Desde el siglo X se elaboraba vino en la Ruta del Vino Cigales. El vino es muy importante desde la Edad Media en nuestro territorio, con un fuerte arraigo cultural en sus gentes. Cigales Wine Route HISTORY AND CULTURE Throughout history, such relevant figures as the Catholic Monarchs, Felipe II, Napoleon Bonaparte, as well as important Castilian nobles, Trappist and Cistercian clerical orders have traversed our Wine Route leaving behind their influence and contributing to the legacy. With deep cultural roots engrained in the people, wine production has been a time-honored tradition of the Wine Route of Cigales since the tenth century and has retained its importance in our region since the Middle Ages. 4 EL VINO Tierra del Rosado donde también se elaboran buenos tintos. El vino está muy presente en todas nuestras localidades. Aunque la D.O. Cigales es tierra de vinos rosados también dispone de tintos de calidad, premiados en numerosos certámenes tanto nacionales como internacionales, en el que predomina la variedad del Tempranillo de viñedos viejos plantados sobre unos suelos muy característicos de cantos rodados. Desde 2011 también se elaboran blancos, espumosos y dulces, que completan a los rosados y tintos como una zona variada y rica. También se están trabajando con las nuevas variedades Sauvignon Blanc, Cabernet Sauvignon, Merlot y Syrah que complementan a las principales Tempranillo, Garnacha, Albillo y Verdejo, que tanto han tenido que ver con sus históricos y reconocidos rosados. 5 THE WINE Land of Rosé, where great reds are also made. Wine is well represented in all our locations. While D.O. Cigales is recognized as a land of rosé, quality award-winning reds with numerous national and international competitions to their name are also abundant here. These are primarily made from the Tempranillo variety from old vines planted on very characteristic soils composed of rounded stones. Since 2011 white, sparkling and sweet wines have also been produced, adding to the richness and variety already represented by the rosés and the reds. Also, new varieties such as Sauvignon Blanc, Cabernet Sauvignon, Merlot and Syrah are being worked with to accompany the main Tempranillo, Garnacha, Verdejo and Albillo varieties, which have played a big role in the legacy of the historic and renowned rosé. 7 RECURSOS Cultura y Música vinculado al vino y la historia. En la Ruta del Vino Cigales la cultura y la música están muy presentes en diversos escenarios históricos. Tanto el Auditorio del Aula- Museo Paco Díez de Mucientes (edificio creado sobre la antigua muralla de Mucientes), el Castillo de Trigueros del Valle, el Castillo de Fuensaldaña o el Monasterio de Santa María de Palazuelos, realizan una programación anual variada de conciertos, eventos y espectáculos en marcos incomparables y de gran atracción turística. Aparte de ello, se pueden contemplar exposiciones artísticas de forma esporádica tanto en estos inmuebles como en algunas bodegas. Igualmente también puedes conocer la cultura tradicional del vino en la Bodega-Aula de Interpretación de Mucientes (Museo del Vino) o en la Bodega visitable del s. XVI de Cigales, así como visitar el Museo del Cántaro de Valoria la Buena. 6 RESOURCES Culture and Music linked to wine history. Culture and music are very present in many historical scenes. The Museum-Cultural Center Paco Diez of Mucientes (building constructed on the ancient wall of Mucientes) as well as the Castle of Trigueros Valley, the Castle of Fuensaldaña and the Monastery of Santa Maria de Palazuelos serve as venues to an annual program of tourist-drawing activities such as lively concerts, events and unique performances incomparable to any other. We can also visit art exhibitions that are organized sporadically in these locations as well as at various wineries. Similarly you can also see the traditional culture of wine in Bodega- Aula Interpretation Mucientes (Wine Museum) or visit the 16th century winery of Cigales as well as the Cántaro Museum of Valoria la Buena. But most intriguing of all are the more than 1,200 existing underground cellars, many of which are still functioning, will immerse you in an unpredictable but unforgettable destination. 8 GASTRONOMÍA La rica y variada gastronomía que te producirá sensaciones inolvidables. La calidad de la materia prima es fundamental y en nuestro territorio destacan sobremanera las típicas morcillas de Cigales, el llamado “pan de pueblo” tan rico y apreciado en nuestras localidades, nuestros quesos, el chocolate elaborado desde 1891 en La Trapa y las suculentas carnes en forma de lechazo o chuletones. Productos amparados por las marcas e calidad Tierra de Sabor o IGP Lechazo de Castilla y León. Si no comes en alguno de nuestros restaurantes, tu experiencia no será completa. GASTRONOMY The rich and varied cuisine will leave you with unforgettable sensations. The quality of the raw material is essential and nowhere is that more true than in our region. The typical black pudding of Cigales is one of many highlights, the so-called "village bread", as delicious as it is adored in our towns, our mouth-watering cheeses and rich chocolates, crafted since 1891 in La Trappe and the succulent meats in form of suckling lamb or mutton steaks.

[email protected] Recibido: 15-12-2010 Aceptado: 13-04-2011 RESUMEN La cuenca media del Duero conoció durante la Segunda Edad del Hierro un sistema de ocupación del espacio caracterizado por núcleos grandes y distantes entre sí, sin apenas aldeas dependientes, y con un ur- banismo bien planificado. Se propone que este modelo se originó por concentración, estimulada y dirigida, de las aldeas del grupo Soto de Medinilla, a lo largo del siglo IV a.C., como resultado de un incremento de la producción, tal vez debido a la generalización de la reja de arado de hierro, lo que permitió el autoabas- tecimiento de las concentraciones urbanas aprovechando las amplias vegas y campiñas, que se ocuparon selectivamente. Esto sugiere que era un modelo de poblamiento de baja densidad poblacional, que no agotó la capacidad de carga del territorio. Se estudia la evolución del poblamiento, que permanecería estable hasta las guerras de Sertorio y Pompeyo al finalizar el primer cuarto del siglo I a.C., cuando desaparecie- ron la mitad de las ciudades.     CARLOS MORO GONZÁLEZ Carlos Moro is a passionate wine maker and vine grower, an enthusiast for the land and its vines. He is a third generation wine grower. His childhood was spent playing across the vineyards his family owned in the Golden Mile of Ribera del Duero and in Cigales. In the 60’s he has his first winemaking experience by helping his uncle Jesús during the winemaking process at the old family winery in Valoria la Buena (DO Cigales) which he still keeps. It was there that his acute intuition and love of wine grew. After studying in Madrid and becoming Doctor in Oenology and Viticulture, he worked in Madrid for many years until returning to its family lands in Ribera del Duero in the 80’s and founding Matarromera in 1988. After the great success of his Ribera del Duero wines, Carlos decided to continue his family winemaking tradition in DO Cigales, reinvigorating the area when he founded Valdelosfrailes in 1998. A decade later he was able to keep expanding his winemaking experience by opening wineries in DO Rueda and DO Toro. Later, in 2014 he completed his life-long dream of founding a winery in DOCa Rioja, which was named after him, Bodega Carlos Moro. Finally, he decided to expand in DO Ribeiro with Casar de Vide Winery. Nowadays Carlos Moro is the Founder, owner and Head Winemaker of 9 different wineries in 6 Spanish appellations of origin. Restless worker with a long-term vision on the benefits of innovation, sustainable development and respect for the environment, has led the production of wines that have their own personalities and the highest quality.

    Vintage report for Spain 2015 A hot summer influences the harvest for the Spanish wine regions Across Spain the weather pattern was remarkably similar with temperatures rising at the end of June, a very hot July and then relief for the vineyards as cooler weather came in August. Harvest dates were generally a little earlier than usual and most regions were able to bring in the fruit in good weather. Favourable weather generally kept vineyard diseases at bay in 2015 however intense heat brings different challenges and how the vines coped with it depended on many factors including altitude, vine age, exposure, soil type and grape variety. There is plenty of talk of high quality from this vintage – whites with intense flavours and aromas and reds with great complexity and good ageing potential. The boat trip offers a view that can not be accessed otherwise, being a good way to observe the wildlife (goat, chamois, wild boar, wolf, fox ...), as well as landscapes of limestone, beech and Oak grove Navigating the swamp waters observing the flight of raptors in their natural habitat (eagles, vultures ...), and discovering the variety of landscapes that offer the different seasons of the year, is a unique experience. The boat with capacity for 60 seats carries out different routes throughout the year, since it is equipped with a transparent cover allowing the travelers to enjoy the paving in both summer and winter. The routes last approximately one hour, in addition, passengers who make these routes will have the possibility of landing at specific places on the banks of the marsh, to start hiking trails. To do this, they will ask the person responsible for the boat, who will then pick them at the agreed point to take them to the pier of Riaño, place of departure and return of the routes.     Sabinares del Arlanza is a Rural Bioclimatic Sustainable Centre. It is located in Puentedura, a small village at the foot of the Arlanza River, in the province of Burgos, halfway between Madrid and Bilbao, in Spain. This experience takes place in the most extensive and best-preserved forest of "sabina albar" in Europe: “La Yecla” Natural Reserve and the “Sabinares del Arlanza”. Our strong belief in responsibility applied to one’s lifestyle led us to design a project based on sustainable concepts in terms of construction, maintenance and operation. Our guest house includes 8 rooms (1 to 2 people) with private terraces of 16m2 and bathroom, with geotermical heating/cooling, large common areas and 20.000m2 of gardens, farm, football and volley playing fields, and a playing area with different traditional games. Our menu incorporates locally grown products from ecological farm and green garden. We also offer vegetarian meals and cater to the special dietary needs of people with allergies or any type of illness. Sunday: Arrival. Pick-up from Madrid airport. Spanish wine reception, dinner and introduction to the week in Sabinares. Monday to Friday (except Wednesday): Breakfast between 8 and 10 am. The Spanish conversation workshops will take place for 3 hours during the mornings. Wednesday: Today we visit the city of Burgos. Departing at 9 am, we will take a walk along the old streets of the city centre: The awesome Cathedral, the nice gardens in the river bank, the beautiful landscape from the Castle Park, the taste of twelve centuries of history! We then head off to our favourite roasted lamb restaurant (this meal is not included in the price).
