Its cool climate is moderated by the powerful Bay of Fundy – promoting natural acidities and a long ‘hang-time’ of the classic Champagne varietals, which are critical to producing sparkling wines of richness, structure, and finesse. Medici Ermete Concerto Lambrusco Reggiano 12 50 2018 Emilia-Romagna, Italy Concerto is the world’s first single vineyard vintage Lambrusco. It’s remarkably complex: vibrant and defined ripe black cherry, black olive, liquorice and fresh pear. More foaming than sparkling, with well-balanced acidity and a lasting, authentic fresh fruit flavour. WHITE 150ml 750ml Kitsch Wines Pinot Gris 10 40 2018 Kelowna, British Columbia This tasty little gem is packed with zesty citrus notes, juicy, green fruit and a distinct minerality. This single vineyard wine is the ultimate expression of Okanagan Pinot Gris (and thankfully not the canned fruit salad we’ve all become accustomed to drinking). Domaine Jean Collet & Fils Chablis 20 85 2017 Burgundy, France Family owned estate dating back to 1792. The Collet family were celebrated growers until they embarked on producing their own wines in 1952. Since then, they have been producing benchmark wines from Chablis. The nose shows lime, tropical fruit, apple, and oyster shell, while the palate has notes of chalk and wet stone. Pairs beautifully with chilled seafood, yet delightful on its own. ROSÉ 150ml 750ml Sea Star Vineyards ‘Blanc de Noir’ Rosé 13 55 2018 Pender Island, British Columbia This cool-climate, Pinot Noir Rosé comes to us from a fairly young winery that is rapidly raising the bar for high quality wines in British Columbia. 100% estate fruit from both their Pender Island and Saturna properties there is a coastal influence that pairs perfectly with seafood. Clos Cibonne ‘Cuvée Prestige Caroline’ Tibouren Rosé 25 105 2016 Côtes-de-Provence, France There’s a hint of white Burgundy about this superior, ambitious rosé made, unusually, with new oak and solely from the Tibouren grape. Vanilla and toasted coconut overlay the stone fruit, citrus rind and wild herb aromas of the Cuvée Tradition. This is serious stuff and a great food wine. Perfect with Bouillabaisse. RED 150ml 750ml Paddy Borthwick Pinot Noir 19 80 2016 Wairarapa, New Zealand Established in 1996 the family owned and managed vineyard produces wine with flavours that are a direct reflection of the Gladstone region. Ancient stony, alluvial soils and a cool climate allows the grapes to grow in harmony in their environment. They practise sustainability and minimal intervention. The result, for this Pinot Noir, is a bright fruit and mineral driven wine. Château Montus Madiran 20 85 2013 Madiran, France Considered by many as the father of the Madiran region, Alain Brumont is an absolute genius who should be celebrated. Montus is a blend of 80% Tannat and 20% Cabernet Sauvignon which provides a perfect wine for a wintry afternoon. Notes of plush fruit, robust at first, followed by notes of chocolate, plums, tar and lovely tannins. 5 BEYOND PROSECCO: ITALY’S OTHER BUBBLES 270ml 38 Ferrari Trento Brut Metodo Classico NV Trento, Italy Bellavista Franciacorta Brut 2011 Lombardy, Italy Medici Ermete Concerto Lambrusco Reggiano 2018 Emilia-Romagna, Italy A TASTE OF BURGUNDY 270ml 43 Marie-Pierre Manciat Crémant de Bourgogne Brut NV Burgundy, France Maison Marchand-Tawse Côte Chalonnaise Rully 2016 Burgundy, France Domaine A.-F. We are blessed to be in one of the world’s most exciting wine regions. From the coastal climates of the West, to the desert climates of the East, Washington State is unmatched in varietals, styles, and quality. We hope you enjoy our offerings. Please let us know if you have a personal favorite not listed. You may find it here on your next visit. The Ultimate Wine Country Experience! WASHINGTON AVA REGIONS What is so unique about Washington wine country? First, there two distinct sides to Washington State; Eastern Washington, where most of the vinifera (wine) grapes are grown and which has desert like conditions and sparse population; and Western Washington where the temperate conditions are more conducive to growing cooler climate vinifera and non-vinifera grapes, but where most of the state’s population resides. The individual soils of Washington State vineyards vary, but overall it is said that Washington has sandy, silty, loam soils as a result of ancient cataclysmic flooding, volcanic and glacial action. These soils drain well and are conducive to deep root growth - important for vines to make it through cyclical freeze events in Eastern Washington.

  • CHOP Steakhouse Wine List
CHOP Steakhouse Wine List The CHOP Steakhouse wine list features one of the most comprehensive collections of American wine in Tokyo, along with limited, hard-to-find cuvées from all over the world. The list’s hallmarks are wines that reflect the personality of the winemaker while expressing the terroir of where the vines are grown. In our search for wine made organically, biodynamically or naturally, with minimal intervention in the cellar and fermented with wild or ambient yeast (instead of cultured ones), we aim to highlight the abilities of the vigneron, the unique flavors of native grape varieties and local winemaking traditions. Organic wine is made from grapes grown in accordance with the principles of organic farming, which typically excludes the use of artificial fertilizers, pesticides, fungicides and herbicides. Biodynamics is a form of holistic farming that uses manure and compost to improve soil quality and the interaction of the vines with their environment. The father of the movement is widely regarded as Rudolf Steiner, who gave a series of agricultural lectures on the fundamentals of biodynamics in 1924. Natural wine is made with minimal chemical and technological intervention in the grape-growing process and produced without adding or removing anything during winemaking. We truly hope you enjoy exploring this selection of charismatic, boutique labels from some of the wine world’s most flamboyant pioneers.
