jewish population in Rome flourished. Thirteen synagogues and numerous Jewish cemeteries were built. Many Jewish communities were established in southern and northern cities in Italy as well, such as Taranto, Ferrara and Milan. Nevertheless, many Romans despised the Jews and considered their rituals to be barbaric. Throughout history, the status of Italy’s Jews depended largely on who was in control of either the Roman Empire or the Church. The endorsement of Christianity as a ’legal’ religion in 313 CE by the Emperor Constantine marked a transition for Italy’s Jews from an era of acceptance to one of discrimination. The situation for the Jews worsened in 380 CE, when the Edict of Tessa Lonica of Teodosia recognizing Christianity as the official religion of the Empire was enacted, with very little tolerance for Judaism or other religions.

Rabbi Abbahu said that Rabbi Yoḥanan said: With regard to all prohibitions of the Torah, a permitted substance does not join together with a prohibited substance. If one eats a permitted food with a prohibited food, and together they constitute the minimum prohibited measure, he is exempt from punishment for this act of consumption. This principle applies to all halakhot except for the prohibitions of a nazirite, who is liable for eating a mixture of that kind, as the Torah said with regard to a nazirite: “He shall abstain from wine and strong drink; he shall drink no vinegar of wine, or vinegar of strong drink, nor shall he drink anything soaked in grapes” (Numbers 6:3). This verse indicates that a nazirite is prohibited from consuming not only wine and vinegar, but also any food that was soaked in these liquids. And Ze’eiri said: Permitted and prohibited substances also combine with regard to the prohibition against offering leaven on the altar, as it states: “For no [kol] leaven and no [kol] honey shall be offered as a burnt-offering before the Lord” (Leviticus 2:11). Over the last decade, research into their role as contributors of dietary polyphenols, known to possess a number of properties associated with reducing the risk of developing chronic non-communicable diseases, has increased. However, bearing in mind how these foods are consumed, normally in small quantities and in combination with other foods, it is unclear what their true benefit is from a health perspective. The aim of this review is to use the literature to discuss how preparative and digestive processes, bioavailability and interactions between foods may influence the bioactive properties of these foods, and whether or not polyphenols are responsible for these properties.

    Ice Castles 2011 A feast of Al-Andalus Naila Al-Zarq' Hail and Welcome one and all to this year’s feast at the Castle of Ice. When last we all gathered here, I was but a lowly kitchen servant, in service to the Nightingale. Now I, like she, have risen through the ranks. She, and her former captor, now sit in state over all these lands. My own position now is rather less lofty, for these kitchens alone are my dominion, but it suits me. Though far from my homelands of the Black Sea, I have chosen to serve you this night a feast of Al-Andalus, the land of the Nightingale. As this is my first feast as head of the kitchen, I have taken to heart the advice of Hippocrates. He has written down for all to read which dishes are necessary in any feast, and the order in which they must be served. I have done my best to honor his writ. Now eat, friends, and be merry.
